Step 1: prepare rice.

Then we throw it back into a small, preferably non-stick pan and fill it with purified water in the proportion 1: 1.5, that is, we need 100 grams of cereal per 150 milliliters of water to get 240-260 grams of the finished product... The peculiarities of "Jasmine" are that it does not need excess liquid, in Thailand it is generally steamed, simply placed in special muslin knots and hung on a hook in a double boiler. Well, an ordinary saucepan is suitable for us, we put it on medium heat and, as soon as the water begins to boil, we reduce its level to a minimum.

Stir the cereals once with a wooden kitchen spatula, then cover and cook for 18-20 minutes until soft, but so that the grains retain their integrity. After that, remove the rice from the stove, loosen it very carefully with a table fork and leave it covered for another 5 minutes or until use.

Step 2: prepare the shrimp.


Then we take the shrimps without unpacking, send them into a bowl with cold running water and leave them in this form for 10-15 minutes or until they thaw completely. Then we thoroughly rinse the seafood from the sand, dry it with paper kitchen towels and rid them of their heads, shells, and also tails.

Step 3: prepare vegetables, herbs and other ingredients.


Now, using a clean knife, we get rid of the garlic, a piece of ginger from the peel, green onions from the roots, and from the sweet pepper we remove the stalk and gut it from the seeds. We wash these products under streams of water, dry them with paper kitchen towels, put them in turn on a cutting board and grind them. The shape of the cut is not important, both straws and cubes are suitable, the main thing is that the size of the pieces should not exceed 4–5 millimeters. We lay out vegetables with herbs on separate plates and put fresh peas side by side.

Then we add chicken eggs in turn and send the whites and yolks into one deep bowl. Beat them with a table fork until a homogeneous consistency, you should not be too zealous, a light splendor is enough. Then we put on the countertop all the other ingredients that will be needed to prepare the dish, and proceed to the next step.

Step 4: prepare shrimp fried rice.


We put a wide frying pan with a thick non-stick bottom on medium heat and pour a little sesame oil into it. After a few minutes, when the fat is warmed up, put the chopped carrots into it and fry it for 3-4 minutes until soft. Then add bell peppers and peas to the vegetable and cook them for another 1 minute. Next, we send garlic with ginger to the pan, and after 30 seconds and shrimp.

We cook everything together, constantly loosening with a wooden kitchen spatula about 1 minute... We don't go far from the stove, it can burn! Then add rice to the pan, stir and fry over medium heat 4-5 minutes.

After that, make a dimple in the middle of all the ingredients and pour in slightly beaten eggs. We keep them in this form until they set, only after that we mix with the rest of the products until a homogeneous consistency.

Now we season the dish with sugar, as well as three types of sauce: oyster, soy and fish. Again we loosen everything and keep it on the stove. 2 minutes.

Then we remove the pan from the heat, cover it with a lid and leave it alone for 4-5 minutes... Then we distribute the food in portions on plates, crush each one with green onions and serve to the table.
