Good day, gentlemen! Today we will prepare an interesting dish, which is distinguished not only by its usefulness, but also by the versatility of serving. Chicken balls with chickpeas and soft cheese. They can become an appetizer, lunch and dinner, thanks to the excellent combination of BJU. Ingredients

  • Boiled chicken fillet - 450 gr;
  • Boiled chickpeas - 200 gr;
  • Soft curd cheese (or ricotta) - 60-80 gr;
  • Dried greens: dill, parsley, marjoram, mint, basil (to taste);
  • Spices to taste;
  • Garlic powder (unless it is in the composition of spices) - ½ tsp;
  • Salt.

Preparation

  1. Soak chickpeas in water in advance, preferably overnight. I stood in the water for almost a day - it swelled 3 times and quickly cooked. Then put to simmer over medium heat for 1 hour.
  2. Boil chicken fillet and cool, cut into small pieces. Grind with a blender until smooth. Fillet is difficult to chop, so you can add liquid to the blender (for example, strained broth left after cooking or boiled water).

Important note! The mass should be thick and stick well, so keep track of the amount of liquid added.

  1. Boiled chickpeas are also mashed with a blender.
  2. Mix the chicken and chickpea puree, add soft cheese, salt and mix thoroughly until smooth.
  3. Form into balls and roll in spices mixed with herbs and garlic powder. Serve warm.

It is better to accompany the balls with sauce, for example:

  • low-fat sour cream,
  • tomato sauce
  • soy sauce mixed with lemon juice,

This recipe was born spontaneously, so after cooking, I began to have ideas on how to change or improve the recipe. Here are some ideas to keep in mind:

  1. Roll the balls not only in herbs with spices, but also in chopped walnuts. You can put a whole nut kernel in the center.
  2. In general, such balls will play great with a filling: it can be cheese, a vegetable (for example, a cucumber or bell pepper), sun-dried tomatoes, boiled and grated beets with garlic.
  3. They can also be lightly fried in a dry skillet for a crispy crust.
  4. Alternatively, make a baked dish. Put the balls in a mold, separately mix 2 eggs, a little milk, a little grated cheese and a little flour (whole grain) or cornstarch (although you can do without flour, it will be more dietary), salt, spices and pour the balls with this dough. I am sure this casserole will turn out to be very tasty.

Making chicken fillet balls with cheese yourself at home is very easy. You can either fry them in a pan or bake them in the oven, while their taste will not change at all. But this option is suitable for those who do not like to fry dishes in a large amount of oil.

  • Chicken breast 800 g
  • Chicken eggs 3 pcs.
  • Bulb onion 1 pc.
  • Garlic 2-3 cloves
  • Edible salt to taste
  • Ground black pepper to taste
  • Bread crumbs 50 g
  • Wheat flour 50 g
  • Vegetable oil for frying
  • Hard cheese 100 g

Preparation

Minced chicken balls can be prepared in such a way that the cheese is inside, like a filling, or you can also grate it directly into the minced meat itself. This will make the dish more juicy and tasty, as well as add an unrivaled flavor to it.


  • It is advisable to choose fresh, not frozen chicken fillet, since in this case the minced meat will turn out to be more juicy. Rinse the breast and trim off the film and fat, then mince the meat. Peel the onion, cut into large cubes and also pass through a meat grinder. It is worth doing the same with garlic, but if the cloves are very small, it is better to chop them with a garlic press.


  • Place the chopped ingredients in a common deep bowl, then add fresh chicken eggs, black pepper and salt to taste. Try not to oversalt the minced meat, remember that the filling will also be salty because of the cheese.


  • Stir the minced meat thoroughly and then try to form a ball out of it. If it's too runny or out of shape, add very little bread crumbs or breadcrumbs to it. Then you need to prepare three small deep bowls, in which you need to place the flour, beaten chicken egg and bread crumbs, respectively.


  • Start shaping the cheese-filled meatballs. To do this, scoop up a little minced meat with a spoon, knead it in your hand to make a tortilla, and put in a small piece of cheese. Pinch the edges, and then roll the minced meat into a ball.


  • Dip the meatball first in flour, then dip in the egg mixture, and then in a container with bread crumbs. Do this with all the chicken balls, placing them on a wooden board.


  • Take a frying pan or cauldron with high edges, pour in a lot of oil so that when frying it covers the meat balls at least half, and put on fire, waiting for the oil to boil. Gently dip the meat pieces into it and fry until golden brown on all sides.   5. A little dill greens.
