Thus, you are guaranteed to acquire a fresh product, besides properly processed and partially prepared for baking. At home, you only need to rinse the carp, wipe the carcass dry and you can start pickling it.

First, sprinkle the outside and inside of the carcass with freshly squeezed lemon juice, then rub it on all sides with a mixture of salt, spices and seasonings for fish and freshly ground peppers.   • onions - 220 g;
  • carrots - 220 g;
  • eggplant or zucchini - 320 g;
  • sweet bell peppers - 220 g;
  • - 190-230 g;
  • a mix of spices and fish spices - a couple of pinches;
  • lemon - 80 g;
  • garlic teeth - 4 pcs.;
  • greens (dill and parsley) - 1 bunch each;
  • refined sunflower oil - 75 ml;
  • a mixture of peppers (freshly ground peas) - a couple of pinches;
  • coarse iodized salt - a couple of pinches.

Preparation

We generously grease the peeled and washed carp carcass outside and inside with a mixture of sour cream, garlic, salt, pepper, spices and seasonings for fish, and also fill the belly with finely chopped fresh herbs.

While the fish is saturated with aromas, let's take up the vegetable filling of the dish. Peeled onions, carrots, eggplants, cut into circles, and bell peppers into slices or large strips. Fry the onions and carrots in a pan for a few minutes at first, then put the vegetables in a baking dish. Next, fry the bell peppers, and then the eggplant mugs. Season the vegetables with salt and pepper during the frying process, and when ready, lay them in layers on the onions and carrots. On top we place the pickled carp in sour cream, make several transverse cuts on its back and insert half a lemon slice into each.
