Ingredients for the 12-cake dough:

  • butter - 90 g
  • eggs - 4 pieces
  • salt - 0.5 tsp
  • vodka - 1 tbsp.

  • soda - 1.5 tsp.
  • premium wheat flour - 4.5 cups *
  • * 1 cup = 200 ml liquid = 125 g flour

Cream products:

  • sugar - 150 g (can be increased to 250 g)
  • eggs - 3 pieces
  • milk - 750 ml
  • seasoning for desserts and coffee - 0.5 tsp.
  • wheat flour, premium grade - 8 tbsp.
  • butter - 450 g
  • honey - 2 tablespoons
  • cognac - 1 tablespoon
  • salt - a pinch

For both the dough and the cream, we need a water bath. Therefore, you first need to find two saucepans that match each other. The most optimal option, when one enters the other, does not touch the bottom, but not too far from it, while resting with handles on the walls of a larger pan. In fact, you can adapt in different ways, based on the available possibilities.
However, one should take into account the fact that both the dough and cream will increase in volume during the cooking process, so a smaller saucepan should not be completely tiny. I used a 1.5 liter one.

Kneading the dough:

So, I took hot water into a large saucepan (or you can heat cold water), brought it to a boil. I determine the volume of water empirically - I lower the smaller pan and see what level of water is obtained. The smaller saucepan should be partially submerged in water, but not overflowing when boiling.
She put out a second (shallower) saucepan of butter and sugar.
I, as always, did not take a very large amount of sugar, less than in standard recipes. Therefore, if you are not used to reducing the sweetness of baked goods in this way, then put 250 grams.

While the butter was being heated with sugar, I broke the eggs into a separate bowl and beat them with salt simply with a fork.

She let the oil cool down a little (not until it cooled completely, but to a warm temperature) and poured in the eggs. Then she added vodka (it acts as a baking powder along with soda), honey and cinnamon.

I put it on a water bath, stirred well until more or less homogeneous. Poured soda.

Stir well and cook, stirring, until the mass approximately doubled and a lighter shade was obtained (compare with the previous photo both volume and color).

She poured the fragrant mass into a bowl for kneading dough. I waited a few minutes for her temperature to drop. This is necessary solely in order not to burn yourself. As soon as it is possible to work with the mass, you need to start without waiting for further cooling.
First, I poured 2 cups (250 g) of sifted flour. Whipped with an electric whisk.

Then she sifted 2 more glasses of flour here and began to knead with her hands. In the process, I added another 0.5 cups of flour. But your quantity may differ, because different flours and gluten are different.
I put it in a food bag. I left it to rest while preparing the cream.

DIY heart-shaped cake cream:

For the cream, as I already wrote, you also need a water bath. So I washed the smaller saucepan and started cooking in it again.
I combined sifted flour together (it is better not to be lazy and sift so that the cream is homogeneous), sugar (again, I have a minimum amount, but you can increase it) and seasoning for desserts and coffee (it includes cinnamon, cloves, cardamom and vanilla) ... Mixed thoroughly.

Separately, beat the eggs a little with a fork with a pinch of salt and poured them into the flour mixture.

She also poured milk into it. I took the usual store - ultra-pasteurized, 2.5% fat.

I put it in a water bath (the water in a large saucepan should boil) and cook until it thickens. The cream should not be very thick for the spoon to stand)) See the consistency in the photo. After cooling, it will still thicken.
I poured it into a container for further preparation of the cream and allowed it to cool completely.

Separately combined butter and honey in a saucepan (it can be either liquid or candied).

When the butter has completely melted, mixed it until smooth with honey and cooled the resulting mass.

She joined together two cooled (this is important!) Masses - egg-milk and honey-buttered. Poured in brandy. Beat thoroughly. The cream is ready! Delicious cream;)

How to make a heart-shaped cake with your own hands without a shape?

This requires a template! I took out a large cardboard. You can also use paper, but it is better to take a thicker one, it will be more convenient.
I have a heart shaped baking dish. Remember, I baked in it and? .. But, I confess, I don't really like the heart that is obtained when baking ... I would like a more pronounced shape! So I did this - I traced the baking dish with a pencil. And then I adjusted it to fit my wishes - I made a deeper cut between the "shoulders" and reduced the width at the bottom.

If you do not have a similar shape, then just draw a heart of the desired size, or print any picture with a heart from the Internet. If you have a large card or, on the contrary, a small pillow in the shape of a heart, you can circle one of them. It doesn't matter at all what you take as a basis. The main thing is to get a beautiful heart of the right size. My parameters are as follows: the widest place of the heart is 22.5 cm; the total length is 23 cm.

I cut out a heart template from cardboard with scissors. All is ready! You can bake the cakes.

DIY heart-shaped cake - baking cakes:

So, the dough is rested, you can divide it into 12 approximately equal parts. I did it this way - I cut the ball of dough crosswise into 4 parts, and then I have already divided each of them into three identical segments.

She rolled out the dough thinly, sprinkling flour on the board (if this is not done, then the thin dough will stick and break). The layer should be translucent, like a strudel! Yes, yes, if not thinner.
Rolling out the dough, I applied a template - the layer should be larger than the cardboard dough by about a centimeter on each side. Because the dough will shrink a little during baking, and if you roll it back to back, then the cake will turn out to be smaller than the template.

I stuck the dough with a fork so that it would not swell too much during baking. Gently transferred it to a baking sheet (you do not need to lubricate it; however, if it is uneven, rough, then it is better to cover it with foil or parchment paper). I sent it to an oven preheated to two hundred degrees. She baked each cake for 3-4 minutes. The first traditionally requires a little more (4-5 minutes) time until the oven enters the desired mode.
As soon as the cake was browned (it is not necessary to deeply fry until brown), I immediately removed it from the baking sheet onto the board and immediately, while it was still warm (!), Cut out the heart according to the template using a small knife.

This must be done quickly and immediately, because the cake cools very quickly, and when it cools, it begins to crumble - instead of cutting off the excess, you can inadvertently break off the desired part.

I did this procedure 12 times ... While one cake was in the oven, I rolled it out, trying on the template, the next one and stuck it with a fork.

The cuttings were broken into small pieces and put into a shredder.

In several passes, I grind the remnants of the cakes into crumbs, which will be needed for sprinkling.

The cream is ready and cooled, the cakes are baked, the trimmings are ground - everything is ready, you can start collecting the Heart cake for Valentine's Day or another holiday.

I put a spoonful of cream in the center of the cake stand, and the first cake on it. So it will not drive, and then the cake will lag behind the dishes better when cutting. Each cake was well coated with cream and laid on top of the next one. So all 12.

I smeared the sides of the cake with the remains of the cream, and then sprinkled them thickly with crumbs, as well as the top. I laid out small chocolate hearts along the contour of a large honey heart. You can leave it like this - it's already festive!

The recipe for honey cake layers is very simple and they are made quite quickly. I put soft butter in a saucepan, add sugar and honey. Then I mix them and put them on a pre-prepared steam bath.

When the mass has heated up, become homogeneous, and the sugar has completely dissolved, I remove the saucepan from the heat.

Beat the eggs separately until they are lightly fluffy, literally for a minute, if you do it with a mixer.

Immediately add soda to the hot honey mixture and mix.

Add beaten eggs to the melted mixture and stir. I add flour last and knead the dough. It is important not to pour too much of it, so as not to clog the dough with flour, it should remain a little sticky.

Then I put it in the refrigerator for half an hour so that it becomes harder, after which it will be much easier to work with it.

Since I have a heart-shaped cake, while the dough is resting, I prepare the template. On a regular A4 sheet I draw a large heart, and inside a smaller one, then cut it out along the contours.

Now I roll out the dough very thinly, about 2 mm thick. I do this right away on parchment, so as not to transfer and deform it later. Sprinkle it on top with just a little flour, put a paper stencil on it and carefully cut it along the contour with a knife. Also, don't forget to cut out the center heart.

I remove the scraps of dough, leave them for the next cakes. I shift the cake with parchment onto a baking sheet and make holes with a fork so that the cake does not deform during baking.

I heat the oven to 160 degrees and bake for about 10 minutes, until slightly ruddy. Do not bake for a long time so that it does not become very dry. I still have a little dough, you can make a fourth layer from it, if you want.

Now I am making a cream from boiled condensed milk and cream. To begin with, I shift curd cheese and thick boiled condensed milk into the mixer bowl.

Beat them with a mixer for a couple of minutes until fluffy and smooth.

At the same time, I take cold cream and pour it into a not very wide container, I do this in a measuring cup. In my opinion, this way they whip faster. Beat the cream with a mixer on medium speed until it becomes fluffy. And here, in a narrow container, the moment comes when it is clear that the foam stops moving around the rims, which means it's ready. In time it is only a couple of minutes.

Now in the mass with condensed milk, add a couple of tablespoons of cream and mix with a spatula or spoon.

At first it may seem that the mass has become more liquid, this is so and will not work for decorating a cake, so I take a mixer and beat everything together for a couple of minutes. I put the cream in a pastry bag with any attachment, I took an asterisk. It didn't fit me all at once, so I put it in three approaches. I put the bottom cake on the tray and squeeze out the cream evenly on top with small roses or asterisks, who as they call them, so that each of them is about the same size.

Preparation of cakes:

  1. Combine eggs with sugar in a bowl, stir well, add honey, margarine, milk there.
  2. Prepare a steam bath, put a well-mixed mass on it. Bring to a boil to completely melt the margarine, sugar, honey.
  3. Mix cocoa, half the flour with baking powder. Stir well and remove from the steam bath.
  4. From the remaining flour, make a mound with a hole inside, pour the hot chocolate mass into it.
  5. Knead the dough until it becomes elastic and does not stick to your hands.
  6. Divide it into 16 equal parts and make balls.
