Grind the cheddar cheese using a medium or fine grater. Set aside immediately about 3 tablespoons, with which we will sprinkle the casserole just before it is sent to the oven.

Melt the butter in the bottom of the saucepan. Then add wheat flour to it and mix very thoroughly.
