Pancakes for aesthetic delight. No, of course, they are tasty and very tasty, however, their main plus is in the perfect romance of "appearance". In general, are you looking for a recipe for beautiful pancakes on kefir with holes? Consider that you have already found it.

Thin openwork pancakes on kefir with holes

Ingredients:

  • 0.5 l of fat-free kefir;
  • 2 eggs;
  • 140 g flour;
  • 2 tbsp. l. Sahara;
  • 1/2 tsp salt;
  • 1 tsp soda;
  • 1.5 tbsp. l. vinegar;
  • vegetable oil.

We slightly heat the kefir - in a water bath, in the microwave, or just delicately on the stove, making sure that it does not curl up. The temperature of the liquid should be just perceptibly warm - 37-40 degrees.

Add soda, sugar and salt, mix. We drive in eggs. Gradually add flour. At the end, add vegetable oil and pour in vinegar (can be replaced with lemon juice). We leave the dough for 15-20 minutes, after which we fry in a preheated pan on both sides until golden brown, trying to pour the dough as thin as possible.

Tip: a well-heated pan is a guarantee of a large number of holes. It is better to make the fire a little more familiar - the pancakes will be more delicate.

2. Custard pancakes with kefir in boiling water

Choux pastry, when cooked correctly, is very, very cool! It is easy to work with it, it does not stale or dry for a long time, pancakes are elastic and easily wrapped with fillings.

Ingredients:

  • 2 glasses of kefir;
  • 1 cup boiling water;
  • 2 eggs;
  • 250 g flour;
  • 3 tbsp. l. Sahara;
  • 1/2 tsp salt;
  • 1 tsp soda;
  • vegetable oil.

Mix eggs with salt, soda and sugar. Add kefir, add flour, mix until smooth. We introduce a couple of tablespoons of vegetable oil, mix again and, without turning off the mixer, pour boiling water in a thin stream.

Leave the dough for 10 minutes, then heat up the pan, pour a ladle of dough onto it, distribute over the entire surface, fry on both sides until golden brown.

Tip: to knead the dough, it is better to use a mixer or blender - this way boiling water will brew flour better and more evenly.

3. Pancakes on kefir without eggs

Don't eat eggs, but be friends with milk? Looking forward to a vegetarian visit? Is the child allergic to chicken protein? Pancakes on kefir without eggs are an excellent solution.

Ingredients:

  • 400 ml of kefir;
  • 200 ml of boiling water;
  • 250 g flour;
  • 2 tbsp. l. Sahara;
  • 1 tsp soda;
  • 1/2 tsp salt;
  • vegetable oil for frying.

Mix the kefir well with sugar, soda and salt, add flour and knead thoroughly until smooth. Without turning off the mixer, pour in boiling water in a thin stream, add oil.

We fry the pancakes as usual - in a well-heated frying pan on both sides.
Advice: if there are doubts or simply uncertainty about the fact that pancakes on kefir without eggs will be quite dense, add mashed banana to the dough.

4. Thick yeast pancakes on kefir

Lush and soft, these pancakes are bad for only one thing: it is impossible to stop, you will eat until you run out.

Ingredients:

  • 1.5 cups flour;
  • 0.75 cups of water;
  • 1 glass of kefir;
  • 2 eggs;
  • 9 g yeast;
  • 2 tbsp. l. Sahara;
  • 1/2 tsp salt;
  • 2 tbsp. l. sunflower oil;
  • 50 g butter.

In a convenient bowl, combine warm water, salt, yeast and half a glass of flour. As soon as everything starts to "play" (and the yeast dissolves), add eggs, kefir, melted butter and vegetable oil. Whisk. Gradually add the remaining flour, knead the dough until visually shiny uniform.

Covering with a lid, leave in a warm place for about half an hour, after which we bake pancakes, carefully removing the required portion of dough from the edge of the bowl and not stirring it again. Turn over when ready, remove when the pancake is evenly golden.
Tip: by reducing the amount of yeast by three to four times, you can mix the products overnight - by the morning you will just have a ready-made dough for making pancakes.

5. Pancakes on kefir without soda

If you do not like the taste of soda in baking, but are not indifferent to kefir pancakes, the best solution would be a recipe that allows you to do without the baking powder familiar to everyone. The pancakes are thin and quite elastic and, contrary to fears, soft and tender.

Ingredients:

  • 1 glass of kefir;
  • 2 eggs;
  • 2 tbsp. l. Sahara;
  • 1/2 tsp salt;
  • 1/2 cup flour
  • vegetable oil for frying.

In a convenient bowl, mix all the ingredients, let the resulting mass stand for 10-15 minutes, then mix again and fry the pancakes on both sides until tender, pouring the dough in small portions onto a well-heated frying pan, distributing it over the entire frying surface. Turn over when the top side is visually dry.

Tip: pancakes on kefir without soda are quite elastic, and therefore ideal for wrapping any fillings in them. If you want to add softness and fluffiness, add a couple of well-beaten proteins to the dough.

6. Simple pancakes for 1 liter of kefir

Ingredients:

  • 1 liter of kefir;
  • 2 cups of flour;
  • 3 eggs;
  • 3 tbsp. l. Sahara;
  • 2 tsp (no slide) soda;
  • 1 tsp (no slide) salt;
  • vegetable oil for frying.

In a convenient bowl, combine the sugar, salt, baking soda and flour. We break the eggs, pour in kefir, quickly mix everything until completely homogeneous, at the end, pour a little vegetable oil directly into the dough. Let stand for 15-30 minutes, then stir again and begin to fry the pancakes as usual - pouring a small amount of dough into the pan, distributing it over the entire area, turning it over when the edges begin to brown.

Tip: The dough using this formula turns out to be quite thick. If, when you start frying pancakes, you understand that you want thinner pancakes, add a little boiling water to the bowl.

7. Pancakes with kefir and milk

Kefir gives pancakes a sour note. If you want to minimize it, dilute the dough with milk - it will be no less beautiful and just as appetizing, but without the characteristic kefir shade.

Ingredients:

  • 1 cup flour
  • 1 glass of kefir;
  • 1 glass of milk;
  • 2 eggs;
  • 2 tbsp. l. Sahara;
  • 1 tsp soda;
  • 1/2 tsp salt;
  • vegetable oil for frying.

Beat eggs with sugar and salt, pour kefir into the mass, add flour, bring to homogeneity. After that, we introduce warm milk mixed with soda, at the end we pour in vegetable oil.

Fry thin pancakes in a well-heated pan on both sides until golden brown.

Tip: if you want the kefir and milk pancakes to come out even more delicious, grease each finished pancake with a little butter.

8. Chocolate pancakes with kefir

Fantastic recipe for those who love pancakes and literally lose control at the sight of a chocolate bar. By combining two passions, you can get a mind-blowing result.

  • 200 g flour;
  • 350 ml of kefir;
  • 3 eggs;
  • 5 tbsp. l. cocoa;
  • 3 tbsp. l. Sahara;
  • 1/2 tsp salt;
  • 1/2 tsp soda;
  • vegetable oil.

Beat eggs with sugar and salt, add cocoa, knead until smooth. After that, pour kefir into a bowl, add flour mixed with soda. Stir, add frying oil at the end. We remove the dough for 1-5 hours in the refrigerator, after which we fry the pancakes as usual - in a well-heated frying pan on both sides.

Tip: To make the yogurt-based chocolate pancakes even more chocolatey, add some fine chocolate drops to the dough.

9. Pancakes on kefir in the oven

  • 200 g flour;
  • 2 eggs;
  • 1/2 tsp salt;
  • 1 tsp soda;
  • 3 tbsp. l. Sahara;
  • 80 g butter.

We heat the oven to 220 degrees, the baking sheet inside warms up together with the oven. Put butter on a metal sheet so that it melts, distribute the resulting fat along the bottom and sides.

In a bowl, mix salt, soda, sugar, flour. In a separate bowl, mix kefir, eggs and excess butter. We connect two masses. Put a small amount of dough on a hot baking sheet with a spoon, spread it lightly, give it a round shape. Put in the oven for 5-7 minutes. We remove the finished pancakes, bake the next batch.

Tip: if you really, really don't want to play with the dough, pour it over the entire area of the baking sheet and bake one huge rectangular pancake, which can be cut into portioned pieces before serving.

10. Savory snack pancakes on kefir with herbs

Not everyone loves sweet pancakes. Honey, jam and syrups are great, but greens and cheese are just as interesting when it comes to kefir pancakes. According to the given recipe, not thin and rather fluffy pancakes are obtained. If you prefer a softer and more delicate option, reduce the amount of flour.

Ingredients:

  • 0.5 l of kefir;
  • 2 eggs;
  • 200 g flour;
  • 1 tsp soda;
  • 1/2 tsp salt;
  • 1 tbsp. l. Sahara;
  • 1 large bunch of greens;
  • vegetable oil for frying.

Beat the eggs in a bowl, add salt, sugar, soda. Finely chop the herbs and transfer to a bowl of eggs. Pour in a small amount of vegetable oil and kefir, mix and combine with flour.

Let the dough stand for 10-15 minutes, then stir again and fry the pancakes as usual - in a well-heated pan on both sides and until golden brown.

Tip: Experimenting with the types and amounts of greens is an easy way to get new flavors every time.

Thin, soft, porous pancakes without the slightest taste of kefiric acid. Tasty: with honey, jam or stuffed with curd mass.

Ingredients:

  • Kefir 3,2 % - 0,6 l
  • Flour - 300 G
  • Water - 300 ml
  • Eggs - 3
  • Sugar - 3 tbsp
  • Salts - 1/3 tsp
  • Soda - 1 tsp without a slide
  • Vegetable oil - 3 tbsp
  • For filling
  • Curd from 9 before 12 % fat - 400 G
  • Cream 20 % - 100 ml
  • Powdered sugar - 2 tbsp
  • Raisins, prunes

Preparation:

  • Beat eggs with sugar and salt, add kefir, flour, stir well. Boil water, add baking soda and immediately pour a thin stream into the dough, stirring actively with a spoon. In a frying pan in which the pancakes will be baked, heat the vegetable oil and pour it into the dough.
  • Bake in the same way as pancakes in milk. The dough seems dense, but it spreads very plastically in a thin layer in the pan. Turn over when the surface of the pancake is porous and dull.
  • From this amount of products, a lot of pancakes are obtained (it all depends, of course, on the diameter of the pan, I have 18 cm).
  • For the filling, you can take the finished curd mass. I love to do it myself. Mash the curd with a fork, pour in the cream in portions and stir well each time. The mass turns out to be gentle, homogeneous.
  • Add powdered sugar. Sugar is not desirable, it dissolves poorly, and then the mass can "float". Finally add steamed raisins and diced prunes. Wrap the filling in pancakes.
  • Some pancakes can be left without filling. They are very tasty to eat with honey, jam or sour cream.

What to cook from kefir that lingers in the refrigerator? Of course

Ingredients:

  • Kefir - 200 ml
  • Water - 100 gr
  • Sugar - 3 tbsp
  • Egg - 1 PCS
  • Soda - 1/2 tsp
  • Vegetable oil - 20 ml
  • Flour - 200 gr

Preparation:

  • Mix kefir with water, add sugar. Stir with a whisk.
  • Add the egg. Beat with a whisk.
  • Add butter, baking soda and sifted flour. Stir with a whisk. The dough should be cool.
  • Then, with constant stirring, pour in boiling water. About 150 ml.
  • If you like thinner pancakes, you can increase the amount of boiling water.
  • We bake in a pre-heated frying pan.

Hope

Ingredients:

  • Flour - 700-800 G
  • Kefir - 1 liter
  • Sugar - 3 tablespoons
  • Vegetable oil - 100 G
  • Eggs - 3 pieces
  • Soda - 3/4 teaspoon
  • Salt to taste

Preparation:

  • Pour kefir into a deep container, beat in eggs, add sugar, butter and salt.
  • Redeem the soda thoroughly 9 % vinegar (or other acid, such as citric acid). To do this, dilute the soda with water and add vinegar in small portions, and discard the foam formed as a result of the reaction into the dough. And so on until the soda completely decomposes, since even a small amount of it, once it gets into the dough, will give it an unpleasant taste.
  • Mix all the ingredients thoroughly again and add flour, stirring the dough continuously. Its consistency should correspond to thick sour cream.
  • Bake Pancakes in a well-heated pan (better for pancakes, but you can also use a regular one). Before the first pancake, grease the pan with a little oil. All subsequent ones are to be baked in a "dry" frying pan. There is enough oil in the dough so that the Pancakes do not stick to the pan, but come off easily.
  • Pancakes need to be baked on both sides over low heat for 1 minutes (on each side).
  • BON APPETIT!

  • Add warm kefir, mix.
  • Pour boiling water in a thin stream.

Daria Bezmenova

Ingredients:

  • Kefir - 900 G ( 4 glasses)
  • Flour - 500 G ( 4 glasses)
  • Egg with - 4 PCS
  • Water (boiling water) - 400 G ( 2 glasses)
  • Soda - 9 G ( 1 tsp)
  • Sugar - 50 G ( 2 tbsp)
  • Salt - 4 G ( 0.5 tsp)
  • Vegetable oil - 40 G ( 3 tbsp)

Preparation:

  • Beat eggs with a whisk with salt and sugar until smooth.
  • Add kefir and stir.
  • Add half the flour and mix thoroughly.
  • Add a glass of boiling water, thus brewing flour, mix again.
  • Pour in the other half of the flour.
  • Pour soda into a glass, pour the remaining boiling water over, mix and pour into the dough. Mix everything thoroughly, the dough is smooth, without lumps.
  • Add vegetable oil, let the dough stand 15 minutes and bake in a hot skillet. At first glance, it may seem that the dough is thick, but in the end, thin pancakes are obtained from it.
  • An important nuance, these pancakes have a peculiarity, if you start turning them over early, then they begin to break. Turn them over only when the surface of the pancake dough is matte, with holes, without traces of batter, but of course the pancake should not burn out.
  • Bon Appetit!

I have already published the recipe for the pancakes themselves, and I am publishing it again. But with such a filling, it's just delicious 😋

Ingredients:

  • Kefir - 400 ml
  • Steep boiling water - 250 ml
  • Eggs - 2
  • Flour ( 2 glasses on 200 ml) - 240 G
  • Salts - 1/2 h spoons
  • Sugar - 1 h spoon
  • Soda - 1/2 h spoons
  • Unscented sunflower oil - 2 1 tablespoon
  • Chicken fillet - 350 G
  • Champignons - 300 G
  • Bulb - 1
  • Salt and ground black pepper to taste
  • Vegetable oil for frying
  • Butter - 50 G
  • Sunflower oil - 2-3 1 tablespoon

Preparation:

  • For the filling, peel and chop the onion and champignons, fry them in vegetable oil, add salt at the end of frying. Boil the chicken fillet in salted water, add onions, carrots, spices to the water if desired. I added the Veggie Blend seasoning. Remove the finished chicken fillet from the broth to cool a little, then pass it and the mushrooms and onions through a meat grinder. Add a little broth, in which the fillets were cooked, to make the filling more juicy. Mix.
  • For pancakes, mix eggs with salt, sugar and kefir, stir. Gradually add the sifted flour, while continuing to stir, pour in a thin stream of boiling water. Add baking soda and sunflower oil and mix again. Bake pancakes on both sides. If the pan is good non-stick, then you do not need to grease, if it is ordinary, then grease with oil before starting, then you can not grease.
  • We spread about one and a half tablespoons of the filling on each pancake, wrap it in an envelope. Pour a little vegetable oil into a frying pan, put the spring rolls, put pieces of butter on top and fry a little under a lid on a fire just below average on both sides.
  • Bon Appetit!

Custard pancakes with kefir. Openwork Pancakes:

Kefir pancakes like Pooh. The secret to making the pancakes Lush and Delicious.

How to cook thin pancakes on kefir the correct recipe is a complete description of the preparation so that the dish turns out to be very tasty and original.

I learned this recipe for thin kefir pancakes from my grandmother. Since childhood, I loved to come to her kitchen and watch how she kneaded the dough into thin pancakes with kefir, poured it into a cast-iron pan and deftly turned the golden pancakes over. Now I myself often spoil my relatives with thin and tender pancakes with various fillings or just with strawberries and chocolate, as today. A pinch of ground cinnamon or vanillin can be added to the dough for sweets for flavor.

  • 500 ml kefir 1-2.5% fat;
  • 5 tbsp. l. flour;
  • 3 eggs;
  • 1 tbsp. l. vegetable oil;
  • 1 tbsp. l. Sahara;
  • 0.5 tsp soda;
  • 0.5 tsp salt.

How to make thin kefir pancakes:

Drive three eggs into a bowl with high sides. Add fine salt, granulated sugar and baking soda. Whisk the mixture so that the dry ingredients dissolve properly.

Pour into the resulting egg mass a part of kefir at room temperature, about one third of the total. Mix everything with a whisk.

    Since large pancakes on kefir have a neutral taste, absolutely any filling can be used for their stuffing - both salty and sweet.

    For a festive or ordinary table, the following filling options are perfect:

    • Salmon, low-fat cottage cheese, herbs and salt. This is a very spicy and incredibly tasty filling that will make pancakes the main highlight of the table. From above, you can pour them with kefir-sour cream sauce.
    • Cottage cheese grated with sugar with the addition of raisins, dried apricots, fresh fruits, nuts or dried fruits. Top pancakes can be poured with melted butter or low-fat sour cream.
  • Finely chopped boiled or fried liver, which was soaked in milk before heat treatment. It is customary to serve such pancakes with sour cream of any fat content.
  • Poppy, which is first steamed in hot water, and then grinded well with granulated sugar. Top the pancakes are poured with melted butter.
  • Chicken, grated cheese and mushrooms. To prepare this filling, chicken fillet is chopped and then stewed with onions and mushrooms. After the resulting minced meat is cooled, grated hard cheese is added to it.

    Grated cheese Chicken fillet Mushrooms

  • Boiled condensed milk and a slice of fresh banana. Children will love this filling option. Top pancakes can be drizzled with a little melted chocolate or powdered sugar.
  • Beef, pickled cucumbers and mushrooms. This is another version of the spicy filling for the festive table. For its preparation, fresh beef is chopped in a meat grinder, fried with onions and pieces of champignons. After the minced meat is ready, it is cooled and pickled cucumbers cut into circles are added to it. Top pancakes can be poured with sour cream or sour cream-kefir sauce, seasoned with salt and finely chopped herbs.
  • One of the most expensive but incredibly tasty options is caviar filling. These pancakes are served with ghee for special occasions.
  • On kefir, you can easily cook thin openwork pancakes. Since they have a neutral taste, they can be safely stuffed with absolutely any filling and served with a festive or regular table. Top similar pancakes, depending on the filling used, can be poured with ghee, hollandaise sauce, sour cream, mayonnaise, soy sauce, honey, jam, chocolate, Bechamel sauce, etc.

    Although, in order to cook thin pancakes on kefir, a certain amount of knowledge and skills is required, even a beginner in the culinary art can cope with this, at first glance, somewhat difficult task. To do this, you need to pay attention to the following tips:

    • To make thin, porous pancakes, do not put too much flour in the dough, otherwise, in this case, they can turn out to be quite fluffy and thick.
    • Eggs should be placed in the dough in an amount of no more than 2 pieces. The more eggs, the more dense the pancakes will be.
    • To obtain porous pancakes, soda is often used in the dough. Please note that before putting it into the dough, it should never be quenched with vinegar. As a rule, it is mixed with sifted flour or quenched in kefir, and vinegar (if provided in the recipe) is added later. You can make porous pancakes without adding baking soda. We'll look at how to do this later.
    • Thin, porous pancakes are usually not prepared with yeast.
    • For the test, you should use kefir, the temperature of which is close to room temperature. It is advisable to leave it somewhere in a warm place overnight on the eve of making pancakes.
    • Store-bought kefir can be successfully replaced with self-prepared sour milk. To prepare it, you need to take 1 liter of whole milk and leave it warm for one to two days. To speed up the souring process, you can add a small amount of kefir, fermented baked milk or yogurt to milk. Pancakes with sour milk are incredibly tender.
    • After the dough is ready, let it brew for 30 minutes. This will allow it to acquire the correct consistency. After that, you need to mix it, as the flour settles and the dough becomes heterogeneous.
    • Vegetable oil is added only once - before heating the pan. Further, you do not need to use it, since it is usually already included in the test. With an excess of it, pancakes will turn out to be too greasy and oily.
    • If the pancakes come out dry, after baking they must be greased with melted butter. This can be done with a silicone brush.
    • It is recommended to use a cast iron pan for frying, as it keeps the temperature well.
    • Vanilla sugar, vanillin, or a small amount of ground cinnamon can be added to the dough to add flavor to the pancakes.

    Vanilla sugar Cinnamon

  • Eggs should always be taken fresh, otherwise the pancakes will turn out to be quite dense. It is best to give preference to homemade eggs.
  • The dough should have a sour cream consistency of 15% fat. If it turns out to be too thick, it can be diluted with water, and if, on the contrary, it is liquid, add a certain amount of sifted flour.
  • Pour the dough into the pan in a small enough volume and distribute it evenly along the bottom. To do this, hold a ladle with the dough with one hand and pour it, and with the other hand rotate the pan, distributing the batter over the entire bottom.
  • To make porous pancakes, you can use any type of flour, for example, buckwheat or wheat flour. The main thing is that it should be of the highest quality. Before use, it must be sieved.
  • Pancakes on kefir, thin with holes

    I decided to make a two-in-one recipe so that you can compare which pancakes are obtained from the same products if the dough is made differently. In one case, boiling water is poured into the beaten eggs, in the other - into the dough after adding flour. The network is still debating which recipe is correct. I just took it and cooked it this way and that way, and I want to say that they are both good, each in its own way. Choose any, kefir pancakes are thin, the recipe is simple with holes, the result will be one hundred percent successful.

    Thin perforated pancakes on kefir

    Adding boiling water to the dough gives an amazing effect: it foams and rises so much that no yeast is needed. Bubbles sea, pancakes perforated, lace, thin. Hot ones are incredibly tasty, soft, tender. When they cool down, they become a little dry, but this is my subjective opinion. When baking, try not to overexpose them in the pan, keep in mind that they are thin and bake quickly. But even if they are too browned, it's okay, they become like sweet pancake chips: thin, crunchy, you can break off a piece.

    • wheat flour - 1.5 cups;
    • low-fat kefir (liquid) - 1 glass;
    • boiling water - 1 glass (250 ml);
    • eggs - 2 pcs;
    • granulated sugar - 3 tbsp. l;
    • soda - 1 tsp without a slide;
    • fine salt - 2 pinches;
    • refined sunflower oil - 3 tbsp. l.

    Cooking method

    We put a ladle of water on the burner, while it boils, we will do the dough. The beginning is standard: mix the eggs with salt and sugar, beating with a whisk or mixer until foamy. I made pancakes sweet, you can reduce the amount of sugar to two tablespoons or less, but add at least one to make the pancakes brown when fried.

    Kefir does not have to be heated, boiling water will heat everything up as needed. Pour in low-fat kefir to the beaten eggs, stir.

    We mix flour and soda, sift, clean from impurities and at the same time saturate with oxygen. My kefir was low-fat, it is liquid, a little thicker than milk, I give the calculation of flour for such a product. For thick kefir, one glass of flour should be enough. In any case, if it turns out very thick, add more boiling water or dilute the dough with kefir.

    Beat everything into a homogeneous mass, thick enough. Lump-free is very important! If you beat it badly, then when you add boiling water, the lumps will brew, become dense, you can no longer get rid of them. The only way out is to strain the dough, but why complicate everything when you can do it right away.

    The water in the ladle boiled. We measure out a glass - 250 ml. Pour in a thin stream, at the same time whisking the dough with a whisk or mixer, giving it splendor and airiness. I could not photograph the whole process, my hands are busy, but in the next photo everything is clearly visible.

    This is what the dough looks like after adding boiling water, with lots of bubbles on the inside and outside. Quite liquid, pouring out of a spoon easily, in a thin stream.

    Add sunflower oil, stir. Let the dough come to its senses and rest a little before baking.

    I grease the pan with a piece of bacon hooked onto a fork. It is also convenient to use a cooking brush or cut potatoes dipped in oil. I pour a scoop of dough onto a well-heated surface, scroll the pan, tilting it. It is liquid, in a couple of seconds it will spill over the entire bottom area, the layer will be thin. If not quite evenly, it will not affect the taste and appearance of the pancakes in any way. I make the fire medium, bake a pancake for about a minute or a half, until it is browned around the edges. I separate it from the walls with a wooden stick, put it on and turn it over with my hands to the other side. A spatula will work too, the pancakes will not break.

    Here's what we end up with: thin perforated pancakes, lace, openwork. All in the hole, as promised.

    Delicious thin pancakes on kefir with holes are ready. They are very elastic, you can roll up as you like and are suitable for stuffing. Not for a liquid filling, the custard will definitely flow out of them. And with apples or meat, an egg will be what you need. Bon Appetit!

    Recipe for thin pancakes with holes made from choux pastry on kefir

    These kefir pancakes are prepared in a completely different way. Here beaten eggs are boiled with boiling water. I still could not understand - what is this being done for, what is the trick of the recipe? It turned out to be quite an interesting technology. When beaten eggs and boiling water are combined, a lush foamy mixture is formed, into which kefir is poured and flour is added. The bubbles, of which there are simply countless numbers, perfectly loosen the dough. True, then there are fewer of them, but when baking, pancakes still come out with holes, and rather thin. Their taste is softer, they are more delicate in structure and do not dry out in a pan.

    Required Ingredients:

    • liquid 1% kefir - a full faceted glass (this is 250 ml);
    • wheat flour - a faceted glass with a large slide (170 g);
    • sugar - 2 tbsp. l. (taste);
    • boiling water - 250 ml;
    • egg - 1 pc.
    • salt - on the tip of a teaspoon;
    • soda - a teaspoon flat, without a mound;
    • sunflower oil - 2 tbsp. l.

    I want to warn you right away: the custard dough for pancakes on kefir foams very much, make it in a deep bowl. I almost ran away. We boil water, after boiling, leave it over low heat so that it barely gurgles. Pour sugar, salt into a bowl, break one egg.

    Stir and start whisking until foam appears. I first beat it with a whisk, then with a mixer, because the whisk did not give a lush foam. Beat thoroughly so that the entire surface is in bubbles.

    Pour boiling water in a thin stream, immediately beat the egg, otherwise it will go in flakes, "brew". I beat it with a mixer, but I can't show the photo, I didn't have enough hands to pour boiling water, beat and shoot.

    This was a mixture of eggs with boiling water after beating. Beat at high speed for at least a minute and a half or two. I repeat once again: take deep dishes, from my seemingly not a small bowl, splashes flew in all directions. Foams very strongly and rises quickly.

    Add kefir, cold or warm - no difference. I had a cold, liquid, slightly thicker milk.

    Sift the flour, add soda to the last portion. It is not necessary to extinguish it, boiling water will do its job, extinguish it, the taste will not be felt.

    The finished dough is liquid, flows down with a thin thread, does not break. Homogeneous, no lumps. After it has been mixed, pour in sunflower or other vegetable oil.

    We heat the pan, grease it (I use lard, you can use butter), scoop up the dough with a ladle, pour it onto a hot surface. Be sure to preheat the pan, heat it up. On warm, perforated pancakes do not work. Bake over medium heat, brown the bottom.

    Turn over, fry the other side until golden specks. Pancakes will not have large holes, but there are plenty of small ones. In structure, they are soft, elastic, you can wrap any filling.

    My conclusions: each recipe for thin pancakes on kefir has its own "zest". In the first, in which the dough was brewed with boiling water, the pancakes are lacy in structure, with fried edges, very thin. In the second, they are softer, softer, ideal for stuffing and fillings.

    Choose any recipe, you will get thin pancakes on kefir with holes the first time. No wonder I tried and took detailed photos, painted everything step by step. Well, if you still have questions, ask in the comments. Happy pancakes, bon appetit! Your Plyushkin .

    Greetings, dear readers of my blog! Do you remember that soon one of the most beloved spring holidays is Maslenitsa? This means that we will have a whole week of lush feasts with fun entertainment and the main treat - pancakes. Lush or thin, with or without fillings, from different types of flour! Each housewife has her own signature recipe for this traditional Shrovetide delicacy. In our family, my grandmother was a real master of these pastries. It was she who taught me how to bake thin pancakes on kefir, completely covered with holes.

    The main secret is the exact observance of proportions to obtain a batter. It is especially important not to overdo it with eggs, which will make the dough coarse. Or you can cook without eggs.

    Such a treat can be used as an independent dessert or stuffed with a wide variety of savory fillings: meat, cottage cheese, liver, mushrooms or cabbage. And if you want sweeter options, serve with homemade jam, condensed milk or sour cream. Each time the taste will be completely different 🙂

    You can bake such a delicacy on fresh or even sour kefir of any fat content. I offer you 6 of the most delicious proven options. Cooking is very simple and easy. Try different options and write what you like best.

    Pancakes on kefir with boiling water - the right recipe for thin pancakes with holes

    First, I suggest cooking according to my grandmother's recipe. Such a delicacy is obtained the first time, even for beginners in cooking: very delicate, textured and always delicious. The dish can be prepared with various fillings, which will make it even tastier and more nutritious.

    Prepare the following foods:

    • 500 ml of kefir;
    • 2 chicken eggs;
    • 0.5 tsp salt;
    • 250 ml of water;
    • 20-30 g sugar;
    • 320 g flour;
    • 0.5 tsp soda;
    • 2 tbsp oils.

    Step by step with a photo:

    1. Remove kefir from the refrigerator in advance so that it is not cold. Pound eggs with salt, sugar and mix with kefir.

    2. Mix the sifted flour with baking soda and gradually add to the mixture. Stir the dough thoroughly until all the lumps are broken. The mixture will be thick, like sour cream.

    3. Bring the water to a boil, gradually pour into the dough and stir quickly with a whisk.

    Therefore, pancakes are called custard, because boiling water is added. They turn out to be very thin, literally openwork and with holes.

    4. Add vegetable oil to the resulting dough. You can fry immediately or after 20-30 minutes, when the dough has cooled down a little.

    To prepare the first portion, lightly grease a hot skillet with vegetable oil. And then fry without oiling, they will not stick.

    Openwork custard pancakes on kefir without eggs

    I suggest using this option for moms if children are allergic to eggs. Well, to everyone who does not use this product. The dough is very easy to prepare. The recipe can also be used to make stuffed pancakes.

    Take the following foods:

    • 500 ml of kefir;
    • 2 cups of flour;
    • a pinch of salt to taste;
    • 2 tbsp Sahara;
    • 1 tsp soda;
    • 250 ml of water.

    Cooking the dough:

    1. Leave the kefir on the kitchen table for an hour before cooking. It needs to be at room temperature. Then, pour the kefir into a deep bowl, add sugar and salt.

    2. Stir constantly with a whisk and add the sifted flour. The dough should resemble sour cream in consistency. Quench the soda with boiling water and add to the mixture. Stirring constantly, gradually pour in boiling water.

    By adding boiling water and baking soda, the dough will foam with bubbles.

    3. Leave the dough to rest for 15 minutes and then start baking. Grease a frying pan with vegetable oil and bake on both sides until golden brown.

    Thin yeast pancakes on kefir - a very tasty grandmother's recipe

    This one differs from the previous versions in that yeast is added to the dough. In this case, you will not get thick pancakes, but very thin ones, with a loose and fluffy structure. The taste is light, pleasant yeast sourness.

    For the test, you will need:

    • 2 eggs;
    • 1 liter of kefir;
    • 1-2 tbsp Sahara;
    • 0.5 tsp salt;
    • a pinch of vanillin;
    • 350-400 g flour;
    • 50 ml of vegetable oil;
    • 25 g fresh (or 1 tsp with a slide of dry yeast).

    Cooking method:

    1. Mash fresh yeast in a bowl or add dry instant yeast immediately. Pour them with a small amount of kefir heated to 37-40 degrees. Stir the kefir until the yeast is completely dissolved.

    2. Add sugar, eggs and salt to kefir. Stir everything thoroughly with a whisk or fork. Add vanillin to the mixture at the tip of a knife.

    3. Gradually add flour to the kefir blank. Not all flour may be needed: the consistency of the mixture should be like a very thick sour cream.

    4. After that, cover the container with cling film and place in a warm place for fermentation for 30-40 minutes. During fermentation, the volume of the dough will double.

    5. Add the remaining kefir to the mixture.

    The dough should now be runny. If it's thick, add a little warm (but not hot) milk or water.

    6. Cover the container again with foil and leave to ferment for another 15-20 minutes. Bubbles will appear on the surface. Then add vegetable oil and start frying.
