I was buying some groceries the other day and could not help but notice that the prices for seasonal vegetables went down rapidly. And this fall came to one of my favorite vegetables - zucchini.
Seeing this, my imagination immediately kicked in, because you can create so many interesting and tasty things from them! Last year I wrote about, about and the most wonderful.
But this is only a drop in the ocean. Therefore, I decided not only to make several collections dedicated to different methods of cooking a vegetable so beloved by me, but also to highlight them in a separate heading so as not to look for the desired recipe for a long time.
Today I will start with a general topic: cooking zucchini in a pan. There will be regular roasting and stewing and other methods that can be used if you have a frying pan.
And in the next articles I will analyze each method in more depth, so that there is always a suitable option at hand for all occasions.
In general, today I just want to surprise you with a variety of choices and lure anonymous zucchini-eating lovers into my circle.
The taste of fried zucchini depends not only on the skills of the hostess, but also on the freshness of the selected products. As for zucchini, ideally you need to take the so-called "dairy", that is, young and fresh, with a thin skin and seeds that are just beginning to form.
Let's start with one of my favorites. According to him, the vegetables are very juicy, and the taste is not interrupted by other ingredients. Only garlic for flavor, flour for light breading and sour cream (optional) for flavor.

There are many zucchini, so you will need to fry in several passes so that the vegetables do not touch in the pan.
4. When all the rings are ready, turn off the heat, put them all in the pan, add sour cream and garlic, squeezed out with a press.
5. Then turn on the smallest fire, pour water into the pan so that it slightly covers the first layer of zucchini, stir gently, close the lid and leave to simmer for 15 minutes.

If the previous recipe seems long to you, then here is an example of a classic preparation in which fried zucchini is simply coated with garlic and mayonnaise sauce. A great option for a festive table, by the way.

To prepare such a snack, you need to cut and fry the zucchini rings in the same way as in the previous recipe, having previously rolled them in flour.
Then blot them with a paper towel and sprinkle grated cheese on the still warm rings.
The amount of cheese is chosen independently, depending on the preference of the degree of "cheese".
And when the cheese melts, you need to put on top a teaspoon of sauce made from sour cream, garlic and salt.
The traditional proportion for such sauces is 1 grated garlic clove to 2 tablespoons of sour cream and salt on the tip of a knife.

And it is very simple to do it. You just need:

1. Wash the zucchini, cut off their ends, cut them in half across, and then cut each half longitudinally to make 4-5 plates half a centimeter thick. Lightly salt the plates, pepper, wipe with garlic passed through a press and set aside for 10-15 minutes.
2. Prepare the batter by whisking kefir, eggs and flour in one deep bowl.
The amount of flour can depend on many factors, even the degree of its moisture content. Therefore, add it a little, focusing on the fact that the mixture should turn out to be the consistency of liquid sour cream.
3. When the batter is ready, take the zucchini, roll them in flour, then in batter and send them to a heated pan with vegetable oil. Set the fire to medium or slightly less.
4. Fry the zucchini on both sides until golden brown. This will take 4-5 minutes.
The first finished piece must be cut and checked for readiness. If the zucchini is damp, then you need to continue to fry under a closed lid. This will allow the vegetables to cook through and the batter will not burn.
5. Fry all the plates and put them in a plate on a paper towel to drain the excess fat.
In parallel, you can quickly prepare a sauce that goes well with this dish. To do this, it is enough to mix sour cream with garlic squeezed through a press, a pinch of salt and finely chopped herbs.

Yes, the grill pan allows you to fry food completely without vegetable oil. But I'm not interested in writing about ordinary frying in such a frying pan, there is nothing interesting about it. I'd rather show you an interesting version of an Italian vegetable snack.
