Its density is provided by the oil in the composition and, despite the fat content of the cream, its taste is simply delicious.

  • 230 g butter;
  • 2 gr. icing sugar;
  • 1/3 gr. cocoa powder;
  • 170 g;
  • 1/4 gr. cream 35% fat;
  • 1 tsp vanilla extract;
  • 1 chips. salt.

Remove the butter from the refrigerator and keep at room temperature for a couple of hours. Thoroughly, in two approaches, sift the powdered sugar and cocoa.

Beat the soft butter with a mixer on medium speed for about 2 minutes. Add the icing sugar to the butter and beat for another 2 minutes. Now add the cocoa and beat again (4 minutes) until the cream is evenly smooth.

Melt the chocolate, add it, the vanilla extract and the salt to the cream, and slowly stir at the minimum speed of the mixer. After the chocolate is evenly distributed, gradually add the cream to the chocolate mixture, continuing to stir until the desired airiness, and gradually increasing the number of revolutions of the mixer.

The finished cream is enough for 24 small cupcakes.

  10. We put our dough in baking dishes.

  11. For one cupcake, about one tablespoon of dough is enough. Be guided by the fact that the form should be completed no more than three-quarters. After all, the dough will still rise, and if there is too much of it, then it simply flows out of the molds and the cupcakes will no longer turn out as beautiful and neat as we would like.

  12. We put the molds with the dough in the oven for 20 minutes and bake at 170 degrees. After this time has elapsed, check that the baking is done using wooden stick... Pierce the cupcake with it. If the baking is ready, then you will get a dry stick. If there is sticky dough on the skewer, then put the cupcakes in the oven to bake for a few more minutes.
  13. We take out the finished cupcakes from the oven, let them cool for a couple of minutes, and then take them out on a wire rack or other surface and leave them to cool completely.

Watch your oven. If the tops of your cupcakes are cracked during baking, lower the baking temperature slightly next time.

  6. Next, we begin to add butter to the proteins. Make sure that the butter is at the same temperature as the proteins themselves. This is necessary so that our cream does not go into lumps and does not exfoliate. Add oil in small portions, literally a teaspoon each. Before adding the next portion, the previous one must fully combine with the cream.

  7. When finished, we introduce vanilla extract into the mixture, or any other flavoring agent. For example, you can add liqueur.

  8. Whisk the cream thoroughly. At the finish, we should get a fluffy, tender, but at the same time quite dense consistency. The cream is ready! If you wish, you can color all or part of the cream with any gel dye to make your cupcakes even more beautiful and add original notes.

  9. We put the cream in a pastry bag, since it will be more convenient to decorate our cupcakes with a special nozzle. I usually use the open star attachment.

We put the resulting essence in the refrigerator and cool until the mass grasps so that it can hold its shape. The presence of honey and chocolate gives a sufficient viscosity and density, so that it is very convenient to decorate.

How to make sour cream cupcake cream

Sour cream is a product that is almost always in the house. And the result is very healthy, gentle and pleasant. Due to the simplicity of all the components, you can start cooking at any time, without even leaving your home to the store.

We will need:

  • Sour cream (it is better to take with 20% fat content) - 360 g;
  • Oil - 130 g;
  • Flour - 3 spoons;
  • Vanilla extract;
  • Sugar - 110g;
  • Egg.

For this option, I use completely melted butter, I take it out of the refrigerator for this a couple of hours before cooking.

We will cook on a steam bath. Therefore, you will need two pots or bowls, both heat-resistant, one for the water and one for the ingredients. Match them to each other in size so that one fits inside the other. In our first container, the liquid will boil. We collect water, but do not fill it completely, so that the container placed on top does not "sink". We put on fire and, while the water is boiling, we proceed to mixing the ingredients.

In a separate container, mix one chicken egg with sour cream. I take 20%, but it doesn't really matter. This only affects the fat content of the finished product. Pour sugar, vanillin and flour into the resulting mixture. Vanillin will fit 1 gram (as a rule, this is one packaged bag), it is no longer worth it - bitterness will appear.

When the water in the first saucepan boils, put the second one on it. Stir constantly so that not lumps form, but a uniform consistency and the best cream for cupcakes is obtained. Five minutes is usually enough for everything to thicken. But in order not to be mistaken, it is better to check for readiness. To do this, I run a spoon over the surface of the mixture. If it does not flow back into the formed furrow, you are done.

After removing from heat, cover the resulting mixture with foil and send to the refrigerator.

To bring to the final state, beat the butter and add it gradually to the cooled composition. We do not stop working as a mixer. This will add lightness, airiness and softness to the taste. In my opinion, this is one of the best delicacies, so some laboriousness of preparation is fully justified.

  • Chicken egg - 3 pcs;
  • Water - a quarter of a glass;
  • Sugar - 1 glass;
  • Lemon acid;
  • Butter - 170g;
  • Vanilla extract;
  • Food coloring (optional).

Eggs need room temperature, so we get them out of the refrigerator in advance, like butter (30 minutes). We separate only the protein from the eggs.

We place it in a deep container. Make sure to make sure it is completely clean and dry so that the most delicious cupcake cream is prepared properly.

Pour a quarter of a glass of water into a small saucepan and add sugar there. We put the container on medium heat and bring it to about 120 degrees. Remember to stir occasionally to prevent the mixture from burning. As a result, the sugar will completely dissolve, leaving no lumps or grains.

Beat the whites well, adding a pinch of citric acid to them. Pour the ready-made syrup there and beat it too. This should be done for a long time until the composition cools down. It takes me a little less than half an hour.

After cooling, add a little butter and beat again. In this case, the volume will begin to decrease and fall off, but after whipping, uniformity and smoothness will return. If this does not happen, it does not matter. In this case, I put the mass in the refrigerator. After ten minutes in the cold, everything turns out fine.

When you get a uniform consistency, put in one gram of vanillin, a dye if you want to make the mixture colored, and any flavoring fillers or additives. At the same time, the dessert perfectly retains its shape. So I suggest trying it for everyone who loves cooking and sweet treats!

Cupcake cream simple recipe with mascarpone

You will need:

  • Cream - 250 ml;
  • Banana - 1 pc;
  • Mascarpone cheese - 130 g;
  • Sugar - 65 g;
  • Vanilla extract.

For making such a dessert, I prefer 33% cream, I recommend it to everyone. We take a banana of medium to small size and quite ripe.

There is one trick in this recipe: refrigerate the components and even the dishes that you will use. Then the process will go much better and faster.

So, pour cream and cheese into a container, sugar on top, a little vanillin. Begin to beat the mixture with a mixer. And first we turn on the minimum speed, gradually it can be increased. The mass will soon become lush. Gradually knead the mashed fruit there and beat. At the end, you will get a homogeneous consistency.

Using mastic

It's not just cupcake creams that can be used to decorate. One of the wonderful techniques for letting your imagination play out is mastic.

It is prepared from the most common ingredients and does not require any special culinary skills, so feel free to experiment.

You will need:

  • Marshmallow sweets - 100 g;
  • Lemon juice - one spoon;
  • Powdered sugar - one or one and a half glasses (it will be clear during the cooking process);
  • Multi-colored food colors.

First, pour citrus juice over the marshmallows and microwave them for 10-20 seconds. You can steam it instead. As a result, the product will noticeably increase in volume.

In this recipe, food paint is usually used, since the variety of all kinds of colors is one of the charms of mastic. We introduce the coloring matter into the marshmallow and mix very thoroughly so that the color is uniform.

Continuing to stir, add a little powdered sugar. At some point, the mass will become difficult to mix in the container. At this point, start kneading like dough. Sprinkle the table, as if with flour, with powdered sugar, and when we knead, we continue to pour the powder. When the sweet "dough" stops sticking, wrap it in foil without gaps and send it to the refrigerator.

Cool down for half an hour and you're done!
