Thin pancakes on kefir are the right recipe. Lace pancakes on kefir dough without eggs

11.08.2019 Restaurant notes

I learned this recipe for thin kefir pancakes from my grandmother. Since childhood, I loved to come to her kitchen and watch how she kneaded the dough into thin pancakes with kefir, poured it into a cast-iron pan and deftly turned the golden pancakes over. Now I myself often spoil my relatives with thin and tender pancakes with various fillings or just with strawberries and chocolate, as today. A pinch of ground cinnamon or vanillin can be added to the dough for sweets for flavor.

Ingredients:

  • 500 ml kefir 1-2.5% fat;
  • 5 tbsp. l. flour;
  • 3 eggs;
  • 1 tbsp. l. vegetable oil;
  • 1 tbsp. l. Sahara;
  • 0.5 tsp soda;
  • 0.5 tsp salt.

How to make thin kefir pancakes:

Drive three eggs into a bowl with high sides. Add fine salt, granulated sugar and baking soda. Whisk the mixture so that the dry ingredients dissolve properly.

Pour into the resulting egg mass a part of kefir at room temperature, about one third of the total. Mix everything with a whisk.

Add sifted flour to the dough. To make thin kefir pancakes tender, use high-quality premium flour.

Mix the dough with flour, achieving a homogeneous consistency.

Add the remaining fermented milk product to the mixture. So the dough will turn out to be tender, without lumps.

Add refined vegetable oil last. It will help make thin kefir pancakes elastic. Mix all the ingredients thoroughly again with a whisk.

Let the dough rest for 15 minutes to infuse.

At this time, heat the pan. Lubricate its surface with a small amount of odorless vegetable oil. It is convenient to use the culinary silicone brush.

Gently pour some dough into a hot frying pan. Rotate the pan to distribute the dough evenly over the surface.

Fry the pancake until golden brown. Then carefully turn it over, helping ourselves with a spatula. Fry it over medium heat until tender.

Then put the thin kefir pancakes on a dry plate.

Let's bake all the pancakes. As a result, I got 16 pieces.

You can wrap your favorite filling in ready-made pancakes with kefir. We will serve sweet pancakes with liquid honey, jam, chocolate topping, salty ones - with sour cream.

Now you know how to fry thin pancakes with kefir. They turn out to be airy and especially delicate. How do you make pancakes? What are your family's favorite toppings? I will wait for your comments!

Traditionally, pancake dough is kneaded with milk. However, there is more than one recipe for thin pancakes with holes on kefir: with soda or yeast, milk or fermented baked milk, and even boiling water. The main difference between such products is a slightly sour taste (just a little!), Which does not at all spoil the overall impression of kefir pancakes.

Thin pancakes with holes on kefir - a step by step recipe

For a simple and quick preparation of pancakes with holes, you will need the following products:

  • liter of kefir;
  • 0.25 liters of boiling water;
  • premium flour (as needed);
  • salt and soda - on a spoonful without a slide;
  • a few tablespoons (3-4) of sunflower oil;
  • 3 chicken eggs;
  • butter for coating finished products.

How to cook:

  1. Salt kefir, add eggs and stir well.
  2. Warm up a little to get a rather warm mass.
  3. Stir in flour. You should get a little thick, like for a pancake, mass.
  4. Pour soda into boiling water, mix quickly, and then pour into the mass.
  5. Stir in oil.

If the dough turns out to be too liquid, then you need to stir in a little flour. If, on the contrary, it is thick, then you need to dilute it with kefir.

Heat the frying pan, coat with sunflower oil or bacon. Fry on both sides until browned. Coat hot pancakes with butter or ghee and stuff.

Sweet products are made a little differently.

In this case, for 2 glasses of a fermented milk product is taken:

  • 1-2 cups flour;
  • 2 testicles;
  • 250 ml boiling water;
  • a few tablespoons of granulated sugar (depending on taste);
  • 4 tablespoons of sunflower oil;
  • a third of a spoonful of soda;
  • a little vanilla.

Cooking recipe step by step:

  1. Mix eggs with vanilla and sugar, beat.
  2. Stir in fermented milk product.
  3. Stir constantly, add flour in small portions.
  4. Pour in a mixture of soda and boiling water.
  5. Leave to infuse for 7-8 minutes.
  6. Stir in vegetable oil.

The pancakes should be very soft and delicate. Any filling is wrapped in them, but it is better in a small amount. After all products are more fragile than their bland counterparts therefore they may burst in the process.

Custard pancakes on kefir

The dough kneading technique for this type of product is somewhat different from the traditional method.

The recipe includes the following products per ¼ liter of fermented milk product:

  • a glass of flour;
  • egg;
  • half a glass of boiling water;
  • a quarter spoon of baking soda;
  • a couple of tablespoons of sunflower (or other vegetable) oil.

Baking custard pancakes on kefir is quite easy and simple:

  1. Beat kefir and egg.
  2. Stir in flour gradually until smooth.
  3. Quickly stir the baking soda in boiling water and pour the mixture into the dough.
  4. Stir well and leave for a few minutes to infuse.
  5. Stir in sunflower oil.

After that, fry the pancakes. They will definitely not stick to the pan, and the finished products will be really thin, which is important. To make them sweet, you need to add a few tablespoons of granulated sugar to the dough.

How to make delicate pancakes?

To make the pancakes delicate and thin, dilute the kefir mix with boiling water. Well, and, of course, they take all the products in the right amount strictly according to the recipe.

To prepare light "perforated" pancakes for half a liter of kefir you will need:

  • a couple of eggs;
  • a glass of flour;
  • half a spoonful of soda, salt;
  • 2 tablespoons of sunflower oil and sugar;
  • lard for greasing a frying pan.

How to knead the dough:

  1. Separate the yolks from the whites. Beat the first with sugar, and put the second in the refrigerator.
  2. Stir in warm kefir into the yolk mass.
  3. Stir in the sifted flour in parts until a homogeneous thick mass is formed.
  4. Stir in soda and oil slaked with vinegar.
  5. Season the cooled proteins with salt, and then beat until thick foam.
  6. Put the egg whites into the dough and stir gently.

Bake pancakes on one side and the other in a hot skillet greased with bacon until lightly browned.

On kefir without eggs

You can cook openwork pancakes on a fermented milk product without eggs.

At the same time, they take for half a liter of kefir:

  • 0.1 kg flour;
  • half a spoonful of soda and salt;
  • a spoonful of sugar;
  • 3-4 tablespoons of sunflower oil.

Making pancakes with this recipe is as easy as the list of ingredients:

  1. Beat the kefir until bubbles appear.
  2. We stir in all the other ingredients, except for flour. Beat the mass well.
  3. Gradually stir in the flour until a not too thick batch without lumps is formed.
  4. We leave for a quarter of an hour.

After the time has elapsed, proceed to baking.

Choux pastry can also be kneaded without eggs. At the same time, for 0.4 liters of a fermented milk product, take a spoonful of sugar with top, a little less than a glass of boiling water, 1-2 glasses of flour, half a spoonful of soda and 2-3 tablespoons of sunflower oil. You can use butter to coat finished products, but this is not necessary.

The technology for baking such pancakes is as follows:

  1. We mix kefir, soda, spices.
  2. Stir in the sifted flour in parts until a thick mass is formed, like sour cream.
  3. Continuing to stir, pour boiling water, and then oil.
  4. The resulting dough should have a smooth, bubbly consistency.

If you cook products according to this recipe, then they will be darker in comparison to milk pancakes, and they will taste softer, and they will have larger holes.

Thin yeast pancakes

To bake thin pancakes without adding baking soda, prepare the following foods:

  • warm kefir - 1 glass;
  • a spoonful of dry yeast;
  • a couple of testicles;
  • incomplete glass of hot water;
  • a couple of tablespoons of sugar;
  • a glass with a quarter of flour;
  • a little salt;

Cooking technology:

  1. Pour spices, yeast into half a glass of flour, mix.
  2. Pour out the kefir (warm!) And stir thoroughly.
  3. Cover the container with the dough and send it to the heat for half an hour.
  4. Beat the eggs a little, mix them into the mixture that has come up.
  5. Pour out the remaining flour, stir again.
  6. Stir with a whisk and pour in hot water.
  7. Remove in warmth.
  8. After 15 minutes, stir in the oil.

We use the finished dough for its intended purpose - for baking pancakes.

With added milk

Delicious pancakes in a small hole will turn out if you add milk to the dough.

We will prepare the following products for them:

  • 250 ml of milk;
  • 500 ml of kefir;
  • egg;
  • 25 g sugar;
  • a teaspoon of baking soda;
  • a pinch of salt;
  • 1-2 cups flour;
  • a couple of tablespoons of sunflower oil.

Cooking technology is as follows:

  1. Spices, an egg and soda are sent to slightly warmed kefir. Stir until all grains are dissolved.
  2. Mix in flour in parts. The finished mixture should be very thick and free from lumps.
  3. Milk is brought to a boil, and then a small stream is poured into the mass, while stirring at the same time.
  4. Oil is added last, the mass is mixed well again. If the mass turns out to be too liquid, you can add a little more flour.

Pancakes are fried in a calcined skillet on both sides until golden brown. While still hot, they are coated with oil or stuffed with jam.

With kefir and fermented baked milk

If you want fragrant pancakes, you can knead the dough with fermented baked milk. Then they will turn out even softer than dairy ones. And go well with jam, condensed milk and even ice cream!

Ingredients:

  • fermented baked milk - 500 ml;
  • kefir - 200 ml;
  • flour - 1.5 cups;
  • eggs - 2 pcs.;
  • sugar - 50 g;
  • a pinch of salt.

Cooking technology:

  1. Stir the fermented milk products, spices, eggs thoroughly until a homogeneous mass with small bubbles is formed.
  2. Add flour little by little, stirring well after each added portion.
  3. Remove the batch for 0.5 hours in a cool place.

Many people prefer to cook pancakes with kefir, and not with milk, because such pancakes are airy, delicate and very tasty.

The dough for kefir pancakes should not be as liquid as for pancakes with milk. But to make the pancakes thin, you can add a small amount of boiled water or even mineral water to kefir. You can also cook custard pancakes on kefir - for this, the flour should be brewed with boiling water.

Soda is often added to kefir pancake dough. Soda reacts with the acid contained in kefir - as a result, carbon dioxide is released. This makes the pancakes especially porous and airy. For 1 liter of kefir, you need to take one or two teaspoons of soda. The main thing is not to overdo it, otherwise the pancakes will respond with soda. The amount of baking soda depends on the desired thickness and texture of the pancakes. Pancakes are fried like kefir, usually in vegetable oil.

The technique of making pancakes on kefir differs little from baking pancakes according to other recipes. The finished dough is poured with a ladle or scoop into a frying pan preheated with oil and baked on both sides until golden brown. The edges should be moderately dry and well toasted.

Don't add too much dough - the pancakes should be thin and of equal thickness. To evenly distribute the dough on the surface of the pan, rotate while pouring. At the same time, the pan is always kept at a slight slope.

You can turn the pancake over with a special spatula or a long knife. As a last resort, you can use a fork. Experienced chefs turn pancakes over without any additional devices - they just toss the pancake up, where it turns over in the air.

Hot kefir pancakes are served with honey, jam, condensed milk, whipped cream or sour cream. Kefir pancakes go well with salty and sweet fillings. The cooled pancakes on kefir stick strongly to each other, so the whole stack can be sent to be warmed up in the microwave. After that, the pancakes will again lag well behind each other.

Pancakes with kefir - preparation of food and dishes

Before you start making pancakes with kefir, you need to measure out the required amount of flour, sugar, salt and soda. The flour must be sieved - this helps to saturate the dough with oxygen and make the pancakes more fluffy and airy.

You also need to melt the butter and heat the kefir a little. If the recipe uses plain water, it must be boiled. Eggs should be at room temperature, so they should be removed from the refrigerator beforehand.

From the dishes, you will need a cast iron or non-stick or Teflon skillet. You can also use a special pan for baking pancakes, you do not need to grease it. You also need to prepare a clean enamel bowl for the dough, a whisk, a glass for measuring the amount of ingredients, a spatula, a ladle or ladle and a brush for greasing the pan. Prepared pancakes are spread on a wide flat dish, greased with butter.

Then add a spoonful of baking soda (without a slide). Wait five minutes until the soda is extinguished with kefir.

Then add sifted flour and starch to this mixture and mix it all.

Pour a glass of kefir into the resulting dough and leave it for 20-30 minutes.

Of course, there are other recipes, you can experiment with the pancake dough yourself. But the essence of making all the pancakes is about the same.

Thin kefir pancakes, delicate and perforated, are another delicious fried product worth exploring. We already cooked and they also had holes, there will be some differences in the recipes, but also a lot of similarities. In one of the previous recipes, I told you how to cook on kefir, and now we will cook so that the same kefir will help us make pancakes thin and perforated, like lace. It's all about the test, I'll tell you, and reveal a few secrets.

First of all, the whole point, of course, is in kefir itself, which, as a product of fermented milk fermentation, emits carbon dioxide, that is, it simply bubbles. And if you add soda to it, then the process will also intensify. By the way, for pancakes, you can and even need to use that kefir that has already stood for a couple of days and its shelf life is approaching the end, but has not yet expired. It's all about fermentation, which intensifies over time. If you have a bag of unfinished kefir stagnant in your refrigerator, then making pancakes from it is the best and most delicious way to use it.

Still, good kefir without chemical additives is not worth more than three days, but it is not always possible to drink. Once I had such a case that I brought yogurt from the store, which I bought, forgetting to look at the date of manufacture. It turned out to be already coming to an end, and even the bag slightly pouted. Kefir had not yet had time to deteriorate, but he was close to that. So I saved the situation with a whole stack of delicious pancakes for the whole family. And then I bought a new yogurt.

Let's see how to cook delicious thin pancakes on kefir.

Delicious pancakes on kefir in a hole - a recipe with boiling water

Such pancakes on kefir with boiling water, otherwise they are also called custard. True, this is not quite the same as choux pastry, for example, for eclairs. Here, the whole brewing consists in adding boiling water, which helps the flour disperse and all the ingredients dissolve. the dough becomes homogeneous, and then the pancakes are thin and strong. They do not tear or crumple.

You will need:

  • kefir - 2 glasses
  • flour - 2 cups,
  • eggs - 2 pieces,
  • sugar - 2 tablespoons
  • salt - 1/4 teaspoon,
  • baking soda - 1/2 teaspoon

1. If you've made pancakes before, remember that the easiest way to start is by stirring the eggs and sugar. Beat them quite a bit, just to stir the sugar, salt and eggs until smooth and slightly frothy.

2. Then pour kefir into the egg mass and stir a little more with a whisk so that they are well combined. Kefir will even foam a little from active stirring, and this is only to our advantage.

3. Now it's time to gradually add flour. Do this in portions, stirring each portion. This will result in fewer lumps, which are sometimes very difficult to grind in the finished dough. It is also good if the flour is sifted through a sieve or a special mug.

4. The dough should be smooth and thick enough, like cream or sour cream. Why, you ask, if we make thin pancakes. Then I will remind you that we have pancakes with kefir and boiling water. We have already poured kefir, and boiling water will bring the dough liquid to the desired one.

Finally add vegetable oil and stir until the oil circles disappear from the surface.

6. After that, our dough will be thin enough to make the pancakes thin and delicate. Soda and kefir will react and begin to produce bubbles. It's time to start baking pancakes.

Preheat a frying pan, if there is a cast iron or special pancake, spread it with a thin layer of oil. Despite the fact that oil is added to the dough, the very first time you need to smear the pan.

Pour the pancakes into the skillet using a ladle. Tilt it so that the dough is thin and evenly distributed.

7. It is not at all difficult to determine when it is time to turn the pancake. Along the edges, it begins to blush and lag behind the pan, and the middle becomes dense, and with holes. Pick up the pancake with a spatula or knife and turn it over. It will be golden and delicate. On the second side, the pancake needs to be cooked a little less in time, literally a minute or two and it's time to shoot.

Each finished pancake can be greased with a lump of butter while it is still hot. These pancakes are very tender and smell delicious.

2. In another bowl, beat the egg with sugar and salt. Then add the remaining kefir there, preferably a little warm. Stir.

3. Now add the kefir and oatmeal mixture and stir well. Then add the wheat flour in portions. Put in a few spoons, stir and so on until you mix all the flour.

4. Stir the dough until all large lumps are gone. Small ones from the oatmeal may remain, but they will dissolve later. Let the dough stand for 10 minutes before baking.

5. When it's time to bake the pancakes, first add baking soda to the dough. It will immediately begin to bubble due to the reaction of soda with kefir acid. Also pour in vegetable oil and mix everything until smooth. You can bake.

6. Fry each pancake in a skillet until golden brown. Oat flour makes the dough strong enough and prevents the pancakes from breaking.

You will definitely get delicious ruddy pancakes.
