Fish soup... Pour some water, salt, bring to a boil. Put finely chopped onions, potatoes - in cubes, carrots - in strips. 15 minutes after boiling, put fish, cut into identical pieces, and boil for 10-12 minutes, adding bay leaves, pepper, parsley, tarragon, dill. If desired, you can add pickles, pickle or lemon and boil for another 1-3 minutes. Tomato juice (half a glass) or paste (2-3 tablespoons) is heated over low heat, but not brought to a boil and added to the finished dish.

How to make soup. Little tricks

A new, pleasant soup liquid has appeared. Now, together with the fish, the soup is heated for 1-2 minutes and set aside for 1 hour to infuse.

In the same way, milk is added to vegetable root vegetable soups, without pickled vegetables. Instead of milk, you can pour in yogurt, sour cream.

Recipe 4. Soup without meat (potato)

Required Ingredients:

- potatoes - 6-8 pcs.;

- onion - 1 pc.;

- garlic - 2-3 teeth;

- carrot; greens; salt, pepper - to taste;

- vegetable oil; vegetable seasoning, ground paprika, cumin - a pinch.

Cooking method:

Pour some vegetable oil on the bottom, so that it only covers the bottom. Chop the onion. Cut the carrots lengthwise and then in half rings. Simmer the carrots in vegetable oil on minimal heat. When it starts to darken and becomes soft, add chopped onion to it, mix and simmer for another 2 minutes. Add 0.5 tsp. ground paprika, and pour water. Let's intensify the fire. Dip 2 cloves of garlic into the pan without peeling it. You can also dip 3-4 peas in the soup. Let it boil and add 1 tsp. vegetable dry seasoning for soup.

Peel the potatoes, wash and cut into large slices. The larger and longer the slices, the tastier the soup. Cook over low heat until the potatoes are cooked. When the potatoes are cooked, send crushed cloves of garlic, a pinch of caraway seeds and chopped herbs to the soup. We continue to cook for another 5-7 minutes. We want the potatoes to be completely boiled, but not overcooked. It should be soft and tender, seemingly crumbly. We remove from the stove. This soup should still stand covered for 10 minutes.

The soup should have a thick consistency.

Recipe 5. Soup without meat

Required Ingredients:

- eggs - 4-5 pcs.;

- carrots - 1 pc.;

- onion - 1 pc.;

- flour - 0.5 tablespoons;

- ground red pepper; parsley, vegetable oil, salt and pepper to taste.

Cooking method:

Pour oil into a saucepan and heat it up a little. Send chopped onions and carrots to the pan. Add a little and add 0.5 tbsp. flour. Mix and cook for another 1 minute, so that the flour turns a little pink. At the end - 1 tsp. paprika and immediately fill with water and cook.

Dip one egg into a mug and beat. While stirring the contents of the pan, pour in the egg in a trickle. We will get like egg dumplings. Now, right above the pan, drive one egg into the soup, each time waiting for the soup to boil. Do not dip the egg into the soup unless the liquid is boiling! You do not need to stir so that the eggs do not fall apart.

- Do not cook meatless soup in olive oil - the soup will taste a little bitter. Olive oil does not tolerate the boiling process.

The finished meat is removed from the broth and used at will, and the cooled broth is sent to the refrigerator, where it can be stored for a long time. At this stage in the preparation of the clear broth, it is not salted. Serving the broth to the table, pre-salting it, boil it and pour it into broth cups.


How can you decorate the broth?

Decorate the broth with chopped parsley and dill. As an addition to the clear broth, croutons, meat pies are served or separately pre-boiled meatballs or dumplings are dipped into the broth.


Thick soups are prepared using a variety of vegetables. Part of the vegetables: carrots, cut into strips, beets, grated on a coarse grater, onions, sautéed in vegetable oil or fat removed from the broth, tomato paste is added to the fried vegetables and sautéed until red oil is formed.
