Ingredients: 1 st. semolina, sugar and dairy products, 3 eggs, soda - 1 tsp., 100g butter, 1 stack. flour.

Cooking method

Stir semolina with any fermented milk product of your choice and leave for an hour.

Recipe 3: Mannik on kefir

A simple recipe for manna on kefir. If you have already prepared such a cake with sour cream or milk, be sure to try it with kefir, you will not regret it. It turns out to be light, airy and crumbly. This is a basic pie recipe. You can add fresh berries, dried fruits, chocolate to the dough.

Ingredients: kefir - 1 glass (200ml), a glass of semolina (200g), 3 eggs, butter (grease the form), baking powder - 10g or soda -1/2 teaspoon, a pinch of salt, granulated sugar - 100g, vanilla sugar - 1 sachet.

Cooking method

If you add a bag of vanilla sugar to the mass, the pie will turn from milk into a fragrant one, and if a spoon or two cocoa, then into chocolate. 5. Then add the sifted flour. And if you decide to use not baking soda, but baking powder, then it also needs to be sifted along with flour. Gently mix the flour into the mixture. 6. But in order for the dough to rise well during baking, it is advisable to let it stand for a while. During this time, all the ingredients will disperse better and reveal their full potential.

We need:

  • kefir - 1.5 cups
  • semolina - 2 glasses
  • sugar - 1 glass
  • egg - 3 pieces
  • baking powder for dough - 1 sachet 18 gr
  • lemon zest - 1 teaspoon without a slide

  • butter - for greasing the mold

I will bake in a muffin pan with a diameter of 24 cm.

For decoration, I used ready-made vanilla glaze and chopped nuts. But this is optional.

Preparation:

As you can see, the proportions of the previous recipe are practically preserved. We remember what they are - 4 glasses and 2 eggs. There are 4.5 glasses and 3 eggs. And there is an explanation for this. Semolina swells more than flour, so an extra half glass of kefir and 1 egg are added. If you add less, the dough will not be as thin as needed, and it will be more difficult for the pie to rise.

That is, everything is easy to explain. And so, let's get down to cooking.

1. Break the eggs into a bowl in which it will be convenient to work with a mixer. If there is no such assistant, then you can use a whisk. In this case, it will take a little more time for knocking down, and the result will be the same.

3. Add kefir. I took it out of the refrigerator in advance, however, like the eggs. In this state, kneading will be faster and easier, and the finished dough will turn out to be more fluffy, which will ultimately affect the quality of baking.

4. Add lemon zest. I already have it ready-made, and I just pour it into the mass. But it does not always happen, and in this case you just need to rub the skin of a pure lemon on a fine grater. Only rub one yellow part, the white part is bitter, and is not suitable for desserts.


Instead of lemon zest, you can use orange zest or vanilla sugar. Sugar in this case, you can add a whole bag. Or vanillin on the tip of a knife. Any flavoring additive will have to be in place.

5. Also add a baking powder for the dough. And in this case, one teaspoon, as usual, is not enough. Add the whole bag at once. Semolina is heavier than flour, and baking powder will give it the strength to lift. Add it as well.

6. And for this we will leave it to infuse for 30 minutes. During this time, the cereals will swell, and will not be tough in the finished baked goods.


7. You can bake in any form convenient for baking. It can be a regular silicone mold, but before it was simply baked in a frying pan.

I decided to use a split form, into which a special insert for baking muffins is inserted. Its size is 24 cm in diameter.

The form must be generously greased with butter.

8. Cut a piece of parchment paper and line it on a baking sheet. If the mass flows out, it will not stain it. Place a greased form on a sheet of paper.

Preheat the oven to 180 degrees.

9. Pour the dough into the baking pan evenly and place in the oven to bake for 35 minutes. Do not open the oven door during baking for at least 20 - 25 minutes.


During this time, the dough rises, and if the door is opened, it will fall off. The cake will then turn out to be low and tough.

10. When 35 minutes have passed, open the oven door, take out the cake and pierce it right in the middle with a toothpick. It should be easy to get in and just as easy to get out. At the same time, there should be no dough residues on it. If the dough is caught on a toothpick, then set it for another 5 minutes.

Also, the surface of the cake should not be overcooked. It has a pleasant ruddy look that is pleasing to the eye.


11. Let the cake stand for 5 minutes right in the pan. Then disconnect its clamp and remove the form. And put the pie on a plate.


In principle, in this form, you can immediately eat it, without even waiting for it to cool down. But today I am preparing it for you, dear readers. Therefore, I wanted to decorate it. At least in the simplest way.

12. I had two bags of ready-made vanilla frosting and there were also walnuts. I covered about a handful of nuts with a rolling pin and mixed the icing with milk.

And according to that recipe, I decided to cook a manna with blueberries. But this is not a dogma. You can cook with any berry and any fruit. It turns out very tasty to cook it in this version with apples and cinnamon. You can repeat this by adding chopped apples instead of blueberries. You will get a new taste, and a new dessert!


There is only one recipe, and each time you add a new fruit or berry ingredient, you will get new delicious pastries!

We need:

  • kefir - 1 glass
  • semolina - 1 glass
  • flour - 1 glass
  • sugar - 1 glass
  • egg - 2 pieces
  • baking powder - 1 teaspoon with a slide

  • any frozen or fresh berries (I have blueberries) - 1 glass
  • butter - for lubrication

Preparation:

1. Break eggs into a bowl. Pour in sugar and salt and mix everything with a whisk or mixer. It is desirable that the sugar is completely dissolved, and the mass brightens.

2. Add kefir, stir. Then add baking powder. Beat with a mixer until bubbles appear.


3. It's time to add semolina. Pour it into the mass, stir and let stand for 5 minutes.

4. Then sift the flour directly into the mixing bowl. It is imperative to do this to saturate it with oxygen and to further raise the dough.

Stir again until the lumps disappear. Leave to infuse for 30 minutes.


5. While the dough is infused, prepare the form, namely grease it with butter. You can also put in an oven to preheat. We will need a temperature of 180 degrees.

6. After 30 minutes, stir the present thick mass again with a spoon and add the berries. In summer, it can be any fresh berries or fruits. But it's winter now and I have frozen blueberries. So we will use it as an additive.


I do not defrost it on purpose so as not to stain the dough. If the berry melts, then the dough will acquire a not very pleasant purple color. And I want it to have a familiar look. Therefore, I pour the berries directly from the freezer. Then mix the dough and immediately pour into the mold.


7. And without hesitation, put in a preheated oven. Within 20 minutes, the dough will have time to rise and at the same time will not have time to color. And only by that time the berries will finally warm up, but they will have nowhere to burst. Therefore, they will remain intact, and as if they had just been brought from the forest.

In the remaining 15 minutes of baking, they will warm up, and the cake will have a common flavor component. This means that the total baking time is 35 minutes. Well maybe 40.

8. After this time, take out the cake and taste its readiness with a toothpick, piercing it in the thickest place, that is, in the center. If we took out a toothpick, and there is no batter left on it, then our pie is ready. You can get it completely.


9. Let it stand for 5 - 7 minutes. Then turn it over onto a cutting board, and then turn it over again on a plate.

You can decorate it to your liking, or you can serve it just like that. In my opinion, he is already handsome.

  • kefir - 1 glass
  • cream - 1 glass
  • semolina - 1 glass
  • flour - 1 cup
  • sugar - 1 glass
  • egg - 2 pieces
  • butter - 50 gr
  • vanilla sugar - 0.5 - 1 sachet
  • baking powder for dough - 1 tsp
  • salt - 0.5 tsp

For decoration, we need 3 - 4 tablespoons of powdered sugar.

Preparation:

1. Sift flour into a bowl. Add salt and baking powder to it. Both can also be sieved if desired. Pour the prepared cereals here and mix. That is, we mixed all the bulk components in one bowl.

2. Pour kefir here. It is better to get it out of the refrigerator in advance so that it is not too cold. Room temperature will be ideal for him. Set aside the resulting mixture and proceed to the next cooking stage.


Mix the mass. It will turn out to be thick and viscous, with a rather uneven structure. But for now, let's leave it as it is.


3. Break eggs into a separate bowl. It is also best to get them out of the refrigerator in advance.


Add regular and vanilla sugar to them. You can simply add a pinch of vanillin instead of vanilla sugar. In this case, the finished cake will be less sweet.


Although, if you are sweet, then you can add a whole bag. The baked goods will be sweeter and more flavorful.

4. To prevent sugar from scattering all over the table, first stir the mass with a spoon or spatula, and then connect a mixer or whisk to work. We want a smooth, sweet egg mixture that turns white from beating and dissolves all the sugar crystals in it.

5. Add it to the mixture, which was set aside for a while.


Mix both masses with a mixer until a homogeneous, even and sufficiently fluffy mixture without lumps is obtained.


6. Add melted butter and stir again. This time, until it is completely driven into the mixture, no oily circles should remain.


Leave about a teaspoon of oil to grease the mold.

7. The resulting test must be given time to infuse. It will be enough for him to stand for 15 - 20 minutes. During this time, the cereal will swell, the same will happen with flour. The dough will become more homogeneous and pliable and bake better.


8. Grease the pan with the remaining butter and pour the dough into it.

9. Put the mold in an oven preheated to 180 degrees and bake until tender. This will take about 40 minutes, depending on the properties of the oven. It took me just that long.

After this time has elapsed, take out the cake and check it with a toothpick to see if it is ready. If you pierce it in the center and the toothpick stays dry, then it's time to get it completely.


10. But we still have cream, and we have not forgotten about them. It was their turn too. They need to be poured directly on top of the brownish crust of the pie. But as we can see, the liquid is not retained. It is immediately absorbed and soon not a single drop remains on the surface.


11. After this "alchemical" procedure, let the cake stand for 10 minutes and rest right in the mold. Then we turn it over onto a wooden board.


We remove the form and turn it over on a large flat plate, give the opportunity to cool down a little more.


As you can see in the photo, the cake turned out to be very lush and beautiful. I already want to try it as soon as possible.

12. But I also wanted to decorate it in order to serve it for evening tea in all its glory. And as a decoration I prepared powdered sugar. Therefore, I just sprinkle it on a slightly cooled surface and go to put the kettle on. It's time to brew tea and invite your family to an evening tea party.

1. Pour kefir into a bowl convenient for kneading dough. You can take it of any fat content. I didn't have enough yogurt today, and I added about half a glass of sour cream. To make a total of two 250 gram glasses.

Consider this, you can add a little fermented milk, drinking yogurt, sour cream, and even milk. But in the latter case, you will need to add a little semolina to achieve the desired dough consistency.

2. Pour cereals into a bowl. It can be measured with glasses of the same volume as kefir was measured. Mix the mixture until smooth. You can just stir with a spoon.


We don't have any eggs, so we don't need to shoot anything down. You can just do it with a spoon.

Leave the mass to infuse for 30 minutes. The groats should swell. In this case, it will not be felt, and it will be easier for the dough to rise.

  • cottage cheese - 250 gr
  • egg - 2 pieces
  • sugar - 80 gr

Preparation:

1. We will knead the dough in a bowl that is deep and convenient for this purpose. Break eggs into it.


2. Add granulated sugar. Beat with a mixer. The mass should slightly increase in volume, turn white, and all sugar crystals should dissolve. To do this, the mass must be knocked down for at least 3 minutes.


3. Pour in kefir and mix again. Then add soft butter. In order for it to become soft, it must be removed from the refrigerator in advance. Mix again with a mixer until smooth.

4. Add flour, baking powder and flour sifted through a sieve. Do not be lazy, and be sure to ask for it. This will make the cake rise better.

Mix the mass well with a mixer and let stand for 20 minutes so that all the ingredients are dispersed and the semolina swells.


5. Prepare the filling. To do this, put all the ingredients intended for it in a separate bowl and rub until smooth with a hand blender.
