Sugar can be added a little more if you have a sweet tooth.

Yeast Powdered Kefir Donuts

Here's another recipe for this delicacy. But this time they are yeast. It takes a little longer to prepare and the same excellent result. Keep in mind that yeast dough loves warm ingredients. Therefore, remove the kefir and eggs from the refrigerator in advance, and the butter will have to be heated.

Ingredients:

  • 1 liter of kefir;
  • 1 bag of yeast (11 g)
  • 1 egg;
  • 2 tbsp Sahara;
  • 1/2 tsp salt;
  • 2 tbsp melted butter;
  • 1 kg. flour.

1. Whisk together egg, sugar and salt. Then add warm kefir, yeast and stir.

If you want donuts to stay soft for longer, use less fat kefir.

2. Add the sifted flour and knead the dough with your hands. Then add melted butter and knead again. Place the resulting dough in a warm place and cover. Over time, it should increase by 2 times.

3. Put the dough on the table and divide it into pieces - donuts. Then stretch the donut by the edges to form a hole in the middle. And leave the resulting products to rest for half an hour.

4. Do not fry them over low heat, because they will absorb a lot of fat and will be fatty. Donuts don't need to be stacked on top of each other. Let the grease drain off, so place them on a paper towel.

Kefir Donut Recipe

  • Kefir (better not the freshest, the sour the better) - 1 glass
  • Sugar - - 4 tbsp. spoons
  • Soda - 1 tsp
  • Chicken egg - 1 pc.
  • Salt - on the tip of a knife
  • Butter - 50 g (we will add it to the dough)
  • Cooking oil for frying - 1.5-2 cups
  • Flour - 4 cups
  • Powdered sugar for serving
  • Vanilla - 1 tsp

How to make a donut on kefir in 15 minutes

Break 1 chicken egg, stir with sugar.

The melted butter (50 g) should cool to room temperature.

Add warm kefir. Remove kefir from the refrigerator in advance so that it is at room temperature.

The flour must be sifted in advance so that the donuts on kefir are more magnificent. Remember to add baking soda.

Knead a tender, pliable dough with kefir.

The dough is ready for making donuts. Now we need a rolling surface and a rolling pin.

Cut off a small lump of dough, roll it into a sausage.

Cut the sausage into small lumps. Press them lightly with your hands to make cakes with a thickness of 0.5 - 1 cm.

Now you need to make a hole in each donut. It is convenient to use a bottle cap. For example, it can be a cap from a regular plastic bottle (1.5 liter), I found the cap even less (from my bottle with vanilla essence). You can make a hole with a knife, or you can not make a hole at all (you get donuts without a hole).

We squeeze the circle out with the lid, do not discard the squeezed out piece, crush it into a lump again and can use it to make the next donuts.

We spread the resulting blanks on a surface dusted with flour. The dough for donuts on kefir is tender, you need to work with it very carefully.

For frying, pour vegetable oil (1.5-2 cups) into a saucepan (or very deep frying pan). Donuts should be completely covered in oil while floating in it.

Well-browned donuts on one side, turn over with a slotted spoon or fork to the other side. When the baking looks rosy from all sides, remove it from the pan onto a paper napkin so that the excess oil is absorbed into the napkin and the donuts are less nutritious.

Donuts can be sprinkled with icing sugar or icing - your choice!

I would be glad to receive comments on this recipe, look at the photo, what donuts you got.

Step 1. We take kefir.

Pour the kefir into a saucepan, add the egg, sugar, salt and begin to mix thoroughly so that the sugar dissolves. This can be done with a spoon or whisk. Then pour baking soda and vegetable oil into a saucepan. Mix everything again.

Step 2. Add flour.

Pour the sifted flour into kefir with an egg and knead the dough. Knead with your hands until the dough begins to lag behind the walls of the dish, i.e. will become one. The dough should be smooth and shiny.

Step 3. Take the dough.

We put the resulting dough on a cutting board and begin to form the donuts themselves. To do this, the dough must be divided into small balls with a diameter of about 3 cm. It is better to do this by hand.

Step 4. Shaping donuts.

To form donuts, you need to make cakes from balls. Next, stick a wooden stick in the center of the cake (you can use a pencil or a pen). Then quickly twist the cake with a stick on the table. I saw this method once and I don’t remember where, but the main thing is that it works! You can, of course, form donuts in the traditional way - roll out the dough 1 cm thick, cut out circles with one capacity, and with a smaller capacity - holes inside. But it is not so interesting for those around you! Leave the donuts to rise a little, and put a deep-frying pan or deep frying pan on the fire.

Step 5. Fry donuts.

Heat the oil vigorously in a saucepan. Put donuts in hot oil and fry on both sides. Fry one side for about 1 minute. Put the fried donuts on a napkin or sieve to drain the remaining vegetable oil. Then sprinkle with powdered sugar, and the more powdered, the tastier the donuts. Step 6. Serve donuts on kefir Donuts are best served hot, sprinkled with powdered sugar. Bon Appetit!

When preparing the dough for donuts, the kefir can be slightly warmed up so that the sugar dissolves faster.

It must be remembered that an excess of soda in the dough gives the finished products an unpleasant smell and taste, and if there is a lack of soda, the dough does not loosen well.

Be careful when frying donuts as hot oil can burn out the scalp.

The most delicious homemade donuts on kefir made from simple or yeast dough are a real treat for children and adults!

The name "donut" comes from the Polish word "pączek", which means donut. For many, it will not be news that the United States celebrates Donut Day on the first summer Friday. Various round shapes with or without a hole, with or without bright icing and the presence or absence of filling (jam, chocolate or condensed milk) make donuts a bright delicacy. Today's my recipe with step-by-step photos on how to quickly and easily make delicious airy yeast donuts on kefir. Of the many varieties of this dessert, we will prepare a classic version - a donut with a hole in powdered sugar.

  • 1 tbsp of kefir;
  • 1 egg;
  • 0.5 tbsp sugar;
  • 25 grams of butter;
  • 10 grams of dry yeast;
  • flour;
  • a pinch of salt;
  • powdered sugar;
  • vegetable oil.

To make a dough for donuts, you need to add yeast, 1 spoonful of sugar and 3 flour to kefir. Stir and set aside in heat for at least an hour.

Bring the butter to a soft state, you can slightly flood it.

It is important to remember - yeast dough does not like cold ingredients !!!

Add butter and eggs to the dough.

Stir in flour.

For the convenience of kneading, grease your hands with vegetable oil. Flour in bulk should not be. Otherwise, when frying the donut, a smoky residue will form at the bottom of the pan.

Break the finished dough into medium-sized donuts and let them rest for 30 minutes. During this time, the dough will rise, become soft and airy.

With the index finger in the center of the donut, form a hole, slightly stretching the edges.

We bathe the donuts in hot oil on both sides.

To add more beauty and sweetness to our dish, cover the donuts with a good amount of powdered sugar, sprinkling each donut layer on the dish.

Recipe 2: fluffy donuts on kefir (step by step photos)

Despite the variety of dough products in stores, there is nothing tastier than homemade, lovingly baked pies or cakes. But the most alluring and attractive word, it turns out, is the word "donuts". When I was about to please my family and announced that today there would be donuts for tea, my whole family, including the cat, immediately ran to the kitchen. It's good that this dish is prepared quickly! So, the recipe for donuts with kefir.

Recipe 4: homemade donuts on kefir (step by step)

Donuts can be prepared for breakfast, or you can take them with you for a picnic or a walk. All in all, this is the perfect homemade meal. This pastry is very tasty, besides, it is easy to prepare, because it is based on yeast-free dough.

  • Egg 1 pc.
  • Sugar 4-5 tbsp. l.
  • Kefir 2.5% 250 ml
  • Flour 390 g
  • A pinch of salt
  • Butter 30 g
  • Vegetable oil 3-4 tbsp. l.
  • Soda 0.5 tsp
  • Powdered sugar to taste

Whisk 1 egg.

Add 4-5 tbsp. l. sugar and continue whisking.

Then add 250 ml of kefir, a pinch of salt and stir again with a whisk to get a homogeneous mass.

Add 0.5 tsp. soda and 30 g of melted butter and mix well.

It is important that the oil is not hot.

Now add 390 g of sifted flour. It must be added in portions so that the dough is of the desired consistency.

It should not be too tight or too runny. When you add the first portion of flour, whisk to stir the dough. At some point, the dough will become denser and the whisk will no longer cope.

Then prepare your work surface and dust it thickly with flour. Put the dough on it and start kneading with your hands. The ideal kefir donut dough should be soft. If it sticks to your hands a little, that will fix the next step.

Make a small depression in the dough and pour 3-4 tbsp. l. vegetable oil.

Lubricate your hands with this oil and knead the dough, this time with butter. If it flows out during mixing, this is not a problem. Gradually, it will all go into the dough.

Roll out the kneaded dough about 1 cm thick.

It is undesirable to roll donuts on flour, as it will burn when frying. You should have some vegetable oil on the work surface to prevent the dough from sticking. If there is no oil left, you can add a little more, just don't overdo it.

A special donut cutter will give your baked goods the desired look. If you don't have one, take a simple bowl and a small glass. With a bowl, squeeze out the main circle, and with a glass, the middle. For this purpose, you can use different round dishes, it all depends on your imagination.

Just do not forget to grease it with vegetable oil, otherwise the dough may stick to it.

Pour vegetable oil into a frying pan and heat over low heat.

To prevent butter and donuts from burning, it is advisable to fry over low heat, slightly less than medium. So they will bake from the inside and will not burn.

Put the finished donuts in one layer on a flat plate lined with paper. The whole baking will not fit on one plate, so grab a few. Donuts cannot be stacked on top of each other. They are quite greasy, so you need to let the oil drain onto the paper, and not from one donut to another.

Sprinkle the cooled donuts with icing sugar. You can buy it in the store or make it yourself using a coffee grinder. You can also crush the sugar in a mortar.

Powdered sugar is a classic decoration of this dish. It can be supplemented with fine coconut flakes. Donuts will also look great with icing. It can be of different colors, depending on the dye you choose.

If you prefer a natural look, use a chocolate icing. It can be made with black or white chocolate. And you can combine both glazes, then you get a bright contrasting decoration. Small berries of fresh strawberries or currants will be a beautiful addition to this muffin.

This dish can be served with tea or any other beverage. Boiled or ordinary condensed milk will also be appropriate. Jam or preserves will work too.

Recipe 6: donuts on kefir at home

Making donuts like this is very easy and very fast. The recipe has already been indicated, so I'll tell you about the cooking process itself and the little tricks. Ready? Let's get started.

The consistency of combining the ingredients plays an important role. If you change the order significantly, the donuts may not rise.

  • kefir - 1 glass;
  • chicken eggs - 1 piece;
  • salt - 1 pinch;
  • granulated sugar - 5 tablespoons;
  • baking soda - 0.5 teaspoon;
  • vegetable oil - 3 tablespoons

So, we take a glass of kefir, always at room temperature, it is impossible to cold in any case. Add the egg and sugar to the kefir, beat thoroughly until the sugar dissolves.

The next step is salt and soda

And then - vegetable oil, preferably refined. When everything is whipped and mixed, we introduce flour - not in large portions, but "at a pace, at a pace." It turns out here is such a slightly loose dough, rather thick, but not dumplings - soft

And one more important point: before starting the donut dough, I put a cast iron pan with a lot of vegetable oil on a slow fire. And by the time I prepare the first portion of the donuts for frying, my pan is already “ready to eat”.

Roll out the dough into a layer about 1 cm thick and cut out such blanks from it

I do it in a small stack, but really, it's a matter of taste. Donuts can be shaped in any shape. Throw the cakes into well-heated butter. See they start to rise

Turn over, fry on the other side and remove with a slotted spoon. Despite the fact that donuts literally float in oil, they are not greasy at all.

And one more thing: the donuts are hollow inside and you can fill them with cream.

Recipe 7: plow yeast donuts on kefir

Bake classic donuts on kefir on the weekend, a step-by-step recipe with a photo will help you pamper your family with delicious pastries. This is an excellent solution for a sweet table, especially if additionally decorated with chocolate or protein glaze. They cook surprisingly quickly, thanks to the safe dough, and the products for its preparation are the most ordinary and almost always available to every housewife. The highlight of this pastry is that the finished dough is kept in the refrigerator, not warm. This feature gives softness, amazing airiness and splendor to finished products. If you want to please your family with an original dessert dish without spending a lot of time cooking, then this option is exactly what you need.

  • flour - 2.5 tbsp.,
  • yolks - 3 pcs.,
  • kefir - 1 glass.,
  • dry yeast - 3 tablespoons,
  • sugar - 2 tablespoons,
  • butter - 4 tablespoons,
  • vegetable oil - 1 l,
  • powdered sugar - to taste.

We heat the kefir so that it is lukewarm, but not hot, add the yeast, stir to dissolve well, then add the yolks and stir again so that the products are well distributed.

Now add the softened butter.

Pour in sugar, mix.

Sift the flour, gradually add it to the liquid mass. Knead a soft dough that is pleasant to the touch. The main thing is not to overdo it with the amount of flour.

We roll the resulting flour base into a bun, cover with cling film and put it in the refrigerator for 12 hours. As you can see, this dough does not require urgent processing, it can be safely kneaded overnight, and in the morning to please the family with fresh baked goods.

We take out the standing dough, roll it into a layer 2 cm high and cut out the circles with a glass, let it come up for 20-30 minutes.

Pour oil into a narrow deep saucepan, so that the donuts can float freely in it. As soon as the fat is well warmed up, dip several donuts into it. Fry quickly, on each side for 2 minutes, until beautifully golden.

Transfer the finished baked goods to a napkin to remove excess oil.

When cool, sprinkle with powder, or come up with a decoration to your liking. By the way, such pastries can be served with a filling, for example, with boiled condensed milk. To do this, carefully make an incision along the donut and fill it with condensed milk with a teaspoon.

Donuts cooked with kefir according to the recipe classics are ready. We serve with tea, coffee and delight family and friends with an ideally delicious dessert.

The classic recipe for donuts with kefir

Necessary kitchen utensils: whisk, frying pan, donut cutter, sieve, spoon, rolling pin, dough container and paper napkins.

Ingredients

How to choose ingredients

  • The most delicate and airy baked goods are made from premium flour... But, at the same time, this flour contains the least nutrients, since it has undergone the most thorough cleaning and grinding. This flour should be white, sometimes it has a light creamy hue. It has a neutral odor and a crumbly texture. The presence of lumps or specks in flour is unacceptable... Buy this product in natural packaging. For example, in paper or cloth packaging. The fabric and paper are breathable so the flour will not melt.
  • Vegetable oil must be refined... It has gone through many degrees of purification, but its main advantage is the absence of odor. Natural sunflower oil from private enterprises is sold in the markets. It often has a strong roasted seed smell. Such a product will convey its smell to the donuts, which is why it is best to use refined oil.
  • You can use both kefir and sour milk in this recipe.... It can be made at home. If you buy kefir from a store, never forget to look at the expiration date. This is not only an indicator of freshness, but also an indicator of naturalness. The shorter the shelf life, the more natural the kefir. The presence of starch as a thickener is a bad sign, which means that the production technology is violated. In the manufacture of kefir, only milk, dairy products and sourdough are used.
