When there are a lot of mushrooms in the pan and they contain a lot of liquid, the cooking time is greatly increased. Mushrooms will not be fried, but stewed in their own juice. We don't need this. Therefore, put the honey mushrooms first in a heated dry frying pan and, stirring so as not to burn, evaporate the moisture from them.
Now you can add oil and fry until tender. If you are going to add seasonings (black pepper, garlic, aromatic herbs), add a couple of minutes before removing the pan from the heat. For flavor and aroma to unfold, the seasonings must be heated, but prolonged heat treatment destroys them.
If you are making mushrooms, fried with potatoes, it is better to cook everything separately and mix on a plate.
For the winter, honey mushrooms, fried in ghee, can be stored in jars. They are prepared according to the same principle as homemade stew: the fat prevents the mushrooms from spoiling in the jar, prevents pathogens from entering there.
Pour oil into a deep frying pan, heat it, add salt at the rate of 1 teaspoon per 1 kg of oil. Pour the mushrooms, cut into medium-sized pieces, into the oil and fry until the white steam stops flowing, and then another 10 minutes.
Using a slotted spoon, the mushrooms are transferred into sterilized liter jars. It is necessary to ensure that no air bubbles remain inside. Fried mushrooms are poured on top with the rest of the oil and wait until the mushrooms in the jar have cooled. Since the oil will decrease in volume after cooling, it must be added to the jar.
When everything is completely cool, the workpiece is closed with plastic lids and stored in the refrigerator.
