Pancakes can serve as a full breakfast and afternoon tea. Today I propose to cook potato pancakes and serve them with sour cream - it will be a wonderful and hearty breakfast!

To make pancakes, we need potatoes, butter, salt, black pepper, baking powder, an egg and flour. Potatoes need to be washed and peeled. I indicated the weight of the potatoes in peeled form.

Boil the potatoes until tender, add salt at the end. Drain all the water and mash the potatoes with a crush. Add butter. Stir and let the potatoes cool slightly. At this stage, I decided to add frozen dill to the pancakes to make them more attractive. You should also add black pepper and beat in an egg. Stir well.

Then add flour and baking powder. You may need more or less flour than indicated, the potato mass should stick well and not fall apart.

Sprinkle flour on a plate, form pancakes with wet hands and put on a plate.

You can put it directly into a preheated skillet with butter. With the rest of the mass, I did just that: I moistened my hands with water, formed pancakes and fried immediately.

Put the finished pancakes on paper towels to remove excess fat. From this amount of ingredients, I got 15 delicious pancakes for 3 servings.

The history of the spread of potatoes in Europe is ambiguous and confusing. If in modern Russia it became possible to cook pancakes from mashed potatoes and other dishes from its tubers thanks to the works of Andrei Bolotov, then in France and other European countries this happened thanks to Antoine Auguste Parmentier.

Cooking pancakes from mashed potatoes is permissible both in the lean version and in the usual one. In the first case, instead of eggs, potato starch is added to mashed potatoes, which performs a binding role.
