Minced meat roll with mushrooms in the oven - the basic principles of cooking

The taste of the dish mainly depends on the quality of the minced meat. Of course, you can buy a ready-made product, but it is better to make it yourself from fresh meat. This can be pork, beef or chicken. To make the minced meat homogeneous, it is passed at least twice through a meat grinder with a fine grid. For juiciness, add onions or lard to it. Herbs and spices will make it fragrant. Minced meat for a roll should keep its shape well, therefore, eggs, starch or flour are added to it as a binder. The minced meat is thoroughly kneaded with your hands, lightly beating it on a bowl.

The filling is made from mushrooms, onions and other vegetables. Mushrooms can be any: oyster mushrooms, champignons, porcini or other forest mushrooms. The product is cleaned and washed to remove sand and dirt. Cut into chunks and fry with onions in hot oil until lightly browned. The filling can be varied by adding cabbage, potatoes, cheese or boiled eggs to it.

The minced meat is laid out on cling film in an even layer of the same thickness. Mushroom filling is spread on it and wrapped in minced meat using a film in the form of a roll.

Meatloaf is baked at 180 degrees for about half an hour. Serve the dish, cut into portions.

- 1 chicken egg,
- 70 gr. champignons,
- 1 onion,
- 2 tbsp. l. vegetable oil,
- 1 tsp. salt,

- 1/5 tsp ground coriander,
- 2-3 sprigs of fresh herbs,
- 1/5 tsp dried rosemary
- ½ tsp sesame,
- ½ tsp flax seeds.

How to cook from a photo step by step

For minced chicken, it is best to take red chicken meat, that is, cut from the thighs or drumsticks. If you decide to use chicken breast, which is easier and faster, then it would be better to add a piece of bacon to the minced meat - so that the roll is juicier. You can also twist a large onion with the meat. Of course, you can always buy ready-made minced meat, but it is preferable to cook it at home. Beat the chicken egg into the minced meat.

Peel a large onion and chop finely. Wash the mushrooms and chop finely as well.

It is convenient to use cling film. Spread the minced chicken on the foil, giving it a square or rectangular shape.

Fry mushrooms with onions in vegetable oil until half cooked or fully cooked - 10 minutes on low heat. Place the fried mushrooms and onions in the center of the minced meat layer. This will be the filling.

Using cling film, gently roll the minced chicken into a roll, giving it its final cylinder shape. You can try to close up the edges or leave them as they are.

A baking dish can be covered with foil, and greased with vegetable oil. Carefully transfer the minced meat with mushrooms into the mold.

Sprinkle the roll with dried herbs on top - thyme, rosemary, ground coriander, sesame seeds and flax seeds. Send the form to an oven preheated to 180 degrees. For the first 20 minutes, the roll can be covered with foil or a lid, and then baked for another 15 minutes so that it is slightly browned on top. I suggest you cook this one too.

Remove the finished roll from the oven, let cool slightly, and then you can cut and serve. A dish with a roll can be decorated with fresh herbs, vegetable slices.

Unforgettable salt and pepper if desired (I used mushroom seasoning).
Then add chopped greens, mix and leave to cool.

And in the meantime, we cut the cheese into small cubes.

And we begin to prepare minced meat (I have pork, but you can use any): we put it in a deep bowl and drive eggs there, salt, pepper, or add other spices and herbs if desired.

Mix everything thoroughly.

And we begin to form rolls.
To do this, we spread cling film on the table (instead of film, you can use foil for baking) and lay the minced meat on it, giving it the shape of a rectangle 0.5 cm thick.

Then put the fried mushrooms and onions on the minced meat.

And on top of the mushrooms we put cheese cubes.

Then we take the end of the film and roll up our blank.

As a result, such a roll is obtained.

Next, we release it from the film (this must be done carefully, since the minced meat sticks to the film).

And carefully cover the seam and ends of the rolls so that they do not fall apart during the cooking process.

Prepared rolls can be baked in the oven or simply fried in a pan.
But I decided to give them some flavor and fry them in sesame seeds.
To do this, you need to prepare an egg mixture: break the eggs into a deep bowl, add spices and whisk lightly with a whisk.

Next, dip each roll into the egg mixture.

And then into sesame seeds.

And we put them in a frying pan preheated with vegetable oil.

Fry on both sides until golden brown.

Put the finished rolls on a paper towel to get rid of excess fat, and then on a plate.
And without waiting for the dish to cool down, serve it to the table.

The rolls are very tasty and juicy, and the sesame seed crust gives the dish a spice.
