It seems that the banana was just specially made for muffins. Its delicate, creamy texture enriches the muffins with juiciness, and its enchanting aroma makes for a serious appetite. Banana muffins are surprisingly good, but they have one drawback: it is very difficult to resist and not eat all the baked goods yourself.

Muffins, as a type of bread, were known as early as the 11th century. They were prepared mainly for breakfast. The progenitors of modern muffins weren't sweet at all and didn't start with anything.

The recipe for making small cupcakes has undergone significant changes since then. Perhaps only the size of this bakery has survived: muffins are baked invariably small, easy to fit in the palm of your hand.

There are two main types of mini baked goods: English and American. The classic English recipe uses yeast, and the Americans loosen the dough with soda. However, everyone is unanimous on one thing: a good muffin is unthinkable without additives. Absolutely everything will do: raisins, candied fruits, nuts, berries and, of course, bananas.

Plain banana muffins

The American recipe is easier and faster. Saves cooking time without affecting the baking result: mini-muffins always turn out to be very tender, appetizing and beautiful (photo).

To make muffins you need:

  • very ripe bananas (2 pieces);
  • 2 testicles;
  • 150 g sugar;
  • 250 g flour (wheat);
  • 100 grams of butter;
  • 1 tsp soda;
  • 1.5 tbsp. l. cinnamon;
  • a pinch of salt.

The recipe for these baked goods is simple:

  1. While the oven is warming up to 180 degrees, you need to do the dough. First, mash the bananas (ripe fruits are easily pounded with a fork). After that, beat the butter and sugar. Without stopping the process, add eggs. The mixer can now be put aside.
  2. Add bananas and flour combined with soda, cinnamon and salt into the butter-egg mixture. Knead the mass until smooth.
  3. Oil the muffin tins and spread the dough in them (2/3 of the volume). The recipe provides for a baking time of 20 minutes.

Ready-made mini-muffins can be decorated with powdered sugar. You don't even have to call your family: they will be gathered in the kitchen by the delicious aroma of banana baked goods!

It's time to complicate the recipe a bit and make muffins with ripe bananas and chocolate (photo). There is no doubt that such a magical combination will delight any sweet tooth.

Of the products you will need:

  • 3 - 4 bananas;
  • 2 testicles;
  • 1.5 cups flour (wheat);
  • 1 cup sugar;
  • 0.5 cups of oil (vegetable);
  • 2 tbsp. l. cocoa;
  • 1 tsp baking powder;
  • 50 g butter (butter);
  • chocolate bar;
  • half a can of condensed milk.

This recipe is not much more complicated than the previous one:

  1. Set the oven 180 degrees. It should be ready by the time the dough is formed.
  2. Beat sugar, eggs and vegetable oil. Mashed bananas and mix with cocoa. Combine both mixtures and stir in flour and baking powder. Fill muffin tins 2/3 full with batter and bake for a quarter of an hour.
  3. While the pastry is cooling down, prepare the icing: melt the chocolate bar together with the butter, pour the finished muffins with the cooled icing. Simple and amazingly delicious!

To make the muffins even more juicy, you can cook them with cottage cheese. Products for this dessert:

  • a couple of bananas;
  • 250 g of cottage cheese (dry);
  • 200 g flour (wheat);
  • 2 testicles;
  • 150 g sugar;
  • Melt 150 g butter;
  • baking powder (1 sachet);
  • a pinch of salt, vanillin.

Crafting recipe:

  1. Chop the bananas. Either with a fork or a blender.
  2. Combine eggs pre-beaten with sugar and vanilla with cottage cheese and butter. Mix well. Add banana puree.
  3. Knead the dough by adding flour combined with baking powder and salt. Distribute the dough into molds and bake in the oven at 180 0 for about half an hour.

Cool hot muffins and garnish with powdered sugar. The photo shows what a beauty it will turn out!
