This is despite the fact that today the goal of many who are fasting is the desire to "lose weight and cleanse your body a little."
  • Nuts and seeds are a good storehouse of vitamins, minerals, essential fatty acids, fiber and protein. But you shouldn't abuse them either!
  • Dark chocolate is only one that does not contain milk or dairy products. Also watch out for the filling in the chocolate bar, it may contain ingredients of animal origin.
  • Halva is allowed if egg yolk is not present in its composition. Therefore, read carefully the composition or cook halva at home.

Mix 50 ml of vegetable oil, 80 g of sugar, ½ tsp each. cloves, ginger, cinnamon, a pinch of nutmeg and salt. Enter 1 tsp. soda, extinguished 1 tbsp. l. lemon juice, 180 g of ground oatmeal, 100 g of flour and 5 tbsp. l. water. Knead the dough, make cookies and bake at 200 ° C for 25 minutes. Add pineapple pieces to the dough and the taste will sparkle with tropical notes.

The traditional fasting sweetness is honey. We heat a mixture of 250 g of sugar, 250 ml of water, 100 ml of vegetable oil and 2 tbsp. l. honey. When the sugar dissolves, add 2 tbsp. l. cocoa, 1 tsp. baking powder, cinnamon and vanilla to taste. We introduce 320 g of flour, 80 g of crushed nuts, 80 g of steamed raisins and knead the thick dough. Fill a baking dish with it and put it in the oven for 40 minutes at 180 ° C. Have a sweet tooth while fasting? Make an egg-free apple charlotte. Combine 200 g of applesauce, 150 ml of orange juice, ¼ tsp. cinnamon, a pinch of vanilla and salt. Pour 200 g of flour and semolina, 100 g of sugar and beat the dough with a mixer. Put half in a baking dish, sprinkle generously with apple slices and cover with the other half of the dough. Fry the nuts in a dry skillet until golden brown, then chop until fine-grained with a food processor or blender. Add raisins to the nuts and continue grinding. Mix raisins and nuts with butter and add melted honey to the nut butter. Ready halva can be laid out on a baking sheet, smoothed, and when it cools, cut into squares, or placed in silicone molds, tamp it with your hands and wait until it hardens completely. You will get a beautiful curly halva.

Sorbet is a light, refreshing dessert, the most dietary type of ice cream, without milk and fat. This delicacy is made from fruit or berry puree, with the addition of sugar syrup, citrus or cherry juice. Kiwi sorbet

You will need: 7 small kiwis, liquid honey and lime juice (3 tablespoons each).
Remove the skin from the kiwi, cut into slices and refrigerate for a couple of hours. After freezing, mix the fruit with honey and lime juice, beat with a mixer and serve immediately.

Strawberry sorbet

You will need: 400 to fresh strawberries, 3 tablespoons of honey, half a lemon and 50 ml of water.
Dissolve honey over low heat in water and boil until bubbles appear on the surface. While the liquid is cooling, cut the berries into wedges and pour over the lemon juice. Then chop the strawberries in a blender, combine with the cooled syrup and send to the freezer. Garnish with berry wedges and mint leaves before serving.

3. Desserts from nuts and dried fruits

The combination of sweet dried fruits and aromatic nuts is always a winning one. Both are very helpful. Both are high in calories, but in reasonable quantities they are even recommended for people who have extra pounds, as they can pacify increased appetite and improve metabolism.

You will need: dried apricots, dates, cashews, sesame seeds - 100 g each, a handful of raisins and 50 g cashews to decorate the dessert.

Dry the nuts in the oven or fry in a pan until golden brown, and then grind in a blender until flour. Lightly fry the sesame seeds in another skillet. Rinse raisins, dates and dried apricots well and soak in warm water. Remove seeds from dates. Mix the ground cashews with dried fruits and grind in a blender until smooth. Use your hands to form balls of nut-fruit paste, roll in sesame seeds and garnish with cashew nuts on top.

You will need: 200 g of any nuts, 200 g of prunes, 170 g of dried cranberries, 50 g of brown sugar or powdered sugar, 2 tablespoons of cocoa powder.

First, grind the nuts and pour 30 grams into a separate container. Add cranberries, prunes to the rest of the nuts and chop everything together. And now the most interesting thing: with wet hands, form balls the size of a walnut out of the resulting mass, roll each in a sprinkle made from powdered sugar, cocoa powder and the set aside 30 grams of nuts. Put the finished candies in the refrigerator for a couple of hours.

4. Lean baked goods

You will need: brown sugar and water - 1 cup each, cocoa and honey - 2 tablespoons each, 1 teaspoon of soda (or a bag of baking powder), raisins and your favorite nuts - 100 g each, 100 ml of vegetable oil, cinnamon and nutmeg - each a pinch, flour - how much the dough will take, any jam or jam (optional).

Sift the flour. Chop the nuts. Add sugar, honey and vegetable oil to a saucepan with water, put on fire and stir until the sweets dissolve. In another bowl, combine cocoa, a pinch of salt, spices and soda, add the resulting mixture to water and stir well. Gradually add flour, the consistency of the dough should resemble thick sour cream. Put the dough in a baking paper lined dish and put it in the oven for half an hour, preheated to 200 degrees. The gingerbread can be eaten in this form, but it will be much tastier if you layer it with jam.

You will need: 100 g of brown sugar, 200 g of wheat flour, 100 g of dried apricots, a bag of baking powder, 4 tablespoons of vegetable oil, 250 ml of applesauce, powdered sugar for sprinkling, 1 teaspoon of cinnamon, a pinch of salt.

In a large bowl, combine flour, baking powder, sugar, salt, cinnamon, and finely chopped dried apricots. Combine the applesauce, pre-mixed with vegetable oil, with the dry mixture. Knead the dough. Grease the muffin tins with butter, half-fill each with dough (it will still rise) and bake in an oven preheated to 180 degrees for 30-35 minutes. Decorate the finished muffins with powdered sugar.

5. Fruit cocktails (smoothies)

It is believed that smoothies began to be prepared in Latin America, and in its modern form it appeared on the tables of people obsessed with a healthy lifestyle in California. Smoothie is a thick cocktail of berries, fruits or vegetables prepared in a blender, with the addition of ice cubes, green tea, spices, etc. The smoothie contains a lot of fiber, so it is very useful for digestion.

Fruit and berry smoothie

You will need: 200 g of frozen raspberries and strawberries, 5 kiwi and 2 tablespoons of liquid honey.

Defrost the berries, beat in a blender: separately raspberries and strawberries separately, add 1 tablespoon of honey to each type of berries. Remove the skin from the kiwi and, like the berries, chop. Place in deep glasses in layers: strawberry, kiwi, raspberry.

You will need: green apple, banana, orange - 1 pc., 4 kiwi fruit, 5 g of fresh ginger, 1 teaspoon of green tea, 2 teaspoons of honey, 200 ml of water.

Cut the banana into slices, wrap in plastic wrap and put in the freezer for half an hour. Squeeze the juice out of the citrus fruits. Prepare green tea, add honey and a slice of fresh ginger (can be substituted with a pinch of powder). Add citrus juice and banana to the cooled tea (do not forget to strain), grind with a blender, mix with apples, kiwi cut into slices and grind again.

Vitamin smoothie

You will need: 100 g of frozen strawberries (raspberries, cherries), 1 tablespoon of honey, a large handful of frozen peaches, 3 kiwis, persimmons, an apple and an orange.

Squeeze the juice out of the orange. Peel other fruits from the skin, tails and seeds, cut into slices, send to a blender and chop. Add orange juice, honey to the fruit and berry mass and beat again.

You will need:

  • 600 g apples
  • 180 g icing sugar
  • 1 tbsp. l. lemon juice
  • 1 tbsp. l. grated lemon zest
  • 100 g cranberries
  • 100 g flour
  • 1 tsp baking powder
  • 1 pinch vanilla
  • 50 g lean margarine

Preparation:

  1. Wash and dry the cranberries. Wash the apples, peel, core with seeds, cut the pulp into cubes. Mix with 80 g of icing sugar, cranberries, zest and lemon juice. Pour 50 ml of water and cook over low heat for 15 minutes. Place on a sieve and allow to cool.
  2. Sift the flour with baking powder, add the remaining icing sugar and vanillin. Melt the lean margarine, let it cool to room temperature and mix with the dough, then gently crush it with your hands or a fork.
  3. Heat the oven to 200 ° C. Grease a baking dish with oil and put apples and cranberries in it. Sprinkle with crumbs evenly. Place in the oven for 55 minutes.

You will need:

  • 4 apples
  • 30 g of light and dark raisins
  • 50 g dried apricots
  • 30 g sugar
  • 4 cinnamon sticks

Preparation:

  1. Pour dried apricots and raisins with warm water for 10 minutes, then drain. Dry dried fruits with a paper towel, cut dried apricots.
  2. Wash the apples, dry, remove the core from above, without cutting through the apple to the end. Using a sharp spoon, very gently remove some of the pulp from the inside without damaging the walls of the apple, and then prick with a toothpick from all sides so that they do not burst during baking.
  3. Stuff the apples with a mixture of dried fruits, wrap each in foil, leaving a small hole open on top. Preheat the oven to 180 ° C and bake the apples until soft, about 25 minutes. Serve warm or cold, with a cinnamon stick and honey.

  • 10 g dry yeast

  • 100 g granulated sugar
  • 1/2 tsp salt

  • 1 bag of vanilla sugar
  • 1 tbsp. l. honey for lubrication
  • 200 g cherry jam
  • 200 g chopped walnuts

Preparation:

  1. Dissolve yeast in warm water, add 200 g flour, 1 tbsp. l. sugar and stir. Combine the remaining sugar with zest, vanilla sugar, mix thoroughly and add to the dough. Pour in the remaining flour, salt, add oil and knead well. Put in a warm place for 1 hour.
  2. Then divide the dough into two unequal parts. Roll out a large one into a rectangular layer. Divide the smaller one into 7-8 parts. Roll up flagella from each of them to decorate the cake. Place the rolled out dough sheet on a baking sheet greased with vegetable oil.
  3. Heat the oven to 200 ° C. Spread the jam evenly on the dough. Sprinkle with chopped walnuts on top. Lay out the "wire rack" from the remaining dough.

  3. Divide the dough into 2 unequal parts. Form a cake from the larger one and put it in a mold greased with any fat, making sides. Lay out the prepared filling.
  4. Preheat the oven to 180 ° C. From the remaining dough, make flagella and decorations (flowers, leaves, etc.). Lay out the flagella in the form of a lattice, place the decorations on top. The dough can be brushed with strong tea. Place in the oven for 40-45 minutes.

  • 500 ml of water
  • 150 g semolina
  • 1 tbsp. l. starch
  • 4 tbsp. l. liquid light honey
For the sauce:

  1. Combine coconut milk with water, pour into a saucepan and bring to a boil. Gently add semolina and honey. Cook, stirring occasionally, over low heat for 20 minutes. Dissolve the starch in a little water, add to the semolina and bring to a boil.
  2. Place the prepared pudding in muffin tins and refrigerate for 2 hours.
  3. Prepare the sauce. Pour oranges over with hot water and pat dry with a towel. Grate the zest on a fine grater, squeeze the juice from the pulp of the oranges. Mix apricot jam with orange zest and juice.
  4. Arrange the sweet sauce on plates, top with the frozen pudding. Decorate the dessert as desired.

  • 30 g gelatin

Put the cabbage in a colander, then add to the onions and carrots. Simmer all together under a closed lid for 15 minutes.
  3. Knead the cooled dough again, roll it out 3-5 mm thick. Cut out circles about 20 cm in diameter. Place 1-1.5 tbsp. On one side of each circle. l. fillings, cover with the second side. Press down on top to release air. Pin the edges. Chop the pasties with a fork in several places.
  4. Fry the pasties in well-heated vegetable oil for 3 minutes on each side. Remove the finished products with a slotted spoon and put them on the wire rack to drain the excess oil. Put the pasties on a plate, garnish with boiled carrots and parsley.

    1. Prepare jelly. Pour the flour with warm water and leave overnight. Strain the infusion. Add honey, salt. Cook, stirring all the time, until thickened. Remove from heat, cover, leave for 20 minutes. Pour into a mold and refrigerate until it solidifies.
    2. Soak gelatin in cold water, then squeeze and dissolve in 3 tbsp. l. warm grape juice. Mix with the remaining juice. Fill a rectangular shape with half of the resulting mixture. Wash and dry the grapes. Cut each berry in half, removing the seeds, and put on jelly. Pour the remaining juice with gelatin.
    3. Chop the nuts and mix with sugar. Wash the apple, remove the core, grate the pulp. Cut the kissel into rhombuses or squares. Cut the finished jelly into cubes, put in glasses. Put jelly on top, sprinkle with grated apple and nuts.

    Do not expect reasons for delight and applause from this recipe. Just cookies - to nibble for tea or a snack at afternoon tea. Unobtrusive, inexpensive, uncomplicated - in general, an ideal option for every day.

    140 g sugar;
    75 g oat flour;
    140 g wheat flour;
    3 tbsp. l. any fruit juice;
    50 ml of vegetable oil;
    1/3 tsp salt;
    1/3 tsp soda.

    We mix both types of flour, sugar, salt, soda.
    Combine juice and oil separately. Gradually adding the dry mixture, knead the soft, non-sticky, tender dough.
    We roll it into a thin layer, cut out cookies with molds.
    We transfer to a baking sheet, bake at a temperature of 200 degrees for about 10 minutes.

    Advice. If desired, you can add finely chopped dried fruits, nuts, seeds to the dough.

    FAST MUFFINS

    The recipe is so simple that it is difficult to believe at all that something worthwhile will come out of it. But believe me! Quite simply, almost primitive - but the result is very, very decent.

    2 cups of flour;
    1 glass of any fruit juice;
    1 cup of sugar;
    6 tbsp. l. odorless vegetable oil;
    1/3 tsp salt;
    1/3 tsp soda;
    nuts, berries or dried fruits to taste.

    We mix dry ingredients. Mix oil and juice. We combine both masses, add berries or nuts. Lay out the dough in muffin tins and bake at 180 degrees for about 30 minutes. We check the readiness with a wooden stick.

    Advice. If desired, fruit juice can be substituted for strong tea.

    LEAN YEAST PANCAKES

    Nothing fancy, just pancakes. Nothing complicated, just mix and wait for the mass to double. Nothing hard, just fry as usual. And yet ... they are wonderful. Who needs thin lean pancakes with yeast?

    2 glasses of warm water;
    1.5 tsp yeast;
    1/3 cup sugar
    1/3 tsp salt;
    3 tbsp. l. vegetable oil;
    1.5 cups flour.

    We mix all dry ingredients, add warm water and oil. Knead a homogeneous batter, put it in a warm place to rise.
    We fry in a well-heated skillet like ordinary thin pancakes, if necessary, periodically grease the pan with oil. Enjoy the lace result.

    Advice. Don't forget to grab a jar of grandma's jam - it greatly enhances the taste of lean pancakes.

    GALLET WITH APPLES

    Crispy and very tasty, biscuit captivates with thoughts of usefulness: when eating piece by piece, one wants to think that whole grain flour is more beneficial than centimeters at the waist, and apples share vitamins more generously than calories.

    150 g of ordinary wheat flour;
    100 g whole grain flour;
    100 ml of vegetable oil;
    100 ml boiling water;
    a pinch of salt;
    3 large apples;
    2 tsp lemon juice;
    1/2 tsp cinnamon;
    2-3 st. l. Sahara.

    In a bowl of sufficient volume, mix both types of flour, add salt. Pour in vegetable oil, grind into crumbs. Pour in boiling water, knead a soft, elastic, non-sticky dough.
    Peel the apples, remove the core, cut them into thin slices using a vegetable cutter. Sprinkle with lemon juice.

    Roll out the dough into a thin round layer. On the entire surface of the biscuit, with the exception of 2-3 cm at the edges, spread the apples in an even layer. Sprinkle them with sugar and cinnamon.
    We wrap the edges of the biscuit up, carefully transfer it to a baking sheet and bake at 200 degrees until tender - about 25 minutes.

    Advice. Add some sea buckthorn berries or cranberries to the apples - the taste will be completely different!

    ORANGE CUPCAKE

    The taste of this cake is very simple and unobtrusive - just what you need to decorate a family tea party. Simple cooking process, fairly simple result, simple home gatherings. However, do not think that all this simplicity is an indicator of poor baking quality - on the contrary, the cake comes out very good: light, fragrant, real.

    150 ml orange juice;
    zest of 1 large orange;
    150 g of vegetable oil;
    150 g sugar;
    380 g flour;
    1/3 tsp salt;
    1 tsp soda;
    2 tbsp. l. water;
    1 tbsp. l. vinegar.

    Remove the zest from the orange, squeeze the juice.
    Mix orange fresh juice with vegetable oil (refined odorless), add sugar, stir until all grains are dissolved. Add salt and vinegar, add flour and knead to a homogeneous dough.

    In a small container, mix soda and water and add to the dough.
    We transfer the dough into a greased and floured form, bake until tender for about 40 minutes at a temperature of 180 degrees. If desired, sprinkle with powdered sugar, cut after cooling completely.

    Advice. If you have time, make extra thick orange syrup and saturate the finished cake with it.

    Gingerbread cake

    Like the bulk of lean baked goods, due to the absence of eggs in the dough, the cake turns out to be rather loose and crumbly, however, in this case this is not a minus, but rather a plus: a minimum of effort - and for tea you have a piece of melting ginger joy ready for tea, nice surprising richness of flavoring shades.

    80 ml of refined sunflower oil;
    80 g pitted prunes;
    80 g sugar;
    150 ml of strong black tea;
    150 g + 1 tbsp. l. flour;
    90 g honey (about 3 tbsp. L.);
    1 tsp ginger powder;
    1 tsp cinnamon;
    1 tsp soda;
    1/2 tsp salt.

    First, we brew tea - strong and rich. For a more interesting result, you should take tea with bergamot, orange peel or candied lemon - the citrus note will perfectly fit into the overall flavor range, turning an ordinary cake into a stylish treat.
    Pour oil into a saucepan, add sugar and honey, stir, put in a water bath and heat until the ingredients are completely dissolved.

    Cut the prunes into small pieces, roll them in a tablespoon of flour.
    Add soda to a saucepan with honey, sugar and butter, mix - the mass will begin to foam and grow. Great, it should be so - add salt, cinnamon, ginger. We pour in tea. Add flour - mix everything quickly until smooth. The dough will not be thick and flowing.
    Add prunes, pour into a greased baking dish. In the oven - for 40 minutes, temperature 180 degrees. We check the readiness with a wooden stick.
    The finished cake can be decorated with any jam or sprinkled with powdered sugar or cocoa.

    Advice. Garnish with finely chopped candied ginger when serving.

    FAST TRUFFLE CAKE

    Trust me, this is one of the most incredible lean cakes you will ever taste! Incredibly rich, chocolatey, moist and rich in taste - guests will be overwhelmed. And those who do not fast, by the way, do too.

    Cakes:
    250 ml of plant milk (soy, coconut, almond, sesame, oatmeal or any other);
    300 g flour;
    1/2 bar of dark chocolate;
    130 ml odorless vegetable oil;
    130 g sugar;
    3 tbsp. l. cocoa;
    1/2 tsp salt;
    1 tsp baking powder;
    1 tbsp. l. lemon juice.

    Fruit layer:
    150 ml of any jam with a sour taste (currants, plums).

    Cream:
    270 ml of strong tea;
    300 g of dark chocolate.

    Cake. To prepare the cake, heat the milk. Put the broken chocolate into pieces in a saucepan with milk, stir until completely dissolved. Add sugar, salt, baking powder, cocoa, pour in vegetable oil. Gradually add flour - the dough should be stringy, but it's pretty good to drain from the spoon. Pour in lemon juice, mix quickly again. We spread the mass in a greased form, bake at 180 degrees for about 40 minutes, check the readiness with a wooden stick.

    We take the cake out of the mold only after it has cooled completely. Cut lengthwise into two equal parts.
    With a blender, beat the jam into a homogeneous mass, spread it on the bottom cake, distribute it evenly.

    Cream. Prepare in advance two bowls of different sizes, which will fit into each other. You need to put ice in a large one. Pour freshly brewed warm tea into the smaller one (it is good if it is tea with bergamot or orange peel), spread the chocolate and stir until it is completely dissolved. After that, put a small bowl in a large one filled with ice, and begin to beat the cream. It sounds strange, but this is exactly what needs to be done - at first the mass will be liquid (it will begin to seem that everything is gone, and the food is spoiled in vain), then it will gradually thicken. At this stage, periodically turn off the mixer and check the consistency of the cream - when the beaters begin to leave a distinct mark on the surface of the cream, finish, because at this moment it is easy to beat the cream (in this case it will be so thick that you cannot grease the cake with it, you will have to cut and spread in pieces). The final result should be soft, mousse-like and hold its shape well.

    Put half of the finished cream on the bottom cake, distribute evenly over the entire surface, cover with the top cake. With the second half of the cream, grease the cake on top and on the sides.
    We leave the cake to soak overnight, after which you can brew coffee and surprise the guests.

    Advice. Prepare a little more cream - decorations that can be deposited from a pastry syringe perfectly come out of it.

    FAST "NAPOLEON"

    Layered cakes, custard. Everything is really, as in, only in a lean version!

    Dough:
    1 glass of vegetable oil;
    1 glass of mineral water with gas;
    4.5 cups flour;
    1/2 tsp salt.

    Cream:
    150 g of peeled almonds;
    1 liter of water;
    300 g sugar;
    200 g semolina;
    juice and zest of 1 lemon.

    We mix oil, water, salt. Gradually adding flour, knead the non-sticky elastic dough. We form a ball and put it in the refrigerator for 2-3 hours. After the specified time, divide the dough into equal pieces (12-15 pieces), each of which is rolled into a thin layer, cut off the excess with an inverted plate, carefully transfer to a baking sheet, prick with a fork in several places. We bake at a temperature of 200 degrees for 5-7 minutes each - until light golden brown.

    Grind the almonds into crumbs. Gradually adding water, do not stop working with a blender. Mix the resulting milk with sugar, bring to a boil, add semolina in a thin stream, cook until thickened. Add juice and lemon zest to the cooled cream, beat again with a blender.
    Lubricate each cake with cream, leave some of the cream on the sides and top. If desired, we break one cake for sprinkling, decorate the cake.
    Leave for soaking for at least 5 hours. We serve to guests and collect compliments.

    Advice. Garnish with nuts if desired.

    Lean dessert for a snack

    OAT BARS

    It's great when you have something sweet and pleasant at hand - something that can cheer you up, satisfy your hunger and at the same time be useful. How about homemade cereal bars?

    2 cups oatmeal
    2 ripe bananas;
    2 tbsp. l. honey;
    1/2 cup chopped nuts (hazelnuts, peanuts, cashews, pistachios, almonds, and others)
    1/2 cup chopped dried fruits (raisins, dried apricots, prunes and others).

    Put the oatmeal in a dry frying pan and dry it properly - a pleasant, distinct smell of rolled oats should appear in the air.
    In the same way, lightly fry the mixture of chopped nuts.
    Peel the bananas, rub with a fork in mashed potatoes.
    We mix nuts, flakes, dried fruits, puree and honey. Put the resulting mass in a baking dish covered with parchment paper. We level, tamp - the thickness of future bars should not exceed 1 cm.

    We bake at 180 degrees for about 20 minutes. Cut into cubes, leave to cool completely in the form, then separate from each other, if necessary, wrap with baking paper and store in a hermetically sealed container.

    Advice. Try adding grated apple or pear to the bar mass - this will shorten the shelf life, but soften and improve the taste.
