Peel the potatoes, cut them into quarters, fill them with water and cook over medium heat. Do not add salt at this stage of cooking.

For the filling, we need about 350 g of minced meat, mine is pork, but you can use any meat for the filling - beef, chicken, turkey or mixed mince. In general, any meat found in the freezer is perfect as a filling for potato rusks.


But for the filling we also need carrots and onions.

Peel a small carrot or half a large (my option) and cut into small cubes. In general, you can use a grater or grind with a blender. Chop the onion finely.


Add a little sunflower oil to a preheated pan and fry the carrots and onions first until fully cooked (about 3 minutes over medium heat with frequent stirring), and then add the minced meat and continue to fry the meat filling for zaz until the meat is fully cooked. Minced meat during frying should be broken with a spatula into smaller components. First, it will turn pale and let in a small amount of juice, then the meat juice will evaporate and the grains of minced meat will lightly brown. This will mean that the filling for the zraz is ready.

Salt and pepper the meat filling to taste.


We wait until the potatoes are fully prepared and drain off all the remaining liquid.


Crush mashed potatoes. We are waiting for it to cool down a little and then add three tablespoons of flour and an egg, and salt the potato dough to taste.


We continue to stomp the potato dough (mashed potatoes) until smooth.


Pour 2-3 tablespoons of flour into one deep plate, and the same amount of bread crumbs into the other.

Preheat the pan and add sunflower oil (about 20 ml, but add a little more oil once cooking).

1. Peel the potatoes, cut them into small cubes. Fill with water, put on fire and boil until cooked for 20-25 minutes. Then knead in mashed potatoes and cool slightly. Potatoes can also be boiled in their "uniform".

2. Finely chop the onion for the filling. Fry it in a well-heated skillet in vegetable oil, stirring constantly, for 3-4 minutes. The onion should become transparent or acquire a golden hue, as you like.


3. Put the minced meat on the onion. You need to fry it for 10-15 minutes until fully cooked, salt and pepper. So that the minced meat is crumbly and there are no lumps in it, we cook it constantly stirring.


4. Boil the eggs in advance. Chop them and add to onions and minced meat. Mix and the filling is ready. To add piquancy to the filling, you can add coarsely grated pickled cucumber to it.


5. In mashed potatoes add semolina, butter (preferably softened, at room temperature), an egg (if yours is not large, you will need to add 2 small ones) and seasonings (salt, pepper). If desired, grated cheese can be added to the potato dough.


6. Knead the potato mass well and divide it into 8-10 parts. Roll each part into circles with a diameter of 10-12 cm and a thickness of about 1 cm. Put 1 tablespoon in the center of each circle. fillings. We form zrazy by lifting and sticking together the edges of the potato cake so that the filling remains inside. We give the shape of the cutlets.


7. Fry the prepared cutlets in vegetable oil (you must first heat the pan well) on both sides until golden brown. Before frying, they can be rolled in breadcrumbs so that they turn over better and do not fall apart.

  1. First, I am preparing the filling for the zraz. Cut a large onion into cubes and sauté in vegetable oil. As soon as the onion becomes soft, add minced meat to the pan, salt and pepper to taste. I fry until the minced meat is fully cooked.

  2. I interrupt the fried meat with onions in a blender - such a simple technique will make the filling homogeneous and completely rid it without lumps. If you don't have a blender, you can use a meat grinder.

  3. Simultaneously I boil potatoes. I cook it in a standard way, like a regular puree. Peel, cut into quarters and boil in salted water until tender - 20 minutes from boiling.

  4. I drain all the water and knead it in puree with a pestle. I drive an egg into a warm, but not too hot mashed potato, add sifted flour (1 tbsp. = 250 ml), add a pinch of nutmeg for flavor.

  5. Stir vigorously, first with a spoon, and then knead it again with a pestle, as if kneading the dough. The potato mass should be sticky and smooth.

  6. While the "dough" is warm, I quickly form zrazy: I scoop up the puree, knead it into a cake with my hands, put the filling in the center and pinch the edges so that the minced meat is inside. You do not need to add flour. It is enough just to dip your hands in water or oil - and the zrazy will be very easy to form. If you add too much flour, then the zrazy will turn out to be "clogged", not as tender and soft as we would like. It is most convenient to sculpt in the hands by weight (like dumplings). If this is so difficult for you, you can put the potato tortilla in a greased plate, then place the minced meat in the center, cover with a second tortilla and pinch the edges.

  7. I breaded the zrazy in breadcrumbs and put it on a baking sheet lined with parchment (oiled). Due to the breading, they will turn out to be more ruddy in the oven, with a crust. If you do not want to make the dish heavier with breading, you can grease the zrazy on top with loose yolk - then they will be ruddy, but not crispy.
