Easter cake is a special type of ceremonial festive bread, which is traditionally baked from yeast dough on Maundy Thursday, and on Saturday it is consecrated in church. Cooking Easter cake is akin to a kind of sacrament. Its main feature is not the ingredients, but the correct cooking technology. For the preparation of the cake, you should take it exclusively in a good mood, then the cake will turn out to be successful, and next year everything will be safe in the house.

The cake dough requires a careful attitude to itself and is kneaded in several stages, between which it fits. The dough is very capricious - it does not like drafts, sudden temperature changes, loud sounds, and does not tolerate haste. Easter cakes can only be baked in a well-heated oven, and during this process they should not be disturbed. The readiness of the cakes can be checked with a wooden toothpick, on which no dough should remain. The finished cake is not taken out of the mold immediately, but allowed to cool. These are, perhaps, all the basic rules that should be followed when preparing Easter cakes.

Cooking traditional Easter cake

Mix 1 sachet (11-12 g) of dry or 50 g of regular yeast with 500 ml of warm milk and 500 g of flour. Knead the dough and leave it to come up. Mash the yolks with 300 g of sugar white, and beat the whites into a tight foam. Add yolks, whites to the matched dough, add 200 g of softened butter and mix the dough thoroughly. Then add 500 g of flour, finally knead the dough, cover it and put it in heat for 1 hour until it doubles in volume.

During this time, rinse the raisins, dry them, dust them with flour and add to the dough that comes up. Mix everything again and set aside for 10 minutes. Grease the molds with butter, sprinkle with flour and lay out the dough, filling the mold to 1/3 of its volume. Leave the filled forms for 10 minutes so that the dough in them rises, then send them to a preheated oven to 180 ° C for 45-50 minutes.

Prepare the icing by whisking 2 proteins with 100 g of sugar with a mixer into a tight foam, with which cover the finished hot cakes.

Cooking royal cake

Dissolve 50 g of yeast in 200 g of cream at room temperature. Add 600 g flour, stir and leave to rise. When the dough rises, add 15 yolks, ground with 200 g of sugar and 200 g of soft butter. Pour in 400 ml of cream and add 600 g of flour, 10 grains of crushed cardamom, 50 g of almonds and 100 g each of washed raisins and candied fruits. Knead the dough well and leave to rise in a warm place for two hours. Then stir it again, place it in the molds, filling them by 1/3 of the volume, having previously greased with oil and sprinkled with breadcrumbs. Let the dough rise, then place them in a preheated oven to 180 ° C for 45 minutes.

Cooking Easter cottage cheese

Easter cottage cheese, along with Easter cakes, is considered the main dish of the festive Easter table. For its preparation, a special detachable pasochny in the form of a truncated pyramid, consisting of 4 boards, is traditionally used. The curd mass squeezed out in it takes the form of a truncated pyramid, which symbolizes the place of the crucifixion and death of Christ.

Besides the fact that cottage cheese Easter is a symbol of Easter, it also serves as a very tasty dessert. It can be cooked in three ways: chilled and pressed, brewed and baked in the oven.

Cooking custard custard Easter

Wipe 1 kg of cottage cheese through a sieve, add 200 g of soft butter and the same amount of sugar, 5 eggs, 1 teaspoon of vanillin and mix. Pour 400 ml of cream into the resulting mass and mix again. Put everything on fire, and after boiling, cook for 3 minutes, stirring constantly until thickened. Combine the curd mass with candied fruits, nuts and raisins - each addition should be 100 grams. Put the dough under the load (for draining the whey) in a pasochny covered with gauze, which is sent to the refrigerator for 12 hours. When the serum is drained, remove the gauze and decorate the Easter.

Cooking pressed cottage cheese Easter

Beat 200 g of cottage cheese with a blender or rub through a sieve, add 2 egg yolks, 100 g of grated butter, 0.5 teaspoon of vanillin and 100 g of sugar. Mix everything, put it in a mold, and set it under the load for a day.

Cooking baked cottage cheese Easter in the oven

Place 600 g of cottage cheese under a press so that all excess liquid is removed from it, then wipe it through a sieve. Rinse 50 g of raisins, mix with 40 g of starch and add to the curd. Pounded 6 yolks with 5 tablespoons of sugar, add to the curd and stir. Add 6 egg whites with 5 tablespoons of sugar, beaten until firm, dry foam gradually. Grease a baking dish with butter, sprinkle with breadcrumbs, put the curd mass and send to bake at 190 ° C for 1 hour.

How to paint eggs for Easter

The egg is one of the main Easter symbols. Biblical legend says that Mary Magdalene approached Emperor Tiberius and declared that Jesus was resurrected! Jelly eggs

I already thought about it and made a menu, which I will share with you today.

Of course, the festive menu always starts with salads. It is best to keep them light so as not to stress your stomach too much after fasting.

They can be beautifully thematically decorated for various Easter attributes. In the recipes below, I'll show you how you can style them.

Egg-shaped salad

For example, you can make one that is easy and quick to prepare.

Ingredients:

  • Boiled potatoes - 3-4 pcs.
  • Boiled eggs - 5 pcs.
  • Canned corn - 1 can
  • Chicken breast (you can take fillet) - 1 pc.
  • Boiled carrots - 2 pcs.
  • Mayonnaise
  • Greens

Cooking method:

Boil and peel potatoes, carrots, eggs in advance. Boil the chicken breast until tender, about 40 minutes.

1. Grate boiled vegetables (I prefer fine ones, but it doesn't matter what you want, it doesn't matter). In boiled eggs, separate the yolks from the proteins and grate them separately.

2. First separate the boiled chicken breast from the bone (if you have a fillet, then it is already boneless) and cut into small cubes.

3. Begin to lay out the salad. The first layer consists of potatoes, lay out in the shape of an egg and tamp a little with your hands.

4. Lightly coat with mayonnaise, as in the picture.

5. Now lay out the next layer - the sliced ​​chicken breast.

6. The breast should also be slightly smeared with mayonnaise.

7. Spread a layer of corn on top, but not all - leave some for decoration.

8. Lay a layer of carrots on top of this. All this, as before, align with your hands in the shape of an egg. Again, coat with mayonnaise as well.

9. Now sprinkle with grated yolk on top.

10. And finally, lay out the last layer of proteins, then begin to decorate the salad.

11. Once again tamp it tightly into an oval shape and decorate with corn and herbs of your choice.

12. Be sure to put it in the cold for two hours, and then it will be ready to use.

Our salad looks cute, it is quick and easy to prepare, and the taste is divine.

As if "Easter cake"

We will prepare this salad in the shape of an Easter cake. It is mixed during the cooking process, so it is not necessary to follow the sequence.

Ingredients:

  • Canned fish - 1 can
  • Boiled egg - 1 pc.
  • Tomato - 1 pc.
  • Bulgarian pepper - 1 pc.
  • Boiled potatoes - 1 pc.
  • Breadcrumbs
  • Olives

Cooking method:

Ingredients:

  • Boiled potatoes - 2 pcs.

  • Champignons - 300 gr.
  • Boiled pork - 300 gr.
  • Grated cheese - 200 gr.
  • Mayonnaise, vegetable oil.

For decoration:

  • Quail eggs
  • Parsley

First you need to prepare all the products for the salad:

1. Boil meat, potatoes and eggs in advance, cool and peel. Then chop the mushrooms, grate boiled potatoes, eggs and raw carrots.

2. Grate the cheese, cut the boiled meat into small pieces, fry the mushrooms and carrots in a pan.

Well, the products are ready, you can start putting them in the salad bowl:

1. Place a glass in the center on a dish and put potatoes around it, compact and level.

Adjust each layer with a spatula, spoon or hands so that everything is evenly laid.

2. Then add the fried mushrooms.

4. The next layer is boiled and chopped meat.

5. Now grease with mayonnaise. Help yourself with a fork or spatula.

6. Put grated eggs on the next layer, brush with mayonnaise again.

7. The last layer consists of grated cheese.

8. Carefully remove the glass from the center.

2. Add sausage, cucumber and herbs to the cabbage. Mix everything thoroughly and let stand a little.

3. Then season with mayonnaise, stir and you're done.

It is very simple and very quick to prepare it.

Spicy beetroot salad with horseradish

It is also considered a traditional Easter dish on the festive table.

Boil the beets in advance, boil it for about an hour, cool and peel.

Ingredients:

  • Boiled beets - 3 pcs.
  • Horseradish roots - 2 pcs.
  • Sour cream - 4 tbsp. spoons
  • Mayonnaise - 4 tbsp. spoons
  • Sugar - 3 tbsp. spoons
  • Vinegar - 2 tbsp. spoons

Well, after eating salads, you can proceed to the jellied dishes. With jelly, perhaps now you will not surprise anyone. You have to show your imagination and think about what else you can surprise the guests with. I found some pretty original solutions.

Jellied "Faberge egg"

A very beautiful and original appetizer. It is perfect for other holidays as well.

We need:

  • Meat broth - 1.5 cups
  • Eggs - 10 pcs.
  • Ham - 150 gr.
  • Bulgarian pepper - 1 pc.
  • Peas - 1 can
  • Corn - 1 can
  • Greens
  • Gelatin - 15 gr.
  • Soda solution - 1 tablespoon per 1 liter of water

1. First, there are 2-2.5 cm holes in the eggshells, pour the contents of the eggs into a separate bowl (then make an omelet out of them, they will not be needed in the recipe). Then dip the cleaning shell in a soda solution for disinfection for half an hour, then dry it on a towel.

2. Cut the ham into small cubes.

3. Then cut the bell pepper into cubes.

4. Now, in turn, put a leaf of parsley in each shell, then a few pieces of pepper, sausage, corn and peas.

5. Dissolve the gelatin in the broth and stir until completely dissolved. Then we pour it through a strainer into a glass with a spout, so that later it is convenient to pour it.

7. Then take it out of the cold and gently peel off the shell.

8. Put peeled jellied eggs on a dish.

  • Horseradish - 1 teaspoon
  • Carrots - 1 pc.

  • Pickle from cucumbers - 1 teaspoon
  • Salt pepper
  • Peppercorns, dill - for decoration.

Boil carrots and eggs and peel in advance.

  • Mustard - 2 teaspoons
  • Raw egg - 1 pc.
  • Boiled eggs - 3-4 pcs.
  • Heavy cream - 200 ml.
  • Salt - 1.5 teaspoons

Cooking method:

1. Grind meat, onion and garlic in a meat grinder. Add seasoning to the minced meat.

2. Add the mustard and crack the egg.

3. Pour half of the cream into the minced meat.

4. Salt and mix everything until smooth.

5. Place the parchment in the mold and fold 1/3 of the minced meat.

6. Place boiled eggs in the middle (as many as fit).

7. And put the rest of the minced meat on top. Smooth and place in an oven preheated to 190 degrees for one hour.

8. When taken out of the oven, cover with foil for 10-15 minutes to absorb the juices. And it will become juicy.

9. This roll is served both hot and cold.

Ingredients:

  • Minced meat - 650 gr.
  • Potatoes - 4 pcs.
  • Boiled eggs - 5 pcs.
  • Cheese - 150 gr.
  • Onions - 3 pcs.
  • Garlic - 3 cloves
  • Salt, seasonings, spices to taste
  • Mayonnaise
  • Vegetable oil

Cooking method:

1. Dice the onion and sauté until soft.

2. Salt and pepper the minced meat, add spices and grated garlic. To mix everything.

3. Grate boiled eggs, salt, add mayonnaise and mix.

4. Make cakes from minced meat and place on a greased baking sheet.

5. Place the fried onions on top of the tortillas.

6. Put grated eggs on the onion.

7. Then grate raw potatoes, salt and stir.

9. Top with grated cheese and brush with mayonnaise.

Ingredients:

  • Flour - 400 gr.

  • Cottage cheese - 300 gr.
  • Sugar - 1 glass
  • Milk - 100 ml
  • Soda - 1 teaspoon
  • Vanilla sugar - 1 teaspoon
  • Candied fruit
  • Butter - for lubricating molds

For glaze:

  • Powdered sugar - 100 gr.
  • Eggs (only protein) - 2 pcs.
  • Lemon juice - 1 tbsp. spoon.
  • Confectionery sprinkles

Cooking method:

1. Add sugar and milk to the curd, mix until smooth. Then add the beaten eggs, vanilla sugar and lemon-slaked baking soda. Mix everything well.

2. Then add flour there in small portions and stir, then put candied fruits and mix again. Now grease the molds with butter and put the dough there up to about half.

3. Place in the oven over low heat for one hour. Then we increase the temperature to 180 degrees and bake for another 45 minutes. When we take it out of the oven, let it stand a little, cool down.

In the meantime, let's do the icing:

Beat the egg whites until foamy, then add the powdered sugar and lemon juice there and beat until the consistency of sour cream.

The glaze hardens quickly, so you need to cover it right away. Liberally grease the cakes with icing and cover with confectionery sprinkles.

Ingredients:

  • Flour - 2 cups with a hill
  • Butter - 100 gr.
  • Granulated sugar - 180 gr. (slightly less than a glass)
  • Eggs - 2 pcs.
  • Vanilla sugar - 1 tablespoon
  • Salt - 0.5 teaspoon
  • Baking powder - 1 teaspoon
  • Confectionery sprinkles.

For glaze:

  • Egg white - 1 pc.
  • Powdered sugar - 1 glass
  • Lemon juice - 1 tablespoon

1. Mix butter with sugar and beat.

2. Then add the egg and continue beating.

3. Separately mix flour with salt, vanilla sugar and baking powder.

4. Add the dough to the mixed mass in parts and mix.

5. Then put it on a board and knead it with your hands in an elastic elastic dough, put it in a plastic bag and put it in the refrigerator for half an hour.

6. Then we take it out of the refrigerator and divide it into two parts.

7. Roll out each piece on a board and squeeze out the cookies with a mold.

8. Place parchment paper on a baking sheet and place the cookies there. Insert a wooden stick into each cookie. Preheat the oven to 180 degrees and place the baking sheet in there for 10-15 minutes, until they are lightly browned.

11. Squeeze the juice out of half a lemon. Stir a little more.

12. Add the icing sugar and stir again until creamy.
