Greek salad cooking recipe. Greek Salad - Recipes, History and Traditions of Mediterranean Cooking

31.10.2019 Snacks

Good day! Tell me, have you tried to eat Horiatiki at least once in your life? Don't know what it is? The answer is quite simple and banal, it is famous, it is just that in Greece it is customary to call it that way. But it is more pleasant for you and me to utter a more ordinary expression, and I know many people who also call this dish an ordinary rural salad when summer is outside.

But when it's winter, you can't call it rural, because in winter such products are sold in the store at a high price, so for us residents of Russia it will become a decoration of a festive table or a feast.

Let's figure it out and cook it, as they say at one, two, three. I hope this collection will be useful to you, and you will definitely add it to your bookmarks, so that later you can easily and quickly find the option for preparing this simple dish you need.

This amazing vegetable dish is considered low-calorie, in general, everything in it is excellent, it looks beautiful and there are not so many calories at all, only 120 kcal per 100 g.

As usual, a bunch of variations on this theme were invented, just give our Russian people an idea, we will promote everything so that we ourselves will be surprised later. So, catch new ideas, and of course no one will ever cancel the traditional ones.

I will start this note with the traditional version, and I want to tell you that regardless of whether you are doing this miracle the first time or the second, it does not matter, you must remember one simple truth. In this type of salad, it is customary to take all the ingredients by eye, because it is mostly vegetable, which means that if you like tomatoes the most, then take them and add more, you like green cucumbers, add more of them.

In general, it all depends on you and on the preferences of your beloved family. Therefore, do not worry if someone's ingredient suddenly turns out to be not so much. The composition for this dish is not very complicated, I would say ordinary. The only thing is that it is the real Greek that is made from feta cheese, so it can be difficult to get it, but there is always an alternative to find another variety, for example, take feta cheese or Fetaksa. Therefore, try different types and in any case you will be satisfied with both the salad and the figure))).

The main advice from me is, just take fresh and beautiful-looking vegetables, with them this delicious dish will look much brighter and more interesting on a plate. Well, let's get started.

We need:

  • fresh cucumber - 1 pc.
  • red onion - 0.5 pcs.
  • bell pepper - 0.5 pcs.
  • tomatoes - 2-3 pcs.
  • pitted olives - a handful
  • Feta cheese - 120g
  • Oregano - a pinch
  • olive oil - 1-2 tablespoons

Cooking method:

1. Make a preliminary preparation, first wash all vegetables thoroughly in water. Then take the cucumbers and cut them into pieces.

Important! If you noticed, then the photo shows a cucumber without a skin, this is how it is supposed and customary to do in Greece, supposedly it kills the bitterness, but this is a matter of taste, personally I rarely remove the skin, since I do not feel bitterness.

2. Use the red onion, it tastes better in this salad, brighter, and of course not as hot as the usual white onion. Cut into half rings.

Place the cucumbers in a bowl, then toss in the chopped onion.

Place all vegetables in a bowl and continue with this simple and uncomplicated work.

4. Take the pitted olives and scatter them over the salad.

Interesting! As you may have noticed, all the ingredients are cut quite coarsely, this is such an amazing feature of this dish, Greek cuisine. There is no need to grind, as we Russians are used to doing in all other types of salads.

5. Top with olive oil and stir. Choose only quality oil.

6. Cut the feta into large cubes and cover all the vegetables.

7. Let's see what happened, such a beauty, well, a magnificent appearance, from which just drools are already running. Yes, I forgot to sprinkle oregano and smile! Your famous and unique salad is ready! Bon Appetit!

Homemade Greek salad with lettuce

But you know how you can give this salad an unrealistically fantastic look, yes, decorate it with lettuce leaves, this, in turn, will give it a lot of originality and a luxurious attractive look. I think it will not be difficult to pay for this idea, it is easy and quick to do, and you can pick the salad with your hands, and not use whole leaves.

We need:

  • Sweet pepper - 2 pcs.
  • Fresh cucumber - 2 pcs.
  • Cherry tomatoes - 10-12 pcs.
  • Olives and / or olives - 2 handfuls
  • Mozzarella cheese - 2 handfuls
  • Dry basil - 2 sprigs
  • Thyme 0.5 tsp
  • Salt 0.5 tsp
  • Olive oil 2 tbsp
  • Lettuce leaves

Cooking method:

1. Cut sweet bell peppers into cubes, remove the middle with seeds and porzhilka as usual.

2. Remove the tails from the cucumbers, and cut into circles or large cubes.

3. Cherry tomatoes due to the fact that they are small and funny, they do not need to grind in principle. You can leave a couple of pieces in such a complete form, and take a few and cut them into halves.

4. You can take a handful of olives and olives with or without seeds. If you want to do it without, then initially remove them. I think that since the number is not so huge, you will cope with this task very quickly.

5. The final moment has almost come, you need to put all the vegetables in a glass bowl, preferably deeper. Scatter the mozzarella pieces.

6. Then salt, you can even pepper, rub with dried basil and thyme. Season with olive oil. Wow! Great how it looks!

7. Put on green leaves and eat to your health!

2. Prepare vegetables.

3. Cut them the way you used to do it, the main condition, do not grind, it is important to chop it coarsely. Something like this.

4. Now it's time to make an original dressing sauce, add lemon juice, preferably freshly squeezed, and about 0.5 teaspoon of oregano and salt to taste into olive oil. Stir, and then season the salad with it.

5. Place all chopped vegetables on green leaves, decorate the dish with olives and slices of feta. Make your loved ones happy!

Greek salad is a delicious and healthy dish. The vegetables are cut into large pieces and seasoned with the highest quality olive oil, however, the recipes allow for variations that diversify the taste of Greek salad, make it interesting and unusual. Greek salad is delicious paired with a crispy baguette. It is imperative to prepare a salad in order to plunge into the Greek atmosphere at least a little.

What is included in Greek salad

The classic version includes fresh cucumbers, tomatoes, bell peppers, onions, olives, olive oil, lemon juice and dressing salt. The most important ingredient in Greek salad is feta cheese.

The main herbs in the salad are oregano and basil. But do not be afraid of other spices and herbs. The dish will easily accept coarsely torn leaves of curly lettuce and not thick strips of wild garlic, lettuce works well. In some recipes, lettuce is invariably included in its composition.

A distinctive feature of this salad is that the cucumbers are peeled and all products are cut very coarsely. It is also customary to mix it just before it is, and feta can be in a plate as a whole piece.

In Greece, for this they usually take that feta, which is almost not salty, looks more like cottage cheese and crumbles easily, so that, while stirring the salad, it is crumbled at the same time. The Greeks put olives in a salad with a bone, of course their own, Greek ones. Such a healthy and light (low-calorie) dish is prepared quickly. And many already know the real classic recipe for Greek salad - it is simple and, on the other hand, piquant because of the Feta cheese (Fetaxa, Brynza) that was present in its composition.

How to cut vegetables for Greek salad

  1. Let's make a reservation right away - the dish is not laid out in layers, so the chopped ingredients can be put in a mixing bowl so as not to collect more dirty dishes;
  2. Cucumbers and peppers are chopped into large, at least half a centimeter, pieces. The easiest way to cut the half of the onion is to cut it into thin half rings. It is best to use Crimean sweet or salad onions;
  3. If you chose ordinary tomatoes, then we cut them into four parts, after which we chop each of the parts into slices. If your choice fell on cherry, then their destiny is to be cut into neat halves;
  4. Olives are also cut in half (lengthwise);
  5. The cheese is cut into cubes of 1–2 centimeters, depending on which size you prefer;
  6. If you have fetax in your diet, we advise you to take a sharp thin knife so as not to crush tender pieces during slicing;
  7. Cheese has a thicker consistency, so there will be no problems with it;
  8. Leaves can simply be torn with your hands;
  9. All ingredients are placed in a bowl.

"Everything ingenious is simple!" - I would like it to be so always. In cooking, there are definitely perfect examples of this saying, one of them is Greek salad, the classic recipe for which we will describe step by step with a photo today.

Serving Greek Salad

And here comes the most important thing! Preparing the dish is easy and simple, and it is served unmixed, feta cubes lie on top. All seasonings are served separately, and these are:

  • Half a lemon for each plate;
  • Salt, black pepper;
  • Extra virgin olive oil.

It is better to serve oil in a separate bottle (festive version).

What is Greek salad eaten with?

First of all, the composition of a classic salad must necessarily include Greek cheese - soft, made from sheep and goat milk (for example, "Feta"). It cannot be spread on bread or cut into thin slices. It appeared in ancient times and is considered a national Greek product. This cheese is included in the recipes of many Mediterranean dishes. Its peculiarity is a pleasant curd smell.

The oil for refueling must be of the first cold pressing: there is an “extra vergin” mark on the package. You need to fill it as follows: pour it in a thin stream over all the ingredients. For piquancy, you need to add spices - a mixture of herbs that can be found together with Greek goods: olives, olives, oil. If you can't buy this seasoning, replace it with a mixture of Italian herbs.

All in all, this dish is a simple version of a village salad made from the most basic ingredients found in every Greek village house. Therefore, we will cook according to the same principle that there is in the house from ingredients similar to those indicated in the recipes, then we will use it.

Despite its dietary composition and lightness, the salad is nevertheless quite nutritious due to olives and cheese, and thanks to tomatoes it is rich in vitamin C and antioxidants. It is for this combination of qualities such as low calorie content, high content of vitamins and trace elements, as well as satiety, this salad is very highly valued by residents of many countries, especially those who monitor their weight and try to adhere to the rules of a healthy diet.

Traditionally, this salad is eaten with toasted white bread, dipped in a wonderful mixture of olive oil, tomato juice and cheese, which has settled to the bottom of the bowl. And even if this does not correspond to the rules of good taste, the pleasure received from "ladobukies" ("oil bites") is simply indescribable! In addition to its taste, the salad also pleases us with its magnificent appearance - bright, elegant, somewhere even festive. In most Greek taverns, the cooks, respecting the original source, do not make significant changes to the salad recipe, allowing themselves only occasionally to experiment with dressings.

The best Greek salad recipes with photos and clear step-by-step instructions are in this culinary selection.

How to eat Greek salad

Yes, in order to get the most out of it, there is a special way of eating this salad in Greece:

  • Use a fork to break a large piece of feta cheese;
  • Take a slice of feta, tomato, and anything else that can fit in your mouth;
  • If you want to be polite, you can put a serving on a plate. But all the charm and beauty of the salad is to eat it straight from the dish. • In Greece, it is customary to dip bread in the leftover mixture of olive oil, tomato juice and feta crumbs. And this is not bad manners, but on the contrary, a sign that it was very tasty and you liked it.

We already know that the best salad is not the one made in the place where it was born. And the best salad is the one you made yourself. Well, let's cook.

1. The classic recipe for Greek salad with feta cheese

Ingredients:

  • Tomatoes
  • Cucumbers
  • Red onion
  • Olive oil
  • Chees Feta
  • Salt, pepper (optional)
  • Oregano
  • Olives (olives)
  • Bulgarian green pepper - several rings

Preparation:

I have not listed the quantity of each product here. You can take it depending on how you like a particular product. Of course, if you chop up a full cup of cucumbers and add a couple of olives to them, it won't be a Greek salad. Therefore, we act wisely. We select the ingredients so that there are approximately equal amounts of them in the salad.

1. Peel the cucumber and cut into large pieces into a dish. The fact that the Greeks cut everything large, I also mentioned in the previous article. Therefore, we follow their example and chop everything into large.

2. Cut the tomatoes into large pieces. I forgot to mention that we washed all the vegetables beforehand.

3. Peel the onion and cut it into small half rings. If you have sweet onions, this is very good. Use it. Although I know that many people love the bitterness and pungency of onions in a salad.

4. Cut a few rings from a large green pepper into a salad.

5. Break the feta cheese into large pieces. No feta, can be replaced with feta cheese or other similar cheese. Or even just some kind of soft, beloved.

6. Spread a few olives and sprinkle with dry oregano. Add all this to taste. We prefer pitted olives, especially served to guests. On the contrary, the Greeks prefer with seeds, they say that they are tastier.

7. Pour all this with olive oil. Olive oil gives a special flavor to the salad. And in Greece this is not an elite oil, everyone uses it. Again, add the oil to your liking. But don't overdo it.

You can add a little pepper if you like. Salt is not worth it. Salted cheese and olives. If you want, add a little salt to the bread before you start toasting it.

8. On the grill, frying pan, grill or whatever, put a couple of slices of bread. Sprinkle them with olive oil on one side, fry them, sprinkle with oregano. Turn over, pour oil on the other side, fry and also sprinkle with oregano.

9. Fry until golden brown. Serve with salad.

So that is all. It remains only to put a bottle of white wine on the table, pour it into a glass and….

Bon Appetit!
