An excellent product is semolina. From it you can cook porridge and bake a delicious cake. It can only be said with confidence that there will be much fewer lovers of semolina porridge than fans of pastries. Mannik on kefir has proven itself well, it turns out to be lush and moderately moist, and the variability of recipes helps the culinary fantasies to fully roam.

The classic recipe for manna on kefir, as well as on milk, fermented baked milk, yogurt, jam or tea, involves the exclusion of flour from its composition or its use in a minimal amount. The kefir recipe below is convenient in that all the main products for it can be measured with a 200 ml faceted glass. It is its volume that corresponds to the amount of kefir, sugar and cereals.

What is included in the test:

  • 180 g of sugar;
  • 160 g of semolina;
  • 200 ml of kefir;
  • 2 eggs;
  • 3 g salt;
  • 3 g of soda;
  • dried fruits (raisins, dried apricots, dried cherries, etc.) to taste.

Recipe step by step:

  1. Combine sugar, cereals and salt in one container and mix with a whisk. In another bowl, also mix kefir, eggs and soda with a whisk.
  2. Combine both mixtures together, add washed dried fruits and leave for the process of swelling of cereals and the neutralization of soda for at least thirty minutes. In the process of preparing a semolina pie, the stage of swelling of the cereal is mandatory; without it, the pastry will come out dry and tough. In order for the grains to be saturated with moisture as much and quickly as possible, kefir or other liquid must be warm or at least at room temperature.
  3. The prepared dough is baked in a form with oiled walls and bottom at 170-190 degrees, depending on the characteristics of the oven, for approximately 40-45 minutes.

Before you cook mannik on yogurt, semolina should be left to swell so that it becomes tender and soft, and does not crunch on your teeth when eating a dish. In order for the cereal to swell, it is enough to pour it with warm yogurt and leave for 30-40 minutes. As soon as the semolina has absorbed all the moisture, add white eggs beaten with sugar to it and mix.

Melt the butter, cool slightly and add to the semolina base along with lemon juice after the eggs. Sift the flour with baking powder and add to the dough last. Knead the dough until smooth, and then pour it into a baking dish greased with oil. We put the mannik in the oven preheated to 180 degrees and cook for 30 minutes.

The finished cake can be decorated to your own taste with fruits, honey, syrup, melted chocolate or jam.

Recipe for chocolate manna on yogurt

Ingredients:

  • semolina - 1 tbsp.;
  • curdled milk - 1 1/2 tbsp.;
  • cocoa powder - 3 tbsp. spoons;
  • nuts - 1 handful;
  • sugar - 1 tbsp.;
  • vegetable oil - 100 ml;
  • flour - 100 g;
  • baking powder - 1 1/2 tsp.

Cooking

Pour semolina with warm yogurt and leave for 1 hour. After the time has passed, add vegetable oil and sugar to the mixture. Mix everything thoroughly until the sugar crystals are completely dissolved. Add cocoa powder to the manna and mix it, making sure that no lumps form. Lastly, add flour sifted with baking powder and chopped nuts into the dough.

Pour the dough into a form covered with parchment paper and put in an oven preheated to 180 degrees for 40 minutes. After the time has elapsed, let the manna cool for 15 minutes and serve to the table, sprinkled with powdered sugar.

If you want to make the cake more juicy, then soak it while it is still hot. One of the options for syrup for chocolate manna can be a mixture of Baileys liquor with cream in equal proportions. About 4-5 tablespoons of this impregnation is enough to make your dish even more unforgettable.

Take a saucepan or a deep bowl, pour semolina with sugar into it, break the eggs and pour kefir.

Stir the food thoroughly with a spoon, making sure that there are no lumps.

Cover the pan with a lid and leave for 2-3 hours for the semolina to swell. If time permits, you can mix the products in the evening and leave the mixture to stand in a saucepan until the morning - then the cake will turn out to be especially magnificent and tasty.
Then add a glass of flour to the pan, pour in the melted butter and add a little soda, having previously “quenched” it with vinegar.

Mix the contents of the pot well with a spoon. The consistency of your dough should be like thick sour cream.

Take a baking dish, grease it lightly with oil. If your form is made of silicone, you can immediately put the dough into it, without first lubricating it. It is better to sprinkle metal baking dishes with grated breadcrumbs or a small amount of semolina.

Bake the cake for 45 minutes in an oven preheated to 180 degrees. Put the finished mannik on a dish, if desired, decorate it with powdered sugar on top.
