  6. We knead the risen dough with our hands a little and form a sausage from it, and then divide it into six equal parts.

  7. We take one piece of dough, make a cake out of it with our hands, and then roll it into a round layer 5 mm thick.

  8. Lubricate the surface of the cake abundantly with softened butter.

  9. Roll out the second piece of dough and put it on top of the oiled cake, after which we also grease its surface with oil.

  10. We do the same action with the remaining cakes, laying them one on top of the other and greasing them with oil. However, do not oil the surface of the last cake!

  • red currant - 75 grams;
  • sugar - 1-2 tbsp. spoons;
  • starch - 1 tbsp. spoon;
  • puff pastry (ready-made) - 150 grams;
  • icing sugar - to taste;
  • vegetable oil (refined) - for lubricating the mold;
  • premium wheat flour - for sprinkling the table.

Sprinkle the finished puff pastry with premium wheat flour and put on the table. I take good quality dough that is sold in any store.

  2. Heat the milk in a water bath, add 1 tablespoon to it. sugar and pour in the yeast in a trickle, while stirring the liquid. Allow them to separate, cover the container and leave on a warm burner. Approximate time for dough is 15-20 minutes. It is important here that the yeast and milk are fresh, otherwise the dough will not rise afterwards.
  3. In a separate bowl, beat eggs and salt, gradually add the diced butter (150 g) and flour. Using a mixer at medium speed, bring the dough to a homogeneous consistency, then carefully, with teaspoons, add the dough into it, continuing to beat, but already at low speed. As soon as all the ingredients are dispersed, leave the dough aside, cover with a towel and forget about it for 1.5-2 hours, during which the container should be warm.
  4. Now comes the lamination stage: you need to remove the dough from the bowl and break it into 3 equal parts. Do the same with the remaining (100 g) butter. A ball of dough needs to be rolled out into a cake, the thickness of which will be 1 cm, a piece of butter should be cut into thin layers (about 5-7 mm).
  5. 2/3 of the flat cake must be paved with oil, then bend the free part to the center, covering exactly 1/3 of the entire space. Then cover it with the rest: you should get a rectangle 1/3 of the width of the former cake.

  6. Walk along it with a rolling pin, returning to the same dimensions as you were: i.e. to a thickness of 1 cm. Wrap the resulting layer with foil, hold it in the freezer for 20-25 minutes, and then fold it in three again and roll it out. Put it back in the freezer and roll it out again. Repeat the freezing and rolling procedure up to 5 times. The same is done for the remaining pieces of dough and butter.
  7. Lay the layer that will go into work on a board sprinkled with flour and roll it out, reducing its thickness by 2 times. Cut it into several triangles, make a 0.5 cm incision at the base of each (clearly in the center), then twist it with a crescent moon and send it to a hot (200 degrees) oven until a golden brown crust appears. During this time (about 40 minutes), the oven door must not be opened.
  8. If you decide to cook bagels from unleavened puff pastry, the proving stage is omitted, the set of ingredients will be different, but the lamination stage will be identical to the one given above. At the same time, professionals remind that you need to roll out such layers only in one direction: usually it is done along.

Step by step recipe

  1. Pour 500 ml of water into a bowl.
  2. Add 0.5 tsp. salt and 3/4 tsp. vinegar. Stir.

  3. Now add 4 cups of sifted flour and knead the dough.

  4. Pour 0.5 cups of flour onto a work surface and place the dough on top of it. Knead the dough until it stops sticking to your hands. The dough should absorb these 0.5 cups of flour and be soft enough.

  5. Cover the dough with a bowl and set aside for a while.


    Knead it occasionally to make it more elastic.
  6. Knead a bun out of dough, press it down a little and cut in four places. It looks like a clover leaf in shape.

  7. Pull back the edges and roll them out with a rolling pin. Then roll out the middle as well. You will get an "envelope" for butter.
  8. Put 500 g of butter in the center of the envelope. Spread it evenly throughout the middle of the dough.
  9. Gently fold the edges of the dough to form a square. The butter should be completely hidden by the dough. Otherwise, some of the oil will be squeezed out during rolling.
  10. Knead the dough with your hands to form a rectangle. Now roll it out with a rolling pin.
  11. Fold the dough four times and refrigerate for 30 minutes.
  12. After half an hour, take out the dough and gently roll it out to its original size.
  13. Fold the dough again by folding it 4 times. Put it in the refrigerator for 20 minutes.
  14. Roll out again, fold 4 times and refrigerate for 10 minutes.
  15. Roll out the dough quite thinly, about 2-3 mm thick. Now you can cook from it.
  16. Cut the rolled dough into small triangles.
  17. Place a spoonful of jam on the wide side of the triangle.


    Wrap it in a roll, starting at the widest part.

  18. Dip the bagel in sugar and place on a baking sheet.


    It can be covered with parchment paper or greased with oil.
  19. Bake at 220 degrees until golden brown.
