Good afternoon friends! Today we will prepare muffins with you, but not sweet, to which we are all used to, but snack bars with ham and cheese.
And for the preparation of the dough, we need: 200 g of flour, 1.5 teaspoons of baking powder, 100 g of butter, 120 ml of milk, 2 eggs (butter, milk and eggs are taken at room temperature), 1 teaspoon of sugar, 1/3 of a teaspoon tablespoons of salt, 1/3 of a teaspoon of freshly ground black pepper, you can also add any other spices of your choice, 50 g of finely chopped or grated cheese and 100 g of any other filling (this can be sausage, ham, smoked brisket, fried mushrooms, olives, sun-dried tomatoes).
And we will begin the preparation, as for classic cupcakes, by whipping soft butter. Add sugar, salt, spices to the butter and beat at high speed until light and fluffy. There is not very much oil, so it will scatter along the walls of the bowl, periodically remove it with a spatula and continue to beat.
When we have achieved a very lush, light state, we introduce the eggs one at a time, each time beating for 1 - 2 minutes at high speed. The mass may stratify a little, don't let it scare you, it's okay.
Next, we need to mix the flour with baking powder and sift about 1/3 to the beaten butter with eggs, mix at the minimum mixer speed until smooth. Next, pour in half the milk, stir again at a low mixer speed, sift the flour, then pour in the milk again and sift the remaining 1/3 of the flour. Thus, alternating each other, we add dry and liquid products, each time stirring the mass until smooth. The result should be a very fluffy and airy dough.
For flavor, I decided to add a little dried garlic with dried herbs and now the filler can be added. Chop finely into cubes and mix the dough with a spatula. The muffin dough is ready. You can bake them both in silicone molds and in paper capsules for cupcakes. Large capsules produce 9 muffins, while regular standard small ones with a height of 3.5 cm will make about 12 muffins.
We bake the muffins in an oven preheated to 180 degrees for about 25 minutes, top / bottom mode without convection. Be sure to check the readiness with a toothpick inserted in the middle, it should come out dry and clean.
Place the cupcakes on the wire rack and let them cool down. Cupcakes can be served warm or cold. You can first remove the paper capsule, you can serve directly with it.
I propose to arrange cupcakes as an appetizer to the festive table - to make a hat out of cream. For the cream, take 250 g of cream cheese, 80 g of heavy cream with a fat content of 30% or more, 2-3 cloves of garlic, passed through a press and I will add a little finely chopped dill (you can use any greens). For the cream, we just need to combine all the products together, the cream and cheese must be very cold. I use salty cheese, so I don't add salt. First, beat the entire mass at the minimum speed of the mixer until smooth, and then increase the speed to medium and beat the cream into a fluffy mass.
Next, put the finished cream into a pastry bag with a beautiful nozzle and place the caps on our cupcakes. This amount of cream is enough for 9 cupcakes, for caps that are not too large. And then we decorate our cupcakes and we can serve such a beautiful and unusual appetizer to the table, which will certainly surprise your guests)

Snack cake is always relevant. And when you need to grab a quick bite, slicing off a piece of snack cake is even easier than making the simplest sandwich. And to the festive table - whether in the office or at home: the solution is unpretentious and very appetizing, moreover, non-trivial.
A filled muffin is prepared according to the basic recipe for all muffins: first, butter is whipped, then eggs are introduced into it, followed by the rest of the ingredients. The dough should be smooth and creamy. It is also important that all the ingredients in the recipe are at room temperature.

First, prepare the ingredients for the filling: cut the cheese and ham into cubes.
Chop the dill finely and mix with the cheese and ham.
Now start making the dough: beat the softened butter with a mixer until fluffy, creamy.
Add eggs one at a time, beating the mass each time.
Add half of the flour to the dough and stir.
Then add the whey to the dough.
Then add the rest of the flour along with baking powder, sugar and salt.
Beat the dough until smooth.
Add the filling last and stir to distribute it evenly over the dough.
Place the dough in a rectangular dish, greased with a small amount of any fat.
Bake the snack muffin at 180 degrees for 45-50 minutes. Check the readiness with a toothpick, it should come out dry.
Before serving, the cake should be allowed to cool thoroughly so that it does not crumble during cutting and keeps its shape.
Store the cake in the refrigerator, wrapped in plastic wrap or a bag.
It is better to cook them on fermented milk products - kefir, sour milk or sour cream. If you like moist muffins, then add soft cheese to the filling and cut it into pieces - this will add juiciness to the baked goods. With grated cheese, the muffins will be soft, tender, but the dough will be slightly denser and more uniform.
Beat the egg with a fork and pour into warm kefir (room temperature).
Add melted butter there.
Sift flour, pour into kefir mixture. Don't forget to add baking powder (you can mix it with flour).
Stir the dough. While it is still not smooth and dense, add spices and herbs to it to your liking. Knead the dough until all ingredients are combined.
Grate the cheese or cut into pieces.
Cut the ham into very small cubes. If you cut it coarsely, it will be difficult for the dough to rise, the muffins will turn out to be dense.
Toss the cheese and ham with the dough.
The dough will be denser than for sweet muffins, it will fall off the spoon in a lump, and not pour out.
Fill in the molds not 2/3, not more. The muffins will rise in the oven. Since the dough is dense and not completely homogeneous, press down a little to distribute it better throughout the mold.
Brush the top with a beaten egg and sprinkle with sesame seeds.
Muffins are baked in a well-heated oven at a temperature of 180-190 degrees. They will be ready in 20-25 minutes. To prevent the muffins from getting damp, immediately remove them from the molds and cool on a wire rack.
