I warm milk, but I do not boil. Degrees of 40-45 are enough. I try with my little finger - if you feel good warmth, but do not burn - this is just the right temperature. I pour milk into the dough. Stir, check the density. It should turn out a little thicker than with ordinary pancakes in milk.

I always soda in all recipes with vinegar. I just don’t like it when there is an extraneous taste in baking, but quicklime soda gives it. You can pay off kefir (pour in before adding flour) or use lemon juice (or lime juice) instead of vinegar.

After adding soda, vigorously beat the dough with a whisk until bubbles appear. It will become noticeably lush and more fluid.

Pour in sunflower oil for better pancake elasticity. Without oil, they will be dry, well, and you will have to grease the pan every time (although I still lubricate, only with a piece of fat instead of oil).

Today I prepared pancakes with boiling water and kefir, they are unusually tasty and tender, and also all lace, in the hole, thin. As my husband noted, you can filter vermicelli through pancakes.

From the indicated number of ingredients, I got 35 pancakes. I baked in a pan with a diameter of 15 cm.

I use kefir cooked at home from milk. If you, for the test, will use just such kefir, then take not a fresh product, since fresh kefir is not acidic. But if kefir stands for at least a day at room temperature, it will already be more acidic.

If you buy kefir in a store, then take at least 2.5% - 3.2% fat. I hope this is sorted out.

Prepare the ingredients and a bowl in which you will knead the dough. Drive 2 eggs in a bowl, I have village eggs. Add salt and sugar.


I whip the whisk for the blender. But without fanaticism. Next, I pour in warm kefir. Kefir is slightly warmed up, but only so that it becomes warm, and not hot. I have 0.500 ml. kefir.


I mix everything with a whisk. I previously sifted the flour. I have exactly 2 glasses, glasses of 250 grams.

Pour the flour in portions, I pour one glass, mix everything with a whisk, and then the second glass and mix again. Here you can already work well so that there are no lumps.


It turns out a homogeneous dough. The dough is obtained as thick pancakes.



Pour boiling water in a thin stream into the pancake dough. In this case, beat the dough with a whisk.


We continue to beat the dough for the corolla pancakes, the dough will become not so thick. Next, I add vegetable oil to the dough, mix everything and leave for half an hour at room temperature. I usually leave it on the kitchen table. Sometimes they say. "Let's give the dough a break."


Fry pancakes in a hot pan. For the first pancake, I grease the pan with vegetable oil. Sometimes the first pancake turns out to be “lumpy”, it is even considered normal when, it is the first pancake that is lumpy. But this is most likely due to a not enough heated pan.

I admit honestly that I have the first pancake, as it should be, “lumpy", I hastened to pour in the dough. I even thought that I need to add a little flour. But when the pan was hot enough, the pancakes became amazing, in the hole. Therefore, I did not add flour.

Pour the dough from the center to the edges, it is more convenient for me to do it on weight, and as if scrolling through the pan, so that the dough spreads and a circle forms.

To make the pancakes thin, pour half a ladle of dough.


Pancakes are delicate, holey and thin, so in the process of baking I realized that the proportions in this recipe are ideal.

We fry pancakes on both sides. I have a non-stick pan. To fry or not, decide for yourself.

We don’t like burnt pancakes, so I try to make them brown, but not burnt. I turn it over with a special spatula.
