Ingredients:

  • 700 gr. fresh chicken fillet;
  • two eggs;
  • 100 g dried apricots;
  • 10 gr. "Russian" or "Kostroma" cheese;
  • two onions;
  • a tablespoon of fat, 72%, mayonnaise;
  • 150 g mushrooms, fresh;
  • half a glass of "Rkatsiteli".

Cooking method:

  1. Rinse dried apricots with cold water and soak in wine for 2 hours.
  2. Beat eggs until smooth and mix with mayonnaise. Add a little salt and beat well again. You can pepper it lightly.
  3. Preheat a skillet over low heat and apply a generous amount of butter. Pour in the egg mixture, cover and bake an omelet. It must be fried on both sides.
  4. Put the finished omelet on a plate, and when cool, cut into short thin strips.
  5. Prepare the mushroom filling. Chop the onion into small pieces, chop the mushrooms with a knife.
  6. Pieces of mushrooms should be about the same size as onions, maybe a little larger.
  7. Put mushrooms and onions in well-heated oil and fry slightly. Once all the moisture has evaporated and the onions are tender, remove the filling from the heat and cool.
  8. Grind the chicken fillet pieces with a meat grinder. Add grated cheese, add a little salt and knead the minced meat well.
  9. From a bowl of dried apricots, pour the wine into a separate bowl and set it aside for now. Cut dried fruits into thin strips.
  10. Cut the cling film into small rectangles. Their size depends on the size of the rolls you want to get. Spread the pieces of plastic wrap on the table and place an even, 1-inch layer of minced meat on top of them.
  11. Sprinkle dried apricots on a layer of minced meat, and spread the mushroom filling over it.
  12. The next will be an even layer of omelet.
  13. Carefully, lifting the film by the edges, roll up the rolls. Then wet your hands in water and gently smooth the surface, giving the products the desired shape.
  14. Put the blanks on a greased roasting pan and pour over the wine strained from dried apricots.
  15. Then pour half a glass of drinking water onto a brazier and place in a preheated oven.

Chicken rolls with cheese tomatoes and carrots

Ingredients:

  • 700 gr. non-liquid minced chicken;
  • two fresh tomatoes;
  • garlic;
  • two heads of bitter onions;
  • 100 g fatty hard cheese;
  • one carrot (large).

Cooking method:

  1. Chop the onion very finely with a knife and mix with the minced meat. Add the grated garlic cloves and knead well.
  2. Foil and cut into several small rectangles, apply a little vegetable oil and lay out the minced meat. Distribute the meat so that there is a small amount of foil on all sides (about 2 cm). The thickness of the meat layer should be about a centimeter.
  3. Wash the tomatoes, cut them into small cubes and spread evenly over the minced meat.
  4. On top of the tomatoes, grate the carrots with a coarse grater, followed by, on a finer grater, cheese.
  5. Carefully roll all the blanks into rolls and wrap each piece tightly with foil, seal the seams. When transferring future rolls to the brazier, place them with the seams up
  6. Bake the rolls at 180 degrees for at least 45 minutes.

Chicken rolls with cheese wrapped in bacon

Ingredients:

  • 150 g bacon;
  • four large chicken fillets;
  • mild cheese, hard - 150 gr.;
  • fresh rosemary - 40 gr.

Cooking method:

  1. Cut bacon into thin slices, cheese into small cubes.
  2. Cut the fillet dried from water lengthwise and beat well.
  3. Spread the layers of pulp on the table, lightly salt and season with ground pepper.
  4. Place cheese on the edge of each layer. Then carefully roll the blanks into tight rolls and wrap them with strips of bacon.
  5. Put a sprig of rosemary on top of the rolls, and tighten the blanks in several places with culinary thread. If not, use a thick sewing machine.
  6. Place the rolls on a foil-lined roasting pan and bake for half an hour. The temperature in the oven should be at least 180 degrees.
  7. When the chicken rolls are done, carefully cut the strings and place them on a platter.

Original chicken rolls with cheese, with creamy sauce

Ingredients:

  • chilled fillet - 600 gr;
  • 1.5 tsp chopped lemon zest;
  • three onions;
  • 40 gr. fresh bacon;
  • half a teaspoon of cinnamon powder;
  • 120 g chicken liver;
  • one egg;
  • 80 gr. prunes (preferably pitted);
  • a slice of white bread;
  • 150 g mild hard cheese;
  • white baking flour - 1 tbsp. l .;
  • two tablespoons of butter 72% butter;
  • pasteurized milk - 150 ml.

Cooking method:

  1. Rinse the chicken liver well under the tap, cut into medium-sized pieces, and the lard into cubes, less than a centimeter.
  2. Put the lard along with the liver in a pan, into which you first pour in one and a half tablespoons of vegetable oil. Simmer everything together over moderate heat, covered with a lid until the liver is tender. Then transfer to a separate bowl and cool.
  3. Chop the onion with a knife, cut off the crusts from the bread and pour the beaten egg over the crumb, cut the prunes into thin strips. If dried fruits are too dry, soak them in cold water.
  4. Put onion, prunes and half a teaspoon of lemon peel to the chilled liver. Mash the bread with your hands and soak in a scrambled egg, transfer the mass to the main products. Add 1/3 of the grated cheese and mix well.
  5. Cut the slightly frozen fillet lengthwise into several pieces. It will be ideal if you get three pieces from one fillet.
  6. Cover the chicken with a bag and beat through it with a cooking hammer.
  7. Mix salt with cinnamon and ground pepper, season with the mixture each beaten piece of chicken and leave for five minutes.
  8. Then spread the liver filling on the pieces of meat in an even layer. Roll the blanks into rolls and fasten with toothpicks.
  9. Fry the rolls on all sides in boiling oil, but do not cook. As soon as they are golden brown, immediately remove from the pan and transfer to a greased roasting pan with high sides.
  10. Add 50 ml of water to the roasting pan and place in the oven for half an hour. Keep the temperature in it at least 180 degrees.
  11. While the rolls are baking, prepare the sauce. Save the flour in butter until creamy. While frying the flour, stir it constantly with a spoon so that it does not burn.
  12. Then, without stopping stirring, slowly add milk mixed with 100 ml of water into the flour and immediately add the remaining grated cheese. Heat the sauce over low heat until all the cheese is melted.
  13. Remove the toothpicks from the finished rolls, put the products on plates and pour cheese sauce on top.

Chicken rolls with cheese

Ingredients:

  • Chicken fillet - 4 pieces
  • Fresh mushrooms - 200 g
  • Hard cheese - 4 tbsp. l.
  • Bulb onion - 1 piece
  • Salt to taste
  • Ground black pepper - to taste
  • Vegetable oil - 100 g
  • Sour cream - 200 g
  • Garlic - 4 teeth.
  • Dill - 2 tbsp. l.

Preparation:

  1. Beat off the breasts, salt and pepper.

  3. Mix sour cream, dill, garlic to make a sauce.

  5. Fold the rolls into a saucepan or deep frying pan, pour over the sauce and simmer over low heat for 15-20 minutes.

Ingredients:

  • Chicken breast fillet - 4 pcs.
  • Cheese - 200 g
  • Flour - for boning
  • Salt to taste
  • Pepper to taste
  • Vegetable oil - for frying
  • Greens to taste

Cooking method:

  1. Wash fillets of breasts, dry and cut lengthwise, but not completely.
  2. Place the cling film on a cutting board, put the breast fillets on the film, season with salt and pepper to taste on both sides.
  3. If there is no cling film, then parchment can be used.
  4. Cover the top with cling film and beat off the breast as thin as possible.

Chicken rolls with cream cheese

Ingredients:

  • chicken - 400 g;
  • pork bacon (brisket) - 7-10 pieces, depending on size;
  • cream cheese - 100 g;
  • garlic - 3 cloves;
  • greens, pepper and salt to taste;
  • vegetable oil - 20 ml.

Cooking method:

  1. Prepare the fillets: wash, dry and beat with a meat hammer, so that the fillet turns into a thin plate;
  2. Mix cheese, finely chopped garlic, herbs, spices;
  3. Grease each prepared chicken plate with this mixture with a layer of about 0.7 cm;
  4. Roll up into rolls;
  5. Gently wrap each roll with a slice of bacon, if required, then more than one;
  6. Place the rolls in a preheated pan with heated oil;
  7. Fry for 10 minutes on each side;
  8. Reduce heat, cover and simmer for another 10 minutes.

Rolls can be wrapped in foil and stored in the refrigerator. And if served as a second course, then it is extremely hot; mashed potatoes, pasta and grilled vegetables are ideal for garnish.

Chicken roll in foil with Dutch cheese

Ingredients:

  • 1 chicken (about 2 kilograms, more or less can be);
  • 1 incomplete tablespoon of salt;
  • 1-2 tablespoons of spices (any, I have paprika, dry ginger, black pepper, oregano, dried dill, curry).
  • 200 grams of carrots;
  • 300 grams of Dutch type cheese;
  • 1 teaspoon of dried Provencal herbs.

Cooking method:

  1. My chicken, clean. Cut the chicken on one side along the breast and open it.
  2. Cut the legs lengthwise with a knife and take out the bones.
  3. We cut off the wings. With a knife, we begin to carefully cut and take out the rest of the bones and the spine.
  4. Cut off the meat from the bones and put it in a separate cup.
  5. As a result, you should get such a boneless chicken, as in the photo, scary of course, but let's move on :)
  6. We spread the chicken, on the holes from the wings and legs we spread the pieces of meat that we have left after trimming the bones.
  7. If where the meat is found in a thick layer, cut it off and put it in places where there is little of it.
  8. My carrots, clean. Cut into long thin strips.
  9. We put the pot on gas and pour water. When the water boils, throw the carrots into it and cook until half cooked (this will take a few minutes).
  10. Carrots should be slightly raw on the inside and cooked on the outside :)

  15. We begin to spread the filling on the chicken in parts, alternating between carrots and cheese. Before spreading the filling on the chicken, immediately choose the direction in which you will roll it into a roll.
  16. Here the principle is simple - roll on the longest side! If you roll it up short, then the pieces will turn out to be very thick, since there are more turns and even more filling.
  17. Taking the ends of the skin, we begin to roll up the roll. Try to make it tight, just don't rip your skin!
  18. Wrap the finished roll in foil and tighten it tightly with a thread. Take a strong thread, a weak thread will tear when pulled and tear the foil at the same time.
  19. We heat the oven to 200 degrees and put a roll in it (I put it on the middle shelf). Bake for about 1 hour 10 minutes.
  20. In general, it depends on the oven, do not forget to check how our roll feels there.
  21. Leave the finished roll in the oven for about an hour. It is better not to open the oven lid at this time!
  22. We take out the roll and put the load on it.

Chicken rolls with cheese and pineapple

Ingredients:

  • Chicken fillet (breast) 800 gr.
  • Hard cheese 150 gr.
  • Canned pineapples (rings) 1 can
  • Eggs 2-3 pcs.
  • Flour 2-3 tablespoons
  • Mayonnaise 2 tablespoons
  • Vegetable oil
  • Ground black pepper
  • Greens

Cooking method:

  1. Chicken breasts (5 halves, usually I buy a package packed in 800-900 grams) must be slightly beaten off so that you can roll it into a roll in the future. Season the resulting "chicken pancakes" with salt and pepper on both sides to taste.
  2. Grate cheese.
  3. Cut the pineapple rings into halves. Sprinkle each portion with grated cheese. Put half a pineapple on top of the cheese. (Better on the edge - more convenient to wrap).
  4. Collapse rolls. Don't be afraid to make them pretty tight or they might fall apart.
  5. Prepare the batter. To do this: Beat eggs, flour, mayonnaise and a pinch of salt with a fork.
  6. Dip each roll in batter.
  7. Fry in hot oil on all sides for 2-3 minutes.
  8. Put the rolls in a mold or frying pan, add a little oil, pour over the remaining pineapple juice (2-3 tablespoons, no more, because of the sugar, the juice will start to burn before the chicken is ready).

  10. Cover with foil and simmer over low heat until tender (15-20 minutes). This can be done in the oven if desired.
  11. Put on a dish, garnish to taste with fresh herbs and the remaining pineapple pieces.

It's spring and I really want vitamins, but now it’s just such a time when fresh vegetables have not yet grown, I don’t want plastic ones, but there are the freshest green onions and radishes. Well, that means that today I will have mini - rolls stuffed with green onions, cheese and garlic.

Ingredients:

  • chicken or pork fillet
  • green onions
  • garlic
  • breadcrumbs
  • vegetable oil for frying.

Cooking method:

  1. Chicken fillet lightly, so as not to damage the fibers, "stroke" / knock with a rolling pin in a plastic wrap. And if you use pork fillets, then cut into small medallions across the fibers and beat off very well, also better in a film. Salt.
  2. Chop green onions into smaller pieces.
  3. Grate cheese on a coarse grater. Green onions and cheese are needed in equal parts. Add some chopped garlic to the filling. You can mix, you don't need to interfere. And lay out the filling on each chop: either with a mixture or in layers.
  4. Roll up tightly. Those who are not greedy to fillings or are not confident in their abilities can tie or fasten them with special culinary needles or wooden toothpicks.
  5. Bread each roll in flour, shake off the excess, you can gently hand it too.
  6. Then carefully, as in my schnitzels, dip in a well-beaten egg and then in breadcrumbs. Put the rolls on the pan with the seam down. Fry in hot oil on three sides. And bring 5 - 10 minutes, until tender, in a well-heated oven (of course, this is about pork fillet rolls). I didn't cook the chicken, I just fried it in a pan.

Chicken rolls with tomatoes and soft cheese

Ingredients:

  • chicken breast 700 gr
  • tomatoes 200 gr
  • soft cheese 200 gr
  • greens dill to taste
  • basil greens to taste
  • salt to taste
  • vegetable oil for frying

Cooking method:

  1. Cut the chicken breasts in half lengthwise.
  2. We beat them slightly on both sides, so that the thickness of the meat is about 0.5 cm, we try not to tear.
  3. Cooking the filling. Cut the tomatoes into thin half rings.
  4. Cut the cheese into small cubes. Read more:
  5. Shred greens. Rub a piece of chicken breast with salt, put 2-3 pieces of tomato on it, sprinkle with cheese cubes and herbs.
  6. Gently roll the stuffed meat into a roll and fix the edge of the meat with a toothpick so that the rolls do not fall apart during the cooking process. We do this with all the meat.
  7. Heat a large frying pan, pour vegetable oil into it for frying rolls.
  8. Fry each roll over high heat until golden brown, about 2 minutes on each side.
  9. Put the fried rolls on a baking sheet slightly greased with vegetable oil and send them to the oven preheated to 190 degrees for 15-20 minutes, until fully cooked.
