I love red currant berries for their usefulness, bright color, pleasant taste and aroma. They help to decorate and harmoniously complement any baked goods. Yesterday I cooked puff bagels with red currants for my household. The result exceeded all expectations, and the baking sheet was empty in a couple of minutes. It's good that the camera is at hand in the kitchen and the result, like the process, I managed to shoot to illustrate the recipe. Sprinkle the finished puff pastry with premium wheat flour and put on the table. I take good quality dough that is sold in any store.

For the stuffing of bagels, take red currants, starch and granulated sugar. Currants can be used fresh or frozen. I have a second option. You do not need to defrost it in advance.

Mix berries with sugar and starch. The starch will allow the juice of the berries, which will stand out during cooking, to be stored inside the bagels.

Roll out the finished puff pastry into a thin round layer. Cut it as shown in the following photo.

From this amount of dough, you get eight small bagels. Put the filling on the wide end of the dough, 1-2 teaspoons each.

Roll up the bagels, starting at the wide edge. Fix the thin tip of the bagels so that they do not unfold.

Send the baking sheet with parchment or foil. I have foil, which I smeared with odorless vegetable oil. Place the bagels on a baking sheet.

Send the flaky bagels to the oven. Bake at 175 degrees for about 15-20 minutes. The baking time will depend on the size of the baked item and the characteristics of your particular oven.

They should be baked until light golden brown. Let the finished puff bagels cool slightly before removing them from the baking sheet. Then, you can transfer the pastries to a plate.

Preparation:

  2. Heat the milk in a water bath, add 1 tablespoon to it. sugar and pour in the yeast in a trickle, while stirring the liquid. Allow them to separate, cover the container and leave on a warm burner. Approximate time for dough is 15-20 minutes. It is important here that the yeast and milk are fresh, otherwise the dough will not rise afterwards.
  3. In a separate bowl, beat eggs and salt, gradually add the diced butter (150 g) and flour. Using a mixer at medium speed, bring the dough to a homogeneous consistency, then carefully, with teaspoons, add the dough into it, continuing to beat, but already at low speed. As soon as all the ingredients are dispersed, leave the dough aside, cover with a towel and forget about it for 1.5-2 hours, during which the container should be warm.
  4. Now comes the lamination stage: you need to remove the dough from the bowl and break it into 3 equal parts. Do the same with the remaining (100 g) butter. A ball of dough needs to be rolled out into a cake, the thickness of which will be 1 cm, a piece of butter should be cut into thin layers (about 5-7 mm).
  5. 2/3 of the flat cake must be paved with oil, then bend the free part to the center, covering exactly 1/3 of the entire space. Then cover it with the rest: you should get a rectangle 1/3 of the width of the former cake.

  6. Walk along it with a rolling pin, returning to the same dimensions as you were: i.e. to a thickness of 1 cm. Wrap the resulting layer with foil, hold it in the freezer for 20-25 minutes, and then fold it in three again and roll it out. Put it back in the freezer and roll it out again. Repeat the freezing and rolling procedure up to 5 times. The same is done for the remaining pieces of dough and butter.
  7. Lay the layer that will go into work on a board sprinkled with flour, and roll it out, reducing its thickness by 2 times. Cut it into several triangles, make a 0.5 cm incision at the base of each (clearly in the center), then twist it with a crescent moon and send it to a hot (200 degrees) oven until a golden brown crust appears. During this time (about 40 minutes), the oven door must not be opened.
  8. If you decide to cook bagels from unleavened puff pastry, the proving stage is omitted, the set of ingredients will be different, but the lamination stage will be identical to the one given above.   • Fruit jelly - 100 g

Preparation:

  • Pour the sifted flour into a bowl with a slide, put pieces of softened butter (200 g) on ​​top. Mix them with your hands, add sugar, salt and water. Knead a smooth ball, leave to rest for 15-20 minutes.
  • Put the dough on a floured surface, roll it out to a thickness of 1.5 cm, spread the layers of the remaining butter on top, so that they occupy only 2/3 of the area. Cover with the free edges of the dough, roll out a rectangle with a rolling pin. Fold to center 2 times, roll again. And fold and roll one last time to the original (1.5 cm) thickness.
  • Chill the layer in the refrigerator for 4-5 hours, during which you need to make the filling. Peel and chop apples, put in a frying pan, warm. Add brown sugar, simmer over low heat, covered for 30-40 minutes, turning into a uniform mass. At the end, add the jam and another 2-3 minutes. darken.
  • Place the chilled dough on a board, cut into triangles (do not roll out so as not to become too thin). Put the filling in the center of each, closer to the base, and then twist the triangle in a semicircle.

Bake in a hot (180 degrees) oven for 45-50 minutes, monitoring the surface condition: as soon as it becomes dark, turn off the oven and leave the baking in it for another 5-10 minutes.
