It's mid-August, yesterday there was an apple saved. There are a lot of apples this year, at least in our Chernihiv region. However, as far as I can remember, there have been practically no problems with the apple harvest in my native village. In the second half of August, my mother always started harvesting apples for the winter: apple juice was pressed in liters, compotes, preserves, jam were cooked and rolled up, apple slices were dried on the stove (we call the resulting dried fruit "scrygli", do you?).
In general, in our family they continue to do this even now. Jam and jam from the white filling have already been prepared and rolled up, my husband will go to squeeze the juice next weekend. Jams, juices, compotes - all this is very good, but somehow ... standard, or something. A kind of mandatory program that everyone who harvests apples for the winter follows. But what if you go beyond the trivial and cook ... apple chips?
I must admit that sometime before the beginning of 2000, I did not even know such miracles as apple chips. In the village, apples were always simply dried on the oven on a huge scale. Each house had whole bags of dried apples, which were later used mainly for cooking compote. I first tasted apple chips, probably ten years ago. I noticed it in the store, got interested, bought it, tried it - both I and my sons really liked it. In winter, sitting in front of the TV or computer in the evening, chewing instead of sunflower seeds is just that.
However, as I remember now, the purchased apple chips were not cheap. Naturally, as a family responsible for food, the question arose before me - how to cook apple chips at home? Fortunately, the task was not difficult. Without using anybody's recipes (we didn't smell like the Internet at that time, no one had ever cooked anything like this among friends-acquaintances), I decided to try it myself - fortunately, the apples were still piled up, it’s not a pity to spoil it. But I didn't spoil anything: the apple chips I made with my own hands turned out to be no worse than the store ones.
My joy knew no bounds: another cool recipe for homemade apples in my pocket. Since then I've been making apple chips every year. I try to cook as much as possible, but the chips still don't live up to winter - children sweep them away in a moment.

The first thing to do is wash the apples. Wash, but never peel. The apples, along with the peel and core, must be cut into as thin slices as possible. I used to do it with a knife, the slices were quite thick. Now I use a special grater for fruits and vegetables - the slices are very thin. The thinner the better.
We set the oven to warm up to 110 degrees. By the way, I have never tried making apple chips on an ordinary rustic oven - I think it will turn out no worse. So, we put the oven to warm up, cover the baking sheet with non-stick baking paper (otherwise the apples will dry on the baking sheet), carefully lay out the apple slices. Laying does not need to overlap, but each slice separately. This is the only difficulty: if the oven is small, then you won't be able to make a lot of chips at once. That is why this year I plan to try my recipe in the rustic oven.
We bake our apple chips for about 2 hours at 110 degrees. In the middle of baking, turn the chips. In general, the exact baking time depends on the thickness of the slices. I cut with a special grater, the slices are very thin, and therefore the chips reach condition in literally 1 hour. However, if cut with a knife, the slices will be thicker and will take longer to bake.
You can sprinkle the apple chips with spices such as cinnamon or sugar before baking.
Actually, that's all - the apple chips are ready. I think that you can store them for a long time, but I don't know for sure - we have them for more than a month or two, no matter how much you cook :)

Since you will have a time gap of 10 minutes between each baking sheet put in the oven, you do not have to clutter the kitchen with sheets. The previous one will have time to cool down until the next one is removed.
And pour the finished chips from the paper into one baking sheet, leave overnight at room temperature.
When dried immediately after the oven, the apple rings become crunchy, as it should be for chips, unlike dried fruit.
I have also tried replacing the sugar in the syrup with stevia (a sweetener), but the result was not at all impressed. You can't just remove the sugar syrup either. For the output is an ordinary apricot, that is, dried apples are like in compote, but they dry much longer, unlike apple rings welded in syrup.
In industrial production, in a combi steamer, I would first put the rings laid out on paper on the steam mode, for 10 minutes. And then I would sprinkle it with cinnamon mixed with powdered sugar. And it would have dried further at 100 degrees.
And do not take too much of the sugar in the recipe about one and a half cups of sugar - half of the syrup will still remain unspent. Apples are not a cotton pad for you, they will not absorb too much.
