Preparation:

2. The dough should be covered with cling film and left for 1 hour at room temperature. An hour later, our dough has already risen a little, sprinkle flour on the table, put the dough on it and knead it very thoroughly again.

3. Roll out the dough thinly on a board, sprinkle it with a little flour so that it does not stick to your hands, and spread it on a baking sheet (you can lay it on parchment paper or just grease it with oil).

4. Mix the grated tomato with tomato paste and dried or fresh basil.

  • ketchup - 2 tablespoons;

Place a pound of wheat flour in a large container. You need the most common wheat flour, but the main thing is that the protein in it should be at least 13%. Add 15 g of salt, 7.5 g of sugar (the ratio, as you noticed, 2: 1), and 40 g of olive oil. Better not even extra virgin, but refined, so that the dough does not smell much and does not taste bitter. Then pour 250 ml of room temperature water into the mixture and start mixing - you need a mixer with a hook attachment. The dough must be kneaded at low speed. After the start of the kneading, you need to add yeast. But they cannot be added together with salt, then they will not start working at full strength. Therefore, first stir the dough until smooth so that there are no lumps, and only then add 3.75 g of yeast there and continue kneading until the dough becomes elastic. Why low speed is needed: so that the temperature of the dough during kneading does not increase too much. We need it not to heat up above 22 degrees, otherwise the yeast will start working quickly, the dough will turn sour, and this will not be very good.

After five minutes in the kneader, the dough is ready. Many add dry aromatic herbs to it, but you cannot overdo it with this, otherwise the dough will begin to dry out - the herbs will take water into themselves. Or, if you want to add them, you can slightly increase the volume of water. After the dough is ready, we must knead it slightly, bring it into a homogeneous state. Divide the dough into 200g pieces: this is just right for a pizza that fits the size of a regular home oven. If you have a very small one, you can form a ball weighing 150 g or even 120 g: the main thing is that the pizza comes out very thin.

Form a pizza ball out of the dough. From the total volume of the dough, we got about four such balls and another small piece. Divide this dough into the most common plastic bags so that the yeast starts its work. The cling film is not good for this, it will tear when the pizza ball starts to grow. Set the dough aside for an hour and a half.

The readiness of the dough can be checked using a cook's needle, which shows the temperature of the product: it should be 23 degrees. If you do not have such a needle, then you will still understand whether the dough is ready or not - it will noticeably increase in volume. The dough can now be rolled out.

First, let's prepare the Margarita pizza. For this we need mozzarella and tomato sauce.

Mozzarella must be taken solid, with a fat content of no more than 40%, otherwise oil will drip from the finished pizza. You don't need to grate the mozzarella. Cut it into pieces the same thickness as the dough so that the cooking time of the dough coincides with the melting time of the cheese. If you follow this rule, then the mozzarella will drag on - and everyone is always waiting for this. Mozzarella stretches when it doesn't boil over. As for the tomato sauce: I do not recommend taking ordinary tomato paste, I advise you to take ready-made tomato sauce for pizza, which has already been added with herbs. Who doesn't like it - you can buy just tomato, without herbs. And regular tomato paste is very acidic, and this can lead to heartburn.

Sprinkle flour on the table. Remove the dough ball from the bag. It is better to roll the dough with your hands, but if you can't, take a rolling pin. True, this is not very good - the carbon dioxide that you have collected in the test will go away after using the rolling pin, which is great for focaccia, not for pizza. So stretch the dough into a circle with your hands, it's not difficult: first knead it, making the pizzaball flat, and then stretch from the center to the edges. It will be easier to stretch if you hang the edge of the circle off the table and expand it while moving clockwise around it.

After you have formed the base for the pizza, rest the dough for a minute. After that, stretch the dough a little again and rid it of the excess flour.

7.

Take a wooden board and sprinkle it generously with flour - this will be a replacement for a pizza shovel. Put the crust on it: this is the name of the base of the pizza after the pizza ball is rolled out.

Spread one and a half tablespoons of pizza sauce evenly over the crust.

Arrange the cheese on the pizza so that it is on each future piece. Here's an easy way: first lay out the cheese crosswise, and then add pieces to the sectors between the resulting lines.

Of course, it is best to use a pizza stone for baking, but if it is not there, it does not matter. Take a regular baking sheet, wrap it in parchment, turn it upside down and put it in the oven.

Preheat oven to 250 degrees. Best in convection mode, with upper and lower shadows on; this is necessary to increase the heating zone.

Gently transfer the pizza from the board to the baking sheet and bake for 5 minutes.

Remove the finished pizza from the oven, transfer to a plate and serve on the table.

The pizza is ready, you can already eat it, but it is better to add some more dry herbs. Take, for example, Italian Herbs or oregano, and sprinkle on the pizza.

Cut the pizza into eight pieces. Check its readiness - the tip of the piece should be straight and not fall off.
