Diabetics allowed pancake filling options

Any permitted fruit can be used as a sweet filling. For example, apples. They must be peeled from the skin and cores, cut into small pieces. Then transfer to a saucepan and add about 25 g of butter substitute. Simmer fruit until tender, then place on pancakes and wrap.

And you can prepare a similar fruit and berry filling. All products must be grated or mashed, then mixed and sweetener added to taste. It can be stewed, or you can serve it as a fresh filling.

To prepare the vegetable filling, you will need fresh cabbage, onions, herbs, eggplant. Finely chop the cabbage and send to stew. Finely chop the onion along with the herbs. The eggplant soaked in salted water should be cut into cubes. Add these three ingredients to the cabbage and simmer until cooked, after which you can immediately distribute over the pancakes.

You can add a little sugar substitute or fructose to the curd. A product with a low percentage of fat is required. Serve immediately, or you can add nuts, berries or fruits.

From meat, beef or poultry should be preferred. A piece of meat should be washed and cut into small pieces, sent to the pan to stew. Add finely chopped greens and onions and stir. You can lightly season with salt and simmer until completely cooked.

You just need to boil lean fish, then add a little salt and a couple of drops of lemon juice. Disassemble into small fibers with your hands, pull out all the bones, serve with pancakes.

It is not worth cooking purely nut filling, it is too high in calories. It is better to dilute it with permitted berries and fruits. To make the mass homogeneous, you can chop the fruit part in puree, and grind the nuts in a blender or meat grinder.

Serve with low-percentage yogurt, caviar, herbs, lemon juice. It is important to eat no more than three pancakes at a time, it is better to start eating in several stages. It is advisable to calculate the total calories of the pancakes and toppings before eating.

For the splendor of pancakes, you can use several methods at once. Someone adds soda, someone - yeast, someone cooks on mineral highly carbonated water, and someone pours in vodka. There is another option. It consists in fluffy whipped proteins.

A tough protein foam should be introduced at the very end when kneading the dough, when all the ingredients are already mixed. Using a spoon, not a whisk, stir in the foam and start baking immediately. In this way, the pancakes are thin, airy.

Also, when cooking, you can use not only ordinary sunflower oil. It is enough to take a piece of unsalted bacon and chop it on a fork. Before pouring the pancake into the pan, you need to grease it with this piece, on the sides too. Then the pancakes will not have dry crispy edges.

In addition, you can use different types of oils: olive, peanut, hemp, pumpkin, mustard, corn. Coconut oil can be used by diabetics. But it is not advised to cook in sesame oil, since it is not intended for high temperatures.

In order for rye flour pancakes to turn out the first time, it is very important to heat the pan well. It must be very hot, so you need to put it on high heat in advance, at least for five minutes.

All ingredients for the dough should be at the same room temperature, unless nuances are provided in the recipe itself. That is, eggs, butter, even flour should be at room temperature. You can just take out the ingredients on the table in advance, and start cooking in half an hour.

Rye pancakes are tasty, unusual and healthy. This type of flour is sold in many stores and at an affordable price, and therefore there will be no problems finding the main product. But the whole family will enjoy it!

Pancakes are such a delicacy that each housewife turns out in her own way. Despite the fact that the recipes indicate how much yeast, which milk or kefir and so on, the taste is sometimes completely different.

But in most cases, if you take the ingredients, wheat flour is used for the dough.

I suggest baking rye pancakes. How do they differ from traditional ones, except for color?

They have a sweeter taste, they are more delicate with a beautiful golden crust. Let's try.

Pancakes with rye flour and yeast

This recipe involves kneading dough in milk. Only rye flour is taken, not a mixture. In principle, the technology is slightly different from pancakes with ordinary flour, but the taste of such pancakes is really different.

In order to prepare such pancakes, you need to take the following set of products:

rye flour - 500 g; 1/2 l of milk; 50 ml of sunflower oil; 4 eggs; 50 g granulated sugar; yeast.

  1. In 0.4 liters of milk warmed up to a warm state, I dissolve yeast with granulated sugar. I add a little.
  2. I add flour sifted in advance in small portions and knead until smooth.
  3. Leave the dough to stand for 20 minutes.
  4. I break the eggs and separate the yolks. Beat with sunflower oil.
  5. I add this yolk mass to the remaining milk, also warmed to a warm state. I leave the resulting mass for 30 minutes.
  6. Beat the egg whites until fluffy with a mixer. I add to the dough, kneaded first. Gently shift the protein mass with a spatula and interfere with movements from bottom to top.
  7. I add the mixture with yolks and mix thoroughly until smooth.
  8. I fry pancakes made from rye flour in milk in the usual way in a hot and pre-greased frying pan.

The taste of these pancakes is quite independent and does not require additional fillings. When serving, you can serve such appetizing rye pancakes with honey, jam or jam.

Pancakes on rye flour without yeast

A faster, but no less delicious way of making pancakes with two types of flour allows you to bake beautiful, fluffy and very tender pancakes. And with the addition of cocoa, they can be turned into a chocolate treat.

In order to prepare such pancakes from rye flour and wheat, you need to take the following set of products:

1 glass of milk; 0.5 cups each rye and wheat flour; egg; cocoa - 75 g; 0.5 tsp baking soda; 2 tbsp honey.

  1. I mix and sift both types of flour.
  2. I pour in cocoa, add it.
  3. In a separate container, I split the egg, add milk at room temperature and honey. Beat until smooth. I add slaked soda.
  4. I mix both masses and knead a homogeneous dough. It should turn out thick, like homemade sour cream.
  5. After 10 minutes, you can start frying appetizing rye pancakes. I do this in a hot and greased frying pan.

Pancakes made from rye flour without yeast are an excellent delicacy that can be made in literally half an hour. And kids will be delighted with their brown color and chocolate flavor.

Unleavened pancakes with milk: the second recipe

This is an easier traditional way of baking pancakes with a mixture of two types of flour. Only flour is taken in slightly different proportions.

In order to bake such pancakes, you need to take the following set of products:

2 glasses of milk; 2 eggs; rye flour - 0.2 kg; wheat flour - 2 tbsp. spoons; sunflower oil.

The cooking option is as follows:

  1. I mix flour with each other and sift. I add it.
  2. I crack the eggs into the milk slightly warmed to room temperature.
  3. I add flour in small portions and stir until smooth. The dough should be thin.
  4. I fry quick rye pancakes in the usual way in a hot and slightly greased frying pan. Pancakes are tender and ruddy.

They can be served hot or chilled with tea or juices. Fresh berries, sour cream, condensed milk or jam will emphasize the unusual taste of these pancakes.

I want to note that this recipe for pancakes made from rye flour in milk is the fastest and easiest. Even a novice hostess can master it.

And if you make this dish with your children, then you get a real family holiday and a good time together.

Pancakes with milk-kefir mixture

An unusual combination of products can turn ordinary pancakes into a real culinary masterpiece. This dish is prepared as quickly as in the previous recipe.

So you can master the baking of these pancakes from these two recipes.

In order to bake such pancakes on a mixture of milk and kefir, you need to take the following set of products:

180 ml of kefir; 70 ml of milk; 3 eggs; rye flour - 125 g; wheat flour - 3 tablespoons; 75 g granulated sugar.

The cooking method is as follows:

  1. I mix milk and kefir in one container. Both liquids should be at room temperature.
  2. Cracking eggs, removing one protein. Add to the milk-kefir mixture and beat.
  3. I sift two types of flour. I add and add granulated sugar.
  4. I add flour in small portions and knead the dough until smooth.
  5. I fry rye milk-kefir pancakes in the usual way in a hot and greased frying pan. I recommend adding oil to the pan after each pancake.

Products made from it are stored much longer, but rye flour contains a small amount of gluten, therefore, the dough from it does not have much elasticity. To preserve all the beneficial trace elements, rye flour should be provided with the right conditions and temperature.

Rye flour can be of 3 types, namely: seeded, wallpaper and peeled. Depending on the type, it can be of different colors. Fewer bran particles are lighter in color.

There are different recipes for preparing this delicacy: with kefir, with the addition of yeast, with milk, with water.

Rye pancakes with milk

To cook rye pancakes in milk, you will need:

  • rye flour - 2 tbsp.;
  • milk - 500 ml;
  • butter or vegetable oil - 2 tbsp. l .;
  • chicken egg - 4 pcs.;
  • yeast - 0.5 bag;
  • sugar - 2 tbsp. l .;
  • salt - 0.5 tsp.

First you need to warm up 400 g of milk, then add sugar, salt, yeast to it. Better to use fast acting yeast. Then gradually add all the flour to the milk, stirring constantly, after which the mass must be left for 20 minutes.

Following the recipe, the rest of the milk must also be reheated. After that, you need to separate the whites from the yolks. The yolks must be combined with vegetable oil and introduced into the milk, stirring constantly until smooth. The resulting mixture should be infused for half an hour. Whisk the whites until they are foamy and add to the first portion of the dough.

After that, all the components must be combined, mixed thoroughly and fried in a well-heated pan - pancake or cast iron. Turn the pancakes over when golden brown. You can serve this delicacy with any desired filling - sour cream, jam, honey, jam.

There is an excellent recipe with which you can make delicious Borodinsky pancakes (dietary without sugar) on kefir. Cooking them is very simple, any housewife can handle it.

To prepare them you will need:

  • soda - 0.5 tsp;
  • vegetable oil - 1 tbsp. l .;
  • caraway seeds (seeds) - 1 tsp;
  • coriander (whole grain) - 1 tsp

First you need to beat the eggs, then add salt and kefir to them. The pancakes contain spices - coriander and aromatic cumin, which should be pre-calcined in a frying pan. This will allow their scent to unfold better. Add flour to a mixture of eggs, kefir and salt and set the dough aside for 30 minutes.

If the dough is too thick, you can dilute the mixture by adding boiled water. Next, a baking powder is added - soda, slaked with vinegar. It is necessary to cook pancakes in a preheated special frying pan. To prevent them from burning, you need to try not to overexpose them for more than 20-25 seconds.

Another rye pancakes on kefir

Another recipe for rye pancakes with kefir. They are porous, soft and delicious!

In order to prepare them, you need:

  • 1 tbsp. rye flour and the same amount of wheat flour;

In consistency, the mixture prepared with kefir should resemble pancake dough. After that, you need to pour vodka into the dough (when baking, it will become more porous).

Continuing to whisk the mixture, pour boiling water into it. Correctly kneaded dough should drain from the ladle in a thick stream. Finally, add sunflower oil and mix again. Grease the pan with oil, heat it - and you can bake pancakes. This should be done over high heat, then the dough will quickly rise and become covered with bubbles. As soon as the bubbles start to burst, the pancake can be turned over.

  • egg yolks - 4 pcs.;
  • milk - 250 ml;
  • steep boiling water - 0.5 tbsp.;
  • sugar - 2 tbsp. l .;

The consistency of the finished dough should resemble sour cream. At the end of the batch, you need to add sunflower oil, a glass of boiling water, after which you can immediately proceed to frying.

It is necessary to fry custard pancakes in a well-heated frying pan, which must be greased in advance. You should put on medium heat. It is better that the pancakes are the size of small pancakes, so it is more convenient to turn them over.

This delicacy can be served with a wide variety of fillings, or can be stacked, smeared with a beaten raw egg and sent to the oven to make a crepe maker.
