Hello dear readers. Today I want to tell you a recipe for pickled onions in vinegar. Such a bow is made quickly. And our friend from Simferopol shared the secret of this recipe with us. When we rested in the Crimea, we agreed to meet at their dacha. And Igor, that's his name, is a colleague with whom we served together. And regular readers already know him, we told several recipes that Igor shared with us.

For those who don't know, Igor works as a cook in a restaurant in Simferopol. Yes, in other matters and not only in Simferopol. When the beach season comes, where he just did not work. And when we meet, he shares new interesting recipes with us. And it was he who quickly taught us how to pickle onions.

And what surprised me a little, in the midst of fresh vegetables and a variety of greens, they cook pickled onions for barbecue. Maybe because they cook Crimean onions, white or blue, but already in the fresh season. Such a bow is not as sharp as our usual one. But according to this recipe, I have repeatedly pickled onions, and not only sweet, but also the one that grows in our latitudes, and it turns out quite tasty.

The ingredients are very simple, and everyone in the kitchen has it all. Let's start cooking with onions. Peel and cut the onion into half rings, well, or as you wish. Pour the onion into a bowl and fill with plain water. We had bulbs larger than average, and their total weight was 450 grams.

Now we take a glass of water, pour it into a bowl or jar, where it will be more convenient to mix. Add two tablespoons of sugar and one teaspoon of salt. Mix and add vinegar, the most common 9% table vinegar.

If there are greens, then you can add for beauty and taste. For example, if you add 5-7 grams, then the taste will not be affected. But if parsley, then the taste will change a little. Not by much, but it will change.

Pour out the water in which the onion stood, and add finely chopped greens. We cooked with dill and parsley. Today in the photo we have dill here, and parsley in the first photo. And you can combine greens. The main thing is not much.

Pour the onion with our prepared syrup and leave for 30 - 40 minutes. This is enough time for the onions to marinate. You can leave to marinate in a bowl or in a jar.

After 40 minutes, the onion can be served on the table. It can be served as a separate dish, or under a barbecue. Or even as a salad dressing. We also add it to salads. A good option for vitaminization, especially in spring.

For example, I can eat such a pickled onion a whole plate even without bread. Just like a salad. I wanted to take the final photo with a piece of barbecue, but for some reason the pickled onion did not live up to the barbecue. He disappeared too quickly, and the weather is now failing, it is getting colder. For example, yesterday morning it was below 10 degrees.

But I managed to take a photo of the onion in the salad.

This salad was liked by our household, especially the adult part. The taste of onions blended very harmoniously with fresh cucumbers, lettuce, olives, sweet peppers and tomatoes. We just dressed this salad with olive oil and balsamic vinegar, and now we just added less vinegar.

It's like a variety. We love to experiment with different ingredients, and we get wonderful tasty salads with new additions.

Such a salad of pickled onions should not be made in reserve, it acquires extra sourness (they tried to store it for more than a day in brine). If you really want to save, then without brine. Just place in a tray and refrigerate. So the onion will remain tasty even after two days. We usually eat it right away and don't have to store it for long.

How many wonderful recipes can be prepared using one simple ingredient - pickled onions. Sour, slightly spicy onion rings perfectly set off the taste of salted fish, are used in salads, preservation, and even simply fried in breadcrumbs. Ingredients:

  • onion (large) - 1 pc.;
  • water - 100 ml;
  • vinegar (9%) - 3 tbsp. spoons;
  • sugar - 1 tbsp. spoon;
  • salt - ¼ tbsp. spoons.

Cooking

Dilute sugar and salt in boiling water, add vinegar. We cut the onion into rings and put it in any glass or enamel bowl, pour it with hot vinegar mixture and leave to marinate until the water cools completely (about 1.5 hours). After the time has elapsed, the onion is ready to eat.

Pickled Onions (quick recipe)

If there is only 15-20 minutes left for pickling, then use the following recipe.

Ingredients:

  • onions - 1 pc.;
  • wine vinegar - 2 tbsp. spoons;
  • sugar - to taste.

Cooking

Pre-cut onion rings are poured over with boiling water, and then immediately dipped in cold water. Sugar is dissolved in a small amount of hot water and added to the onion along with vinegar. After 15 minutes, pickled onions can be served at the table. Pickled onions can also be cooked in apple cider vinegar, instead of wine, observing the same proportions.

Onion marinated with lemon

Ingredients:

  • onion - 1 pc.;
  • lemon - ½ pc.;
  • sugar - 50 g.

Cooking

In 0.5 l of water, dilute the juice of half a lemon and sugar, lay the onion cut into rings and bring the mixture to a boil. We wash the finished onion with water and use it in our favorite recipes.

Onion marinated in mustard and balsamic vinegar

Ingredients:

  • sweet onion - 1 pc.;
  • mustard - 1 tbsp. spoon;
  • balsamic vinegar - 1 teaspoon;
  • salt, pepper, marjoram - a pinch each;

Recipe three. Pickled onion with mustard

  1. We clean and cut the onion.
  2. Dissolve in water (4 tablespoons) 2 tsp. sugar, 1 tbsp. vinegar and 1 tsp. dry mustard.
  3. Pour the onion with marinade and leave for 15-20 minutes.

All! Decorate the herring however you like.

    Cut the onion into pieces necessary in shape and size (in different salads - different cuts).

    In half a glass of water, dissolve a tablespoon of sugar and a teaspoon of salt. Put this thing on fire and bring to a boil.

    Remove the brine from the stove and pour in 2 tbsp. vinegar.

    Pour the marinade over the onions and cover with a lid. Wait. When the marinade has cooled, the onion can be used.

How to marinate in vinegar?

Recipe one. Pickled onion with beets

  1. We clean a kilogram of onions. Pour boiling water over it.
  2. Remove the peel from the medium beet and cut it into cubes. We cut the onion into rings.
  3. Layer vegetables in a glass bowl.
  4. We combine wine vinegar with boiled water in a separate bowl in a ratio of 1: 1. Add salt, black pepper flakes (by eye).
  5. Pour vegetables with marinade and send in the cold for a day.

A marinated onion prepared in this way is perfect not only for barbecue, but also for any meat or fish.

Recipe two. Georgian pickled onion

    Dilute table vinegar in boiled water (1:1). Add 2-3 bay leaves, a little cinnamon, a few cloves, salt, sugar, red pepper.

    Pour cold water into a separate container and add salt to it.

    We clean small onions, send them to a deep plate. Fill with boiling water. After three minutes, throw in a colander and refrigerate.

    Put them in salted water for five minutes. Drain the liquid through a colander and put the onion in a jar.

    Fill with marinade (item 1). We send it to the refrigerator for a day.

Recipe three. Speed ​​pickling

  1. We dilute one part of table vinegar in three parts of boiled water. The total volume of liquid is 500 ml.
  2. Add bay leaf, cloves, 1 tsp. sugar, 1 tsp salt, 1 tbsp. vegetable oil.
  3. We put the onion cut into rings in a glass dish, pour the marinade and insist in the cold for an hour and a half.

Recipe one. Classic pickled onions for the winter

    Hold small onions for several minutes in boiling water. Cool quickly and clean.

    Send the onion for five minutes in salted water. Then - in sterile jars.

    Prepare marinade. Pour 4 tablespoons into a liter of water. salt and 2 tbsp. sugar, and then pour in 500 gr. table vinegar. Be sure to add spices: a pinch of hot red pepper, the same amount of cinnamon, four bay leaves, four cloves and two star anise.

    Pour in boiling brine. Cork.

Recipe two. Pickled onion with bell pepper and dill

    Peel a kilogram of small onions and put in an enamel pan.

    Dissolve half a teaspoon of citric acid in a liter of boiled water. Pour this liquid over the onion. Bring to a boil over low heat. Drain the water.

    Sweet pepper (1 pc.) Wash and cut into thin rings. Peel two cloves of garlic. Put the onion in sterile jars, alternating it with pepper and garlic. Top with a layer of chopped dill.

    Prepare the marinade in a separate bowl. In a liter of water, add 1 tbsp together. salt, 4 tbsp. sugar, 6 dried black peppercorns, bay leaf. When it boils, remove from heat and pour in a tablespoon of vinegar.

    Pour hot marinade over vegetables. Seal banks.

Use the pickled onion for salads and as a separate side dish. You can safely add it to vegetable stews, pilafs.
