Cooking method:

1. After separating the egg whites from the yolks and pouring them into a dry bowl, begin to beat them at moderate speed of a mixer without sugar. Continue the process until a dense white mass with a slight glossy shine is formed.

2. In a separate enamel bowl, slowly beat the yolks, gradually adding boiling water to them. When the mass begins to foam and slightly increases in volume, start gradually adding sugar. It is necessary to achieve complete dissolution of the crystals and continue beating until the whitened mass becomes thick.

3. Separately combine flour, cocoa powder, and ripper. To mix all ingredients evenly, pass the mixture twice through a sieve.

4. Transfer the protein mass to the whipped yolks and immediately add the flour mixture. Mix everything very carefully with a spatula. Homogeneous dough should be evenly colored.

11. Mix the cooled sugar syrup with cognac.

12. Remove the crumb from the cooled biscuit base. Saturate the bottom and sides of the resulting blank with cognac syrup and place the bananas in it.

13. Put some curd mass on the fruit layer, smooth. Then lay out the rest and form a neat slide out of it. Leave a few spoons of cream, they will come in handy for decoration.

14. Knock the removed crumb into a crumb with a blender or rub with your hands and cover the cream with it so that there are no gaps. Leave a few crumbs.

15. Break a bar of dark chocolate into pieces and heat in a water bath.

As a result, you get 6 full-fledged cakes, which need to be stacked on top of each other in turn, thoroughly smearing each cake with cream. You should also pay special attention, as usual, to the sides of the cake, so that they are as soft and soaked as the middle of the cake, so carefully grease the sides of the cake with cream in a circle. Although, in my opinion, it is better to divide the cakes into 2 cakes, since it turns out to be very high. It is advisable to send the cake to the refrigerator overnight so that the cream is well absorbed into the cakes. You can decorate as you like and with anything at your discretion: you can simply sprinkle a bar of chocolate grated on a coarse grater on top. It usually takes me only a third of a tile to sprinkle one cake.

  19. In the meantime, we will form the "legs of the mole". To do this, take a pink Frutella gum and roll it into a thin layer with a rolling pin. Using the blade of a knife, cut out a semblance of a cartoon paw. Cutting will not be very convenient, but all the irregularities and sharp corners can then be edited by hand, giving the figure a more rounded and "correct" look. As a "nose" we roll a small part of "Frutella" into a bun - the candy will be malleable almost like plasticine.
