Everyone gathers for my nephew's birthday: grandmothers, grandfathers, aunts, uncles, cousins, cousins ​​and other relatives. For them, there is no birthday without a cake, because it cannot be that simple. People of tradition, you know. In general, a cake is urgently and desperately needed.

And now BUT begins to emerge. The first “but”: I personally don’t need a store cake with margarine and a bunch of additives. The second “but”: I have absolutely no time to bake ... I'll have to compromise and make another “lazy” cake without baking. For example, oat cake with curd cream.

For an oatmeal cake without baking, we need:

  • 800 grams of oatmeal cookies;
  • 500 grams of 9% cottage cheese;
  • 1 cup of sugar;
  • 175 grams of butter;
  • 4 tablespoons oatmeal;
  • 2 tbsp cocoa;
  • 2 tbsp raisins (optional).

To start the process, we spread oatmeal cookies around the perimeter of our future lazy cake. And the denser the better.

In fact, you can do this on a regular tray wrapped in foil. But I am a well-known coward and reinsurer when it comes to cakes. Therefore, until the very last stage, I did everything in uniform, just in case ...

Now set aside 25 grams of butter and 1 tablespoon of sugar. This is for later.

Now is the time for curd cream. For it, we need to beat butter, cottage cheese and sugar in a mixer or in a blender, and then divide the resulting mass into two parts. Add cocoa to one part, raisins to the other (if we have one).

We cover the cookies with one of two options for curd cream. I started with white.

We lay out the cookies again ...

... which we cover with the second type of cream.

For the third and last time, lay out a layer of cookies and distribute all the remaining cream more or less evenly on top.

And now we recall our little "stash" :)) We heat the oil in a frying pan, pour the oatmeal into it, and a spoonful of sugar there. And fry all this until a golden-ruddy shade.

It remains to wait for the flakes to cool down and sprinkle them on the top and sides of our wonderful cake. Now it is vital for him to spend at least two hours in the refrigerator. It could be longer.

Oatmeal cake

Ingredients:

flour - 100gr.;

sugar - 150 gr.;

oatmeal - 100g.;

any freshly frozen berries (in our case, chokeberry is used) - 150 gr.;

salt;

chicken eggs - 3 pieces;

cream or sweet curd for garnish.

Cooking method:

1. Sugar is placed in a deep plate and mixed with chicken eggs. Using a mixer or a whisk, beat the mass until a thick foam is formed.

2. Add the oatmeal to the sweet egg froth and beat thoroughly.

3. Flour is added to the prepared dough in small portions. Continuous stirring will help to avoid the formation of lumps. If there is a mixer in the house, you do not have to turn it off, but add all the ingredients while it is running.

4. At the end of cooking, salt the dough.

5. In a frying pan, grease with a sponge soaked in sunflower oil, pour 2/3 of the dough, and then spread it in an even layer over the surface of the berry. The rest of the dough is poured onto the filling.

6. The cake is placed in the oven, after making sure that the temperature reaches 200 degrees. Bake the cake base for about 40 minutes. The cake must be baked, and the berries must sink to the bottom of the mold.

7. Put the finished cake on a flat dish. Previously, it should be carefully separated from the edges of the form with a sharp knife or metal spatula.

8. The surface of the finished cake should be soaked in berry juice. It is garnished with whipped cream or thick sweet cottage cheese.

Dessert is served warm along with hot tea, compote or fruit juice.

  4. Dry the oatmeal in a pan until golden brown.
  5. Add flour and oatmeal to the resulting egg mass with continuous beating. We leave a little flakes for decoration. Put the finished mass in a greased form and bake at a temperature of 240-250 degrees.
  6. We release the finished cake from the mold, cool it, cut it into two layers and glue it with cream. To do this, we smear only the top cake with cream.
  7. We decorate the surface of the cake with jam or the remaining cream and sprinkle with oatmeal, which can also be mixed with chopped nuts.
