So, to make delicious dogwood jam with seeds, you need 0.6 kg of berries, 0.7 kg of sugar and 200 ml of water.

Preparation:

  1. Dogwood berries need to be sorted out, green stalks removed, then rinsed well.
  2. Pour granulated sugar into a saucepan of a suitable size (preferably with a thick bottom), pour water, put on fire, stirring the contents. After boiling, boil the syrup for 5 minutes.
  3. Place the dogwood in the prepared syrup, remove the pan from the heat and leave to cool for about 12 hours.
  4. The next day, put this container on the fire again, wait until it boils. Then boil the berries in syrup over low heat, skimming off the foam and be sure to stir the jam so that it does not burn. Cook for about half an hour, until the fruits are tender.
  5. Pour hot jam into prepared jars, roll up the lids and wrap with something warm until it cools completely.

But jam with seeds, although they contain useful substances, is not loved by everyone. If desired, they can be quickly and easily removed from the berries.

Advice. To make the seeds easier to separate from the fruit, the dogwood can be kept for some time in a water bath.

The recipe for making dried dogwood is not as complicated as some housewives think. Berries harvested for the winter in this way are well stored. They taste good and look elegant. Whole and undamaged fruits need to be sorted out, washed, freed from the stone. Then fill them with granulated sugar and hold in this state for about a day.

After this time, the sugar syrup that has formed must be drained, and the berries themselves must be put on a baking sheet and placed in the oven. Hold them at a temperature of about 80-90 degrees for 15 minutes, then remove and leave to cool. Then repeat this procedure 2 more times.

Ingredients: dogwood - 1 kg, water - 200 ml, sugar - 1 kg.

Sort the dogwood berries, rinse and cover with water, leave for two hours. This procedure will keep the berries intact when cooked. While the berries are wet, boil the syrup from water and sugar. Put the dogwood in a slow cooker, pour over the cooled syrup.

In the multicooker select the "Jam" or "Stew" mode and cook in this mode for about an hour. Later, switch to "Warm Up" and leave for thirty minutes. The final stage: put the device back into the "Extinguishing" mode, hold it for fifteen minutes and turn it off. Dogwood jam, put in jars, will thicken to a jelly when it cools.

  1. Select ripe dogwood berries, wash and dry. The seeds must be removed from the berries.
  2. Mash half of the berries into gruel, leave the other whole.
  3. Combine all ingredients except honey and bring to a boil over medium heat.
  4. When the mixture boils, put the heat to a minimum and, stirring constantly, pour in the honey.
  5. When the mixture is more homogeneous, remove from heat and let cool.
  6. After five to six hours, boil a second time for five minutes, let cool.
  7. After the third boil, let cool and put in jars.

Ingredients: dogwood - 5 kg, sugar - 2.5 kg, water - 2 liters. Substandard dogwood is suitable for marmalade. Wash the berries, remove the seeds and cook until the berries creep. Drain the water from the berries, it can be used to make jelly.

Grind the boiled mass into a gruel, add sugar and cook, stirring constantly, until thick. The marmalade is spread on a dish moistened with cold water and left to dry, having previously been cut into the desired pieces. You need to store marmalade in glassware or boxes with tight lids.

Cornelian compote

Ingredients:

  • Water - 1.5 l
  • Cornel - 300 g
  • Freshly squeezed orange and grapefruit juice - 0.5 cups each
  • Zest of half a lemon and half an orange
  • Liquid honey - 2 tbsp. l.
  • Tarhun - 2-3 g
  • Ginger - 20 g

Boil water and pour into boiling dogwood berries, boil for half an hour. Then cool and add squeezed citrus juice and zest. Boil the mixture, add chopped ginger and honey. Let cool and brew while the compote cools down, add tarragon. This drink helps with colds, and hot cornelian compote warms up well.

Dogwood syrup

Cornel can be harvested not only as jam: this recipe can also be used for storage for the winter. Ingredients: dogwood - 3 kg, sugar - 2 kg, water - 200 ml.

Overripe berries are washed, pitted and kneaded into gruel. The berries are boiled without boiling. Then filter and squeeze. Sugar and water are added to the juice, boiled until thick. The syrup is ready when a drop of it does not spread over the surface of the saucer or plate. The finished syrup is filtered through sterile clean gauze (you can boil it) and poured into prepared containers. The jars are rolled up with a lid, and the bottles are closed with a boiled cork and filled with hot paraffin.

The spicy and aromatic cornelian cherry sauce from Georgian cuisine goes well with meat, poultry and fish dishes, cold and hot appetizers.

  • Water - 150 ml
  • cilantro seeds - 1 tsp.
  • garlic - 2-3 cloves
  • hops-suneli - 1 tsp.

Grate well ripe dogwood through a sieve or in a blender, add boiled water and other chopped ingredients. Stir the composition thoroughly, add spices to taste.

Cool the dogwood slightly so as not to burn yourself and pass the berries through a sieve. Use a pusher so that the pulp also crawls through, and you have only bones in the sieve.

Add sugar to the obtained dogwood puree, stir and put the pan on gas again.

Now you need to boil the jam to the desired thickness.

Cornel jam is cooked quickly and from a kilogram of berries the jam will be ready in 30 minutes.
The hot jam should be distributed in clean, dry jars and rolled up with lids.

Turn the cans over and wrap until they cool completely.
