Ingredients:

  • 10 medium sized cucumbers
  • 180 gr of curd cheese
  • 50 gr dried cranberries
  • 4 thin slices of salted salmon, trout, or some smoked fish (I have catfish)
  • 2 tbsp nat. yoghurt
  • 3 green onion feathers
  • 1 sprig of rosemary, a handful of any greens
  • salt pepper

Cooking method:

  1. Pour cranberries into a saucepan, put rosemary. Pour a glass of boiling water, bring to a boil. Turn off, cool. We remove the rosemary, filter the cranberries.
  2. For the filling, combine curd cheese, yogurt, finely chopped herbs, green onions, cranberries. Salt and pepper.
  3. Peel the cucumbers, cut into 4-5 cm cubes. Further, according to the recipe, you need to remove the seeds, preserving the walls and bottom. I tried honestly, it didn't work. Therefore, I got out such a tool.

Ingredients:

Ingredients:

  4. We decorate all the cookies this way. By the way, you can make a piping bag yourself. Make a square out of a sheet of parchment paper and fold it diagonally. It turned out to be a triangle. Turn obtuse upward and fold the funnel from one sharp corner to the next. Cut the edge of the funnel obliquely or shape the end of the funnel into an embossed pattern. Done, now you can fill the curd mass and decorate the crackers. This confectionery syringe is used once.
  5. We put the pieces of sausage deep into the cheese mass in a zigzag at an angle, as in the photo. You get something like the Latin letter S. The cheese mass is dense, it will keep the sausage in the desired shape. Try not to touch the cream with your fingers so that there are no ugly dents left. Summer is the season of zucchini, of which everything is not cooked. Among my favorite zucchini recipes is zucchini roll.It's not difficult to cook it, but how delicious it turns out. The filling can be made to your liking: vegetable, mushroom, cottage cheese. I have it with cottage cheese, herbs and garlic.

Ingredients:

  • young zucchini without peel 600 g
  • flour 100 g
  • sour cream 60 g
  • egg yolk 3 pcs.
  • egg white 3 pcs.
  • baking powder (with a small slide) 1 tsp.
  • black pepper
  • curd cheese 400 g
  • any greens 1 bunch
  • garlic cloves 2 pcs.
  • parsley leaves for decoration

Cooking method:

  1. Grate the courgettes on a coarse grater, salt, let stand for 10 minutes. Drain the released juice, squeeze well.
  2. Add yolks, sour cream, flour with baking powder to the squash mass, add pepper, if necessary, add salt.
  3. Beat the whites into a stable foam, gently add in three to four doses into the squash mass, gently stirring from bottom to top.
  4. Cover the baking sheet with baking paper, grease it ALWAYS with vegetable oil, spread the parsley leaves on the paper for decoration (you can do without decoration).

The main rule is that any decoration should be less than cheese. Do not use too juicy fruits and vegetables, so that they do not soak the cheese already on the table. And of course, be creative. Even the smallest cheese platter can be beautiful.

Cheese and Garlic Snack - Cheese Stuffed Tomatoes

This cheese snack is also one of the classics of our family feasts. It must be the perfect combination of these foods: cheese, garlic and tomato.

Making them is not at all difficult. For such a cheese snack, we need:

  • hard cheese - 150 grams,
  • Feta cheese - 100 grams,
  • tomatoes - 5-6 pieces,
  • garlic - 2 cloves,
  • mayonnaise - 2-3 tablespoons,
  • salt, pepper, herbs - to taste.

Preparation:

Grate hard cheese on a fine grater. This can be any of your favorite types of cheese.

Mash the feta with a fork into a gruel, then mix it with hard cheese and mayonnaise into a homogeneous mass. Squeeze fresh garlic there, add salt and pepper to taste.

Next, take the washed tomatoes and chop them up. If the tomatoes are large, then cut them into thick rings from 0.5 som to 1 cm thick. Place the cheese filling and a sprig of herbs on top.

If the tomatoes are small, then you can make pots out of them by cutting off the lid and removing the core. Fill the space inside with stuffing, you can put the hat on top, or you may not use it, decorating it with greens instead.

Another option is to cut each tomato in half and remove the soft core from each half, fill the tomato cups with cheese filling, decorate and serve on the festive table.

Greens can also be added to the filling. Chop it finely and mix with the cheeses, and then stuff the tomatoes. This is a very simple type of cheese snack, and it takes just ten minutes to cook. But she will decorate any festive table with dignity.

Cheese snacks - cheese balls

This is an original and very beautiful cheese appetizer that can be diversified by adding all kinds of ingredients to the base and sprinkling. This will make them a real assortment with different flavors and colors.

I'll tell you some interesting options, and then you can improvise with other additives.

For the base of cheese balls, it is necessary to prepare a cheese mass, which will include:

  • hard cheese of your choice - 250 grams,
  • boiled eggs - 5 pieces,
  • mayonnaise - 2-4 tablespoons,
  • garlic - 2 cloves,
  • salt to taste.

Preparation:

Grate cheese, eggs and garlic on a fine grater. If desired, they can be chopped with a blender or food processor. Add mayonnaise and stir until thick, smooth, season with salt and pepper to taste. Put the mayonnaise gradually so that the thickness remains sufficient for sculpting balls.

Then, divide the cheese mass into as many pieces as you have planned. Here are my options.

Cheese balls with crab sticks

For the filling and sprinkling of the cheese balls, you will need 200 grams of crab sticks.

Freeze them a little beforehand to make them harder. After that, grate on a fine grater until you get crab shavings. Divide the resulting shavings in half. Add one half to the cheese base along with a spoonful of mayonnaise and mix well. Pour the other half into a plate. Form the crab cheese into balls. To prevent it from sticking, you can moisten the chicken with water or wear rubber gloves. Dip the resulting balls in the crab shavings.

Cheese balls with lightly salted fish, in sesame

To prepare such balls, you will need additionally:

  • slightly salted red fish - 100 grams,
  • fresh cucumber - 1 piece,
  • sesame seeds - 100 grams.

Peel the fresh cucumber and finely chop into cubes or short strips. Combine the sliced ​​cucumber with the cheese base until smooth, add a little mayonnaise if necessary. Then cut the red fish into small cubes so that you can place the cube inside the ball. That is, it should be about 3-4 times smaller than the future ball. Take a piece of fish and wrap it in a mass of cheese and cucumber, form a ball. Dip the finished ball in the sesame seeds. It can be white sesame, black, or a mixture of both. It will turn out very tasty.

Cheese balls with carrots and walnuts

If you remember from the first part of my post, then cheese snacks go well with nuts. In this version of cheese balls, walnuts are used, and in combination with carrots, it is simply amazing. To prepare such balls, you will need additionally:

  • raw carrots - 1 piece of medium size,
  • walnuts - 100 grams.

Preparation:

Grate raw carrots on a fine grater and mix with cheese mass. If it comes out too thick, add some mayonnaise. Optionally, this option can be cooked with boiled carrots, in case you don't like raw carrots, the taste will still remain pleasant.

For the filling, fry the nuts and break a few into quarters. Put the resulting large pieces into the cheese and carrot mass and form into balls. Chop the rest of the nuts. This can be done in a blender or by crushing them with a rolling pin.

Dip the cheese balls in the nut crumbs. Very tasty and healthy!

Cheese balls with salmon and green onions

Cheese and fish snacks are always delicious, almost a win-win option. The second option for making cheese balls with salmon (or trout) will be fresher thanks to the onion. For this recipe you will need:

  • lightly salted salmon or trout - 100 grams,
  • fresh green onions - a few arrows,
  • fresh or dried herbs - 50 grams.

Preparation:

Cut the lightly salted fish into small cubes. Chop the onion just as finely. Combine onion, fish and cheese base until smooth, add mayonnaise if necessary. Roll the curd into balls and roll in very finely chopped greens. Greens can be any: parsley, dill, cilantro. Both fresh and dry, the main condition is that it is very small, so that it is more convenient to roll the balls.

Cheese balls with sun-dried tomatoes and olives

Another very original version of a cheese snack for a festive table. This time the cheese balls will be red due to the fact that we roll them in paprika. And for the filling you need 100 grams of sun-dried tomatoes.

Preparation:

Chop the sun-dried tomatoes finely and add them to the cheese base. Roll into balls the same size, then roll in dried paprika until completely red. It will turn out to be very spicy and aromatic. Your guests have never tasted such a treat.

Cheese snack on potato chips

A cheese snack for a festive table can be extremely original. For example, potato chips with cheese filling are not at all a trivial dish. And disappears from the plates much faster than classic snacks. After all, it is fresh and very tasty, and the way of serving is extremely unusual.

For these snacks, you will need a jar of potato chips of the same size, such as Pringles, for example. You can take any taste, but original salty chips without additives and spices are best suited, in this case they will not overshadow the taste of the cheese filling.

For the filling you will need:

  • your favorite hard cheese - 200 grams,
  • tomatoes - 2-3 pieces,
  • mayonnaise - 3-4 tablespoons,
  • fresh herbs,
  • garlic - 1 clove
  • olives and olives for decoration.

Preparation:

Grate the cheese on a fine grater. Cut the tomatoes into small cubes. You can remove the middle section if it contains too much juice. Chop herbs such as dill finely. Then mix everything together with the addition of mayonnaise. Squeeze a clove of garlic into the mass and salt to taste.

Put the cheese filling on the chips right before serving, so that the chips do not have time to soften and retain their appearance and crunch.

Arrange the chips nicely, put an olive or olive on top of the filling. Decorate with sprigs of greenery.

In addition to this filling, others can be used. For example, replace tomatoes with fried mushrooms, ham, smoked sausage, chicken, lightly salted fish, carrots, walnuts, and other delicious foods.
