  • natural fruit vinegar - 1 teaspoon (can be substituted with wine, sherry or cider);

For the marinade:

  • Aleppo pepper - from ¼ to ½ teaspoon (or chili powder to taste);
  • fresh carrots - 1 kg;
  • finely chopped fresh dill - 3 tablespoons (or chopped fresh mint leaves - 2 tablespoons);
  • freshly squeezed lemon juice - 1 tablespoon.

For the sauce:

  • natural yogurt - 3 cups;
  • freshly squeezed juice from a whole lemon;
  • mashed 1 clove of garlic;
  • 1/3 cup olive oil

Pour dried apricots with half a glass of boiling water. After 5-10 minutes, when it becomes soft, remove from the water, dry and cut into small cubes. Using kitchen appliances or by hand chop the garlic and walnuts, put in a bowl, place the cilantro and dried apricots there, stir well. Pour in 1/4 cup olive oil, vinegar, salt, pepper and use a blender to turn into a paste. If it comes out too thick, dilute it with water from soaking the apricots. The paste should be easy to apply to the pita bread.

Peel the carrots and blanch in boiling water for 5 minutes, no longer. Cool slightly and cut into very thin and long strips, as for Korean carrots. Recipe 12: Filling for Chicken lavash roll

Another option for a very satisfying filling, which requires chicken breast and something else.

Ingredients

One breast;

Bulgarian pepper;

180 grams of mayonnaise;

Fresh dill;

Green lettuce leaves;

A handful of walnuts;

A clove of garlic.

Preparation

1. Fill the breast with water, cook until tender, then remove from the broth, cool and chop finely.

2. Put walnuts, peeled garlic in a blender, add mayonnaise and beat everything until smooth.

3. Spread pita bread, spread lettuce leaves over all areas.

4. Mix the resulting sauce with the chicken breast and spread over the lettuce leaves.

5. Finely chop the Bulgarian pepper and dill, mix and sprinkle with the last layer.

6. Twist the roll, cool for an hour, then cut.

So that the pita bread does not become too limp, and the products hold better, before applying the filling, it can be greased with soft cheese or ordinary butter.

To cut the roll into neat pieces, you need to hold it in the refrigerator for half an hour. The filling will adhere to the sheets, the roll will be more elastic.

Most lavash fillings contain mayonnaise that is harmful to the figure. But it can be fixed! Use garlic sour cream sauce instead. Or just add a little lemon juice, salt and a spoonful of mustard to the sour cream. And the healthy dressing is ready!

To make a festive snack out of a regular roll, cut into pieces at a 45-degree angle and place on a platter with lettuce leaves. As a decoration, you can use olives, red caviar, any greens and vegetables. The choice depends on the composition of the roll.

If the lavash is damaged, has holes or breaks, it's okay. Just start rolling the roll from the defective side so that the base surface remains intact. Nothing will be visible in the finished snack.
