Chop the onion. It is better if the pieces are very small, so that after cooking they do not stand out in the meat and do not crunch on the teeth.

Rub the carrots on a fine grater.

Chop the garlic. If you don't like it, you can leave it alone, but then the dish will lose some of its flavor.

We take minced pork / beef, and if you want the meatballs to be more dietary, then chicken or turkey will do.

Boil rice until half cooked, 10 minutes, then drain the water. You can choose either round grain or long grain rice, whichever you prefer.

Put the egg there, salt, pepper, add spices to taste.

Mix everything into a homogeneous mass. You should get a beautiful, fragrant minced meat.

We begin to form the meatballs.

We collect the minced meat with a tablespoon and roll a ball out of it between the palms. They should be the same size so that it does not happen that some of them are already ready, and too large ones remain raw.

Fry until golden brown.

Put the fried balls in a separate saucepan.

It's time to make tomato sauce. To do this, place the chopped onion in a pan, fry until soft and light golden brown.

Then add the carrots, and together they should simmer until the carrots are soft.

Mix the tomato paste with sugar and place in a frying pan. Stir and simmer for another 3-4 minutes.

Pour boiling water into the frying 1-3 cups, at your discretion. If you add less water, the sauce will be thicker and less.

If you add more water, then the sauce will be more and it will turn out to be more liquid.

Bring the sauce to a boil and add paprika, pepper, salt and bay leaf to it. Let it boil for 5-7 minutes.

Pour the meat balls with the prepared sauce and simmer all together under a lid over low heat for 30 minutes.

Put the finished ones on a dish, pour over the sauce and sprinkle with fresh herbs.

Meatballs- a dish made from minced meat in the form of balls, and you can use any minced meat to your taste. Meatballs differ from cutlets only in that rice is additionally added to them. Many housewives also call meatballs - hedgehogs, precisely because during cooking the rice grows and the meat balls become like hedgehogs, as rice sometimes sticks out of the cutlets. For example, I really like meatballs more than cutlets. Because they taste much softer and it seems to me that it tastes better.

Meatballs can be cooked in small balls or vice versa, making the forms large, but this is solely for your taste and habit. In our family, meatballs are made in a large ball, about the same size as the meatballs. To, as they say, put the meatballs with a side dish and immediately gorge themselves to the dump. Sometimes, if necessary, meatballs can be frozen and, if necessary, cooked by simply boiling them in broth or making them in gravy. The gravy can also be very different, creamy or vice versa - tomato. Each housewife does everything the way her household loves. Today we will cook homemade meatballs with rice in tomato sauce.

Would need:

  • Minced meat - I have homemade pork - 1 kg. (with the addition of lard, onions, garlic, eggs, salt and ground black pepper to taste)
  • Rice - 1.5 cups (semi-cooked boiled)
  • Salt and black pepper to taste
  • Egg - 1-2 pcs.
  • Water - 2-3 glasses
  • Flour - 2-3 tbsp. without top
  • Tomato paste (ketchup) - 3-5 tablespoons
  • Sour cream - 2 tablespoons (optional)
  • Bay leaf 1-2 pcs.
  • Vegetable oil

How to cook meatballs with gravy in a pan:

We make minced meat. I use homemade pork and interlayers (lard). I also roll 1-2 onions and 2-3 cloves of garlic into the minced meat.
I add salt and freshly ground black pepper to taste. I drive in eggs.
Separately boil rice until half cooked and pour 1-1.5 cups into the minced meat.
I stir it.

Minced meatballs are completely ready. Pour water into a saucepan or deep frying pan, slightly salt and bring to a boil. I twist the meatballs of the required size and put them in boiling water. I add bay leaves and let the meatballs simmer over low heat for 20-30 minutes. Descale if necessary.

Separately, I make a preparation for gravy from a glass of water with flour and dilute it well so that there are no lumps.
Here I add tomato paste to the flour water,
stirring.

When the cooking time is up, pour in the gravy mixture and let it boil.
During this time, the gravy should thicken. You control at this time the right amount of gravy and its density. Remember that the gravy will thicken as it cools, so don't try to add more flour to the water. Best of all, if the gravy does not become the required thickness, add a little more flour to a small part of the water and pour again into the gravy and bring everything to a boil again.

Be sure to taste the gravy and add salt if necessary, you can add different spices to taste. Meatballs with gravy are very tasty and tender. Both adults and children eat them perfectly.

Today the site "Culinary Eden" has collected and recorded for you the most important tips and little culinary secrets, coupled with proven recipes that will surely help even not very experienced housewives and tell you how to cook meatballs with gravy.

1. Without a doubt, the most common and popular meatballs can be safely called meatballs. Minced meat is prepared for them from one or two types of meat. Most often it is beef and pork. Of course, such minced meat is easiest to buy ready-made in the nearest store, but believe me, homemade minced meat made by yourself will turn out to be much tastier and will meet your requirements much more fully. To make minced meatballs, you need fresh, not too fatty meat. In order for your meatballs to turn out to be truly tender, pass the meat through the smallest grid of a meat grinder two or three times. Do not add eggs to the minced meat! The meatballs made from well-mixed minced meat perfectly keep their shape without them, but the eggs will certainly add unnecessary stiffness to your meatballs.

2. If you are going to cook meatballs in gravy, then you should definitely add rice to the minced meat, which will help preserve the juiciness and tenderness of the meatballs themselves, even after a long stewing in the gravy. Round or medium-grain rice is best suited for cooking meatballs. There is no need to cook it even until half cooked, as is often advised in recipes. It is much better to pour boiling water over thoroughly washed rice so that it completely covers the rice, leave for five minutes, and then rinse again in cold water. Such only rice cooked with boiling water perfectly retains all its absorbing qualities, which means it will keep for you all the most delicious and aromatic juices that will stand out from the minced meat during cooking.

3. In addition to rice and meat, fresh finely chopped onions must be added to the minced meat for meatballs, and, if desired, also garlic and coarsely grated carrots. All these vegetables will not only give your meatballs the necessary juiciness, but also add flavor and light sweetness. You can add your favorite spices, such as ground black pepper, nutmeg, cloves, cardamom and many others, to add a special flavor to your taste. You can also add some finely chopped herbs - parsley, dill, cilantro, basil. All these additives will allow you to fully express your imagination and make your meatballs truly yours, one of a kind, a dish that you can be proud of.

4. Having prepared all the necessary ingredients, you just have to knead the minced meat and mold meatballs from it. It is easy and difficult to do this at the same time. The thing is that the minced meat for the meatballs must be kneaded thoroughly. After collecting and mixing all the minced meat ingredients, knead it for at least 10 - 15 minutes. A well-mixed minced meat for meatballs should turn out to be dense, almost monolithic and in no case loose and crumbly. It is best to sculpt meatballs with hands slightly dampened in cool water. Simply pinch off small pieces of minced meat and roll them into a ball the size of a small apricot.

5. Before you pour your meatballs with gravy and leave to simmer under the lid, they must be fried. This will allow the meat to “grab” and retain its original shape, even after long braising. It is best to deep-fry the meatballs. Pour so much vegetable oil into a deep frying pan so that the balls of meatballs dropped into it are completely covered with it. Heat the oil over high heat and dip the meatballs in it for a couple of minutes until a light, homogeneous brownish crust forms. Remove the meatballs with a slotted spoon and place on a separate dish. It is this way of frying that will help you maintain the attractive round shape of the meatballs, and in addition, the boiling oil will instantly seal all the fragrant meat and vegetable juices inside your meatballs. If such a large oil consumption is not included in your current plans, then you can simply fry the meatballs in a pan with a small amount of oil over medium heat for three to five minutes on each side. In this case, your meatballs, of course, will lose their round shape, but they will remain all the same tasty and aromatic. The choice of frying method is yours.

6. The gravy in which you will stew your meatballs, not only gives them a special juiciness and softness, but also allows you to infinitely diversify the taste and aroma of the finished dish, because there are infinitely many recipes for various gravies. But there is one secret that unites them all - the gravy should be moderately thick. You can thicken the gravy with three ingredients: flour, tomato paste and sour cream, or very heavy cream. These ingredients can be used individually or all together to achieve the flavor you want. Just follow the recipe of your choice and you will succeed. However, avoid recipes that recommend thickening the gravy with starch, trust me, this gravy, more like a paste, will only ruin your dish.

7. Let's try our first meatballs with gravy. Pass 200 gr through a meat grinder twice. beef and 300 gr. pork. Chop one large onion finely. Brew with boiling water and lightly dry ½ cup of round rice. Combine all ingredients, salt and pepper to taste. Knead the minced meat thoroughly and form into small meatballs. Deep-fry the meatballs in small portions (two minutes each) or in a little oil in a skillet for 3 to 5 minutes on each side. Transfer the finished meatballs to a deep frying pan, greased with oil. In a glass of hot water, dilute 1 tbsp. a spoonful of tomato paste and pour over the meatballs, add a couple of bay leaves, cover the pan with a lid and simmer over medium heat for 10 minutes. Meanwhile, mix ½ cup lukewarm boiled water, 3 tbsp. spoons of sour cream, 1 tbsp. a spoonful of flour, ¼ a spoonful of black pepper and salt to taste. Pour the sour cream mixture into the skillet with the meatballs, cover and gently, in a circular motion, shake the contents of the pan so that the gravy components are mixed. Return the skillet to low heat and simmer your meatballs for another 20 minutes at the lowest simmer. Remove the finished meatballs from heat and let it brew for another 10 minutes. Sprinkle with chopped parsley before serving.

8. Spicy lamb meatballs turn out fragrant and very tasty. Prepare minced meat from 400 gr. lean lamb, ½ cup boiled rice, one chopped onion, two chopped garlic cloves, 1 tbsp. tablespoons of chopped cilantro or parsley, ½ teaspoon of ground coriander, ½ teaspoon of ground cumin, salt and pepper to taste. Form the meatballs and deep-fry them or in a skillet. Prepare the gravy separately. Heat 3 tbsp in a skillet. tablespoons of vegetable oil, add one chopped onion and fry until golden brown. Then add three minced garlic cloves, finely chopped small seedless chili, 1 teaspoon of paprika and 1 teaspoon of cumin. Heat everything together, stirring constantly, for one minute. Put the fried meatballs in a greased baking dish, cover with the prepared gravy, cover with foil and bake in an oven preheated to 200 ° for 20 minutes, after the time has passed, remove the foil and bake your meatballs for another 10 minutes.

9. It is very easy to cook tender and delicious chicken fillet meatballs in mushroom gravy. Soak two slices of white bread without a crust in a little milk and squeeze. Pass through a fine grate of a meat grinder 500 gr. chicken fillet without skin. Chop one small onion finely. Combine bread, minced chicken and onion, add 1 tbsp. a spoonful of chopped dill, salt to taste. Knead the minced meat thoroughly and form into small meatballs. In a deep skillet, melt 3 tbsp. tablespoons of butter, add one chopped onion and fry until transparent, then add 400 gr. fresh or frozen wild mushrooms and sauté, stirring frequently, until all moisture has boiled away and the mushrooms are lightly browned. Then add 2 tbsp. tablespoons of flour, mix, pour in 250 ml. boiling chicken broth, 50 ml. dry white wine and 3 tbsp. tablespoons of fat (30%) cream. Stir, bring to a boil, and then reduce heat to lowest. Dip the chicken meatballs into the hot mushroom sauce, cover and simmer over low heat for 20 minutes.
