1. Rinse the eggplants and remove the stalks. Then cut each eggplant into two parts and remove the pulp from the halves. Salt the resulting "boats" and leave for 30 minutes to get rid of all the bitterness.

2. During this time, prepare the filling: fry the finely chopped onion until golden brown in the plant. butter, add garlic, passed through a press, diced eggplant pulp and minced meat to it. Fry everything together until cooked through, then salt and pepper.

  3. In a separate frying pan, fry the onion (1 large head or 2 smaller ones) and medium chopped carrots until golden brown.
  4. As soon as everything is ready, we combine the mushrooms and frying, mix well, taste for salt.
  5. You can leave the minced meat with noticeable blotches of onions and carrots, or you can chop it with an immersion blender until completely homogeneous - it's up to you.

In the first case, it will become an ideal filling for pancakes or zraz, for meat rolls. In the second, it can be diluted to the consistency of a sauce by simply adding 1/3 cup of boiled water and heating in a pan, or stuffing eggs or bell peppers with it.

Mushroom minced meat with cream

It turns out to be very tender and goes well with light vegetable dishes.

  • Pour 600 g of mushrooms with boiling water and keep for 5 minutes. Then we drain the water, leaving ¼ glass of broth, cool them and cut them into large pieces - this way more flavor will be preserved in the mushrooms.
  • Put in a hot pan, fry with a minimum of oil until golden brown and set aside. Separately fry 2 small onions, cut into half rings, until golden brown.

  • Three 70 - 80 grams of any hard cheese on the smallest grater, combine it with minced meat and mix everything.

Boil peeled potatoes in salted water until tender, and make mashed potatoes from them.

Buns with minced meat and mushrooms.

Ingredients:

For the test:

Flour - 300 gr;
Milk - 125 ml;
Tremors - 15 g;
Butter - 30 gr;
Egg yolk - 1 pc;
Salt - 0.5 tsp;

For filling:

Minced meat - 100 gr;
Mushrooms - 100 gr;
Carrots - 1 pc;
Onions - 1 pc;
Egg - 1 pc;
Salt and pepper to taste;

The whole cooking process:

First, let's prepare the dough. Dissolve the tremors in 50 ml of warm milk and leave for 15 minutes. Add the egg yolk, butter, salt to the remaining milk and stir everything until smooth. Then we combine with the present dough, add flour and knead the dough. Transfer the dough to a bowl, cover with a towel and leave in a warm place for one hour.

Then fry the minced meat separately in a frying pan until half cooked, also fry the finely chopped mushrooms separately, fry the chopped and peeled onions separately, until slightly golden brown, and separately fry the grated and peeled carrots on a medium grater. Combine all the fried ingredients in a separate bowl, add half an egg slightly beaten until smooth, salt and pepper to taste and mix everything.

Next, we take the dough, and roll it into a thin layer about 0.5 centimeters thick, squeeze the circles out with the help of a glass. Then we take exactly half of the circles and cut out circles in them with the help of a cork from a plastic bottle in the center.

We take circles without a hole and put a teaspoon of minced meat on them, cover each circle on top, with a circle with a hole. Then we pinch the edges with our hands, or this can be done with a fork, pressing the edges.

We take a baking sheet, grease it with vegetable oil and put our blanks on it, grease them with the remaining half of a beaten egg and send them to the oven, preheated to 200 degrees for 35-40 minutes.
