Ingredients:

For the test:

  • eggs - 6 pcs.;
  • cocoa powder - 2 tbsp. spoons;
  • sugar - 1.5 cups;
  • baking powder - 2 teaspoons (or 1 teaspoon of soda slaked with vinegar);
  • flour - 2-2.5 cups.

For the cream:

  • sour cream - 850 g;
  • cocoa powder - 2 tbsp. spoons;
  • butter - 250 g;
  • sugar - 1.5 cups.

For glaze:

  • sour cream - 150 g (6 tablespoons);
  • butter - 50 g;
  • sugar - 1/2 cup;
  • cocoa powder - 2 tbsp. spoons.

To decorate the cake:

  • walnuts (optional) - 150-180 g.

"Turtle" cake classic recipe with sour cream

  1. We start by making a biscuit dough. Mix eggs in a deep bowl with sugar, beat with a mixer until the volume increases and the mass lightens. If instead of baking powder you decide to use soda, add it at this stage (extinguish with vinegar beforehand).
  2. For a chocolate shade, add cocoa powder to the sugar-egg mixture. Mix the flour with baking powder and sift the parts into a bowl, stirring the mass. Adjust the portion of flour, focusing on the consistency of the dough - in terms of density, it should turn out to be approximately like sour cream.
  3. Gather a viscous mass with a spoon and put it on a baking sheet covered with parchment, in the form of cakes. We keep the distance between the "islands" of the dough, as during the baking process they will slightly increase in size. We send the baking sheet to a hot oven. We bake biscuit cakes at a temperature of 180-190 degrees for about 7-10 minutes.
  4. To check readiness, immerse a match in the dough. If it remains completely dry, remove the baking sheet from the oven, carefully remove the cakes from the parchment and cool. In the same way, we form the following batches of biscuit blanks.

  12. If desired, we decorate the cake with pieces of walnuts. Be sure to remove the "Turtle" on the refrigerator shelf so that the icing hardens and the cakes are soaked in sour cream. On average, this will take 4-5 hours. When serving, cut the baked goods into portioned segments.
