  • Kefir - 1 cup (250 ml.)
  • Water - 1/6 cup (40 ml.)
  • Egg - 1 pc.
  • Flour - 1 1/3 cup (300 - 350 ml) - about 230g.
  • Sugar - 3 tbsp. spoons
  • Salt - 1/2 teaspoon without a slide
  • Soda - 1/2 teaspoon without a slide
  • Vegetable oil for frying - about 3 mm from the bottom of the pan.
  • Butter for greasing fritters (optional).

Lush kefir fritters - PREPARATION:

   Mix kefir with water and lightly warm.

In the dishes in which you will prepare the mixture, put salt, sugar, an egg and fill in with slightly warmed kefir. Stir thoroughly until foam appears on top.

   Add flour, dividing it into 2 or 3 servings, in order to make it convenient to mix.

   Mix thoroughly so that there are no lumps.

IMPORTANT:  It should turn out to be a thick mass that does not drain off the spoon, but comes off with a viscous, thick mass. If the resulting mass is not thick, then add more flour and bring the mass to a thick state.

For mixing, I use a funk, it quickly mixes and breaks the lumps.

   After the mass is ready, add soda and again mix the mixture thoroughly. (DO NOT extinguish soda)

   Before cooking fritters, heat the pan and oil in it.
  Fry the pancakes on both sides, until golden brown.

I recommend frying over medium heat so that the pancakes have time to bake.
  And for turning the fritters, use an additional fork to support them, then your oil will not be sprayed on the stove.

   When ready, grease the pancakes with butter. (Not necessary - optional !!!)

Cooking  kefir pancakes:

1. Pour kefir into the pan. Break the eggs into kefir. Stir thoroughly so that the eggs are mixed with kefir in a homogeneous mass.

2. Add salt, sugar, baking powder, mix and add flour. You do not need to immediately pour out the entire volume, since kefir of different manufacturers behaves differently at this moment. The dough should not be too thick. Let it be as thick as 20% sour cream, it should not flow from a spoon.

Ingredients:

  • Milk or kefir - 250 ml.
  • Flour - 250 g.
  • Egg - 1-2 pcs.
  • Sugar - 1-1.5 tbsp
  • Vegetable oil - 2 tbsp.
  • Salt - 1 pinch
  • Live yeast - 15 g. If dry - 5 g.
Sauce:
  • Pitted Cherry - 150 g.
  • Sugar - 50 g.
  • Butter - 30-40 g.
  • Starch - 5 tbsp. l or to taste

Cooking:

1. In a large bowl, crumble the yeast. Pour kefir to them. The temperature of kefir should be 25 ° -30 °. Stir the yeast with kefir.

2. Yeast is well mixed, add eggs, if large one egg can be. Pour sugar and stir well again. Add a pinch of salt.

3. Through a sieve, we begin to add flour. Add in portions, stirring well after adding each portion so that there are no lumps.

4. After adding half the flour, pour 2 tablespoons of vegetable oil. You can add creamy. Mix.

5. Continue adding flour. It took us exactly 250 g.

Keep in mind that flour is different everywhere. Therefore, do not add it all at once. Add in portions, until the consistency of the test is slightly thicker than thick sour cream. The dough should slide from a spoon, and not merge.

6. Well-mixed dough, after adding flour it became smooth, without lumps. We close the bowl with a towel and put the dough in a warm place to rise. I usually put in a cold oven and turn on the light there. This heat is enough.

Make the sauce

7. While the dough is suitable, make the sauce. Pour 50 g of sugar into a hot pan, you can pour more if you like sweeter. When the sugar heats up, spread the butter to it. Stir constantly.

8. When the butter is frothy, put the cherries in the pan. We reduce the fire to small and boil it all to make a sauce. Cook for about 5-6 minutes, then dissolve a teaspoon of starch in three tablespoons of water and add to the cherry. The sauce boils, you can turn it off.
