Pancakes with chicken liver: a detailed recipe with a photo:

Let's start by making the filling.
Grease a frying pan with vegetable oil and put the liver in it. Season with salt and pepper. Fry over medium heat, not forgetting to stir. The liver cooks pretty quickly, so 10 minutes of heat treatment will be enough. You can check the readiness of the meat by cutting a piece of liver in the middle. If the meat is brownish and no reddish liquid is released, then the liver is ready.

In another frying pan in vegetable oil, fry the chopped onions until transparent. Then add carrots chopped on a coarse grater to it, mix and lightly fry.

The amount of the vegetable component of the filling should be equal in volume to the liver component.
We leave both the liver and vegetables to cool and start making pancakes.
Combine flour, salt, sugar and eggs in a saucepan or deep bowl.

Stir and pour in half the water and milk. Knead a thick dough. Then pour in the second half of milk and water and, having mixed the dough with a mixer, get a liquid pancake dough.
In consistency, it should be quite liquid, reminiscent of yogurt. Depending on the result obtained, if necessary, add flour, if the dough is thin, or water, if it is thick.
Add 2 tbsp to the dough. l. vegetable oil and mix again.

It is necessary to bake pancakes in a preheated pan with the addition of a small amount of vegetable oil (≈1 tbsp. L.).
Using a ladle, pour the dough into the pan and distribute it over its entire surface, making certain circular movements with the pan.

Bake the pancake over medium heat for about 2 minutes on each side until a nice crust. Turn gently with a wide spatula. Add vegetable oil as needed.

Now let's go back to the cooled filling.
The liver must be crushed. To do this, you can use a meat grinder and skip into it both the liver and the carrot-onion mixture. Or just chop finely with a sharp knife.

Liver pancakes are easy to make, and they always turn out delicious and fluffy.

Ingredients for the recipe:
-carrot - 1 piece;
- liver - 500 grams;
- onions - 1-2 pieces;
- semolina - 4-5 tablespoons;
- chicken eggs - 2 pieces;
- ground black pepper;
-salt;
-vegetable oil.

For making pancakes, you can choose beef, pork, chicken or even turkey liver.

Prepare the liver before you start making your pancakes. First, rinse it thoroughly under running cold water. If the liver is beef or pork, free it from the upper film, if the liver is poultry, then cut off the fat. Then pour slightly warm water (about 1.5 - 2 liters) into a deep dish, pour 2 tablespoons of salt into it. Place the offal in a dish of salted water and leave for 30 minutes.
This procedure allows you to remove all toxins from the liver and cleanse the blood. You can also add a little milk to the water - in this case, the liver will taste much softer, and the bitterness will go away.

After the liver is slightly damp in the salt water, transfer it to a colander to drain the excess liquid. Then cut into small random pieces. The liver should be grinded through a meat grinder with the finest grill. To avoid small lumps, you can also grind it in a blender.

Take carrots and onions and peel them. Carrots, like the liver, can be minced or chopped in a blender. But with a bow it is better to do otherwise. Cut it into small cubes. This way, the onion pieces will retain their juice during frying, and the pancakes will turn out to be more tender and soft. Transfer the chopped vegetables to the liver mass.

Add a little salt and black pepper to taste. Then add 4 or 5 heaping tablespoons of semolina to the liver dough. Stir so that no lumps of semolina remain. And put in a warm place, covering with a lid, the dough should be infused for 30-40 minutes. The semolina should swell properly. Otherwise, the pancakes will turn out tough.

After the dough is infused, prepare the pan. Heat it over high heat and add some vegetable oil. Then reduce the heat to medium so that the pancakes do not burn.

Take a large tablespoon or small ladle and place the liver dough into the skillet. And fry like ordinary pancakes on both sides until golden brown.

Ready-made liver pancakes can be served with a side dish or salad. You can also put on a piece of loaf and serve as a sandwich.

Liver pancakes with a filling are exactly the dish in which you can reliably hide an incredibly healthy, but taste-specific product - the liver, in order to feed them those who flatly refuse to use it in its pure form. Well, true fans of liver dishes will be simply indescribable delight from eating this original snack.
