Note to the hostess: common recommendations “boil squid for three to five minutes” limit the time it takes for the protein to turn into a rigid structure. Indeed, up to 3 minutes of boiling, the clam meat still remains soft. But the volume is decreasing. Therefore, reducing the heat treatment time saves the weight and volume of the delicacy.
