Cottage cheese is a healthy fermented milk product that must be in the diet of every person. Thanks to baking, the dishes are less nutritious, and the nutrients are preserved as much as possible.

Ingredients

  • 300 g of cottage cheese of any fat content;
  • 100 g of premium flour;
  • egg;
  • sugar to taste.

A step-by-step recipe for making curd cakes in tins in the oven

Put the cottage cheese in a cup, mash it well with a fork, achieving a homogeneous mass. Add granulated sugar and beat in an egg. Rub it all together well.

Grind the flour through a sieve and add to the curd mass. Knead until a homogeneous curd mass is obtained.

Get silicone muffin cups. Pour the curd dough into each, filling it two-thirds. Preheat the oven to 180 degrees. Place the molds in it and bake for 20 minutes.

It is not necessary to lubricate silicone molds with oil. Serve curd cakes with condensed milk or sour cream. For flavor, you can grate the zest of an orange or lemon into the dough.

Option 2. A quick recipe for curd cakes in tins in the oven

This recipe will appeal to those who adhere to the principles of a healthy diet. The cheesecakes are tender and airy. The baking process allows you to cook without excess fat, which significantly reduces the calorie content of the dish.

Ingredients:

  • a bag of baking powder;
  • 200 g of cottage cheese;
  • 50 g of drain oil;
  • 75 g granulated sugar;
  • 75 g semolina;
  • a pinch of vanillin;
  • two chicken eggs;
  • 125 g sour cream.

How to quickly cook curd cakes in tins in the oven

Put the cottage cheese in a deep bowl. Add sugar, add vanillin and beat in eggs. Kill everything with a mixer at low speed.

Add soft butter, sour cream, baking powder and semolina to the curd mass. Mix everything thoroughly with a wooden spatula.

Spread the dough over silicone molds, leaving about a centimeter of free volume. Place the molds in an oven preheated to 200 degrees for 20 minutes. Cool the prepared cheesecakes.

The molds can be lined with special paper blanks. So it will be more convenient to serve and eat them. Dried fruits or nuts can be added to the dough for a change. The density of the pastry depends on the amount of sour cream, the less you add it, the denser the curd cakes will turn out.

Option 3. Cheesecakes in tins in the oven with apples

The dough for cheesecakes according to this recipe turns out to be quite liquid, so they are prepared in special silicone or metal molds. Apples will make baked goods flavorful and juicy.

Ingredients

  • 3 g of table vinegar and soda;
  • cottage cheese of any fat content - 250 g;
  • 30 g sour cream;
  • large sweet apple;
  • vanillin - a bag;
  • chicken egg;
  • semolina and sugar - 50 g each

How to cook

Combine all dry ingredients in a deep bowl. Drive in an egg and stir thoroughly. We extinguish the soda with vinegar in a tablespoon and put it in a bowl.

Wash the apple, wipe it with a napkin, cut it in half and remove the core. Do not peel the fruit from the peel. Apple pulp into small cubes. We send to a bowl with a mixture of dry ingredients and eggs.

Knead the cottage cheese with a potato crush and put it in a bowl with other ingredients. Mix everything until smooth. We distribute the curd mass into the molds, leaving a little free space for lifting. We coat the surface of the dough with sour cream.

We heat the oven to 180 degrees. We put the molds on the middle level and bake for an hour.

Remove the pancakes from the mold only after they have completely cooled down, otherwise the products will crumble. To keep the apple pieces in shape, do not peel the fruit. You can add a pinch of cinnamon to the dough for flavor.

Option 4. Cheesecakes in molds in the oven with nuts without eggs

Cheesecakes according to this recipe are prepared without adding eggs, so they can be served to those who are allergic to this product. For nutritional value, nuts are added to the dough.

Ingredients

  • any nuts - 100 g;
  • vanilla sugar - sachet;
  • granulated sugar and semolina - 50 g each;
  • premium flour - 30 g.

Step by step recipe

You can use any nuts, depending on your preference. Peel them and lightly fry in a dry skillet. Chop the nuts. If you want to get not too small crumbs, put them in a bag and roll them out with a rolling pin. Use a blender to get a fine mixture of nuts.

Mash the cottage cheese with a crush or fork. Combine it with dry ingredients and stir thoroughly. Leave for 20 minutes for the semolina to swell.

Pour the ground nuts into the curd mass, mix again. Divide the curd dough into the muffin tins, lined with parchment.

Preheat the oven to 160 degrees. Put the molds with the dough in it and bake for a quarter of an hour, until golden brown. Serve curd cakes with natural yogurt or sour cream.

Syrniki with almonds or hazelnuts are especially tasty. Nuts can be fried or dried in the oven until golden brown. Stir constantly, otherwise the nuts will burn and give an unpleasant bitterness.

Option 5. Cheesecakes in tins in the oven with dried apricots

Dried apricots will make the taste of cheesecakes even richer. The baked goods are juicy and tender. Baking makes the dish healthier and less nutritious.

Ingredients

  • half a kilogram of cottage cheese of any fat content;
  • table salt - a pinch;
  • semolina and dried apricots - a glass each;
  • vanillin - a bag;
  • two eggs;
  • 4 g of baking soda;
  • 150 g granulated sugar.

How to cook

Rinse dried apricots under the tap. Place dried fruits in a deep bowl and cover with boiling water. Set aside for half an hour.

Lightly salt the eggs and whisk until fluffy. Put the cottage cheese in a separate bowl and rub it well with vanilla and sugar. Add beaten eggs to the curd mass, add semolina and soda. Mix gently. Leave the dough for about 20 minutes to swell the semolina.

Throw dried apricots on a sieve, put on a paper towel and pat dry. Cut the dried fruit into thin strips and add to the curd dough. Stir.

Divide the dough into the muffin tins, about two-thirds full. Send to an oven preheated to 180 C. Bake for forty minutes.

If eggs are contraindicated for you for health reasons, you can replace them with semolina or starch. These ingredients are excellent binder.

Option 6. Cheesecakes in molds in the oven with potatoes

Cheesecakes can be not only sweet, but also snack bars. Curds with potatoes are served with sauce. Cheesecakes can be an excellent side dish for meat, or served as an independent dish.

Ingredients

  • half a kilogram of fatty cottage cheese;
  • half a glass of sour cream;
  • eight medium-sized potatoes;
  • half a glass of flour;
  • two home eggs.

Step by step recipe

Peel the potatoes, wash them, chop them coarsely and place them in a saucepan. Fill with purified water and cook over medium heat until tender. Drain the potato broth and knead the vegetable with a crush until puree. Cool it down.

Put the cottage cheese grated through a sieve into the chilled mashed potatoes, drive in the eggs and add the sifted flour. Season everything with salt and pepper. Stir well. If the dough is thin, add a little more flour.

We lay out the curd-potato dough on the muffin tins. Preheat the oven to 180 degrees. We put the molds on the middle level and bake for about an hour. Cool, carefully remove from the molds and serve, pouring sauce or sour cream.

You can use the mashed potatoes left over from dinner to make cheesecakes. The dish will turn out to be even tastier if you add greens and fried onions to it.

Hello everyone! I hope you have already been able to appreciate my buns, and if not, then you will definitely like today's cheesecakes!

My favorite recipes are distinguished by the main thing: simplicity in execution and low energy consumption.

I, as a person who loves delicious food, but lazy by nature, I prefer everything to be fast, simple, but tasty and beautiful.

So, if you also do not like to stand for hours at the stove, but you still want tasty treats, catch wonderful cheese pancakes with semolina in a silicone mold in the oven.

It will take you only 25 minutes to cook them, with a minimum of effort and food.

Silicone Mold Cheesecake Recipe Here is a list of the ingredients as we need them:

  • 2 eggs
  • 3 tbsp. l. granulated sugar
  • a pinch of vanillin (or a packet of vanilla sugar with natural vanilla)
  • 200 gr. curd
  • 5 tbsp. l. sour cream
  • 1 tsp baking powder
  • 3 tbsp. l. decoys

This is a recipe from the internet. I am an active user of social networks and subscribed to many culinary pages. Sometimes real masterpieces come across there. Yes, trying for the first time is always scary, but you are not in danger of failure, because I have already tried before you and will definitely tell you about all the pitfalls and my successful finds.

How we do:

  1. So, first, beat 2 eggs. I did it with a mixer, but also manually, with a fork, it turns out well too.
  2. Add 3 tablespoons of granulated sugar (I like it sweeter, so I added 3 and a half heaped tablespoons) and vanillin (or a bag of vanilla sugar).
  3. Next, add the cottage cheese to the mass, kneading it well with a fork to get rid of the lumps. I had dry, grainy cottage cheese so that the grains felt in the finished cheesecakes, but you can take fatter ones so that the cheesecakes are tender.
  4. Add sour cream, 5 tbsp. spoons (when sour cream was not at hand, I replaced it with yogurt and the cheesecakes turned out to be very tender and dietary), 3 tbsp. tablespoons of semolina (I added more so that the cheesecakes were more satisfying) and 1 teaspoon of baking powder.
  5. The dough is watery, slightly thicker than for pancakes. We pour it into silicone molds almost to the top, I have them in the form of hearts. And put it in the oven at 200 degrees, for 20 minutes. The original recipe specifies a temperature of 180-200 degrees. I've tried both. I liked the result more by 200 - they rise quickly and brown well. By 180 they were baked much longer and immediately fell out of the oven.

    One more thing about the molds. I have not tried this recipe in a large mold or metal, but my instinct tells me that the result will be different. So take advantage of the excuse and get cute silicone molds, like mine... By the way, I did just that, inspired by this recipe for cheesecakes in the oven.

Yes, I almost forgot: from this amount of products, I got only 7 cheesecakes weighing about 80 grams each. Of course, we did not have enough of them! Therefore, the next time I took already 500 grams. cottage cheese. It is very simple to calculate the proportions of other products: for every 100 grams of cottage cheese, add one egg, one spoonful of granulated sugar and semolina, two tablespoons of sour cream or yogurt (you can mix them), half a teaspoon of baking powder (be careful with this, do not overdo it) , and the amount of vanillin does not change.

You can also add cocoa or lemon zest to taste, but then it will be a completely different recipe.

Try it and you will succeed!

I'll be back soon with a recipe for a delicious red lentil puree soup that is cooked and eaten once or twice.

Fidan Amirbekova was with you.

Kisses to all. Goodbye to everyone.

And if you still have some cottage cheese left after those fluffy cheesecakes, you can check out this cottage cheese cheesecake.

  • cottage cheese (any fat content) - 1 pack;
  • flour - one table. spoon;
  • salt;

  1. Place the curd in a bowl.
  2. Put a raw egg, granulated sugar in it. Salt.
  3. Mash these ingredients thoroughly with a fork.

Advice! For the filling, you can also take jam, berries, condensed milk, chocolate.

Banana-flavored curd desserts

Crispy on the top and tender on the inside: cheese cakes according to grandma's recipe

Curds prepared according to this recipe always turn out tasty, high and appetizing in appearance. For them, a combination of products that is classic for such a dish was used. These baked goods will not be low in calories. To make the cupcakes soft and airy, you need cottage cheese, the fat content of which is at least 5%.

Ingredients:

  • granular cottage cheese - 500 g;
  • baking powder - half a bag;
  • sugar - 3 tablespoons. spoons;
  • thick sour cream - 4 tablespoons;
  • vanillin;
  • raisins - a handful;
  • eggs - 2 pieces;
  • icing sugar - 30 g.

Preparation:

  1. Fold the cottage cheese into the mixer bowl, add granulated sugar, add sour cream, vanillin and baking powder.
  2. Whisk these ingredients together (but not at the highest speed). You should have a homogeneous curd mass without lumps.
  3. Reduce the beating speed and beat the eggs into the dough.
  4. While continuing to beat, slowly add the semolina.
  5. Wash the raisins, soak them in boiling water for 3-5 minutes. Sprinkle the raisins with flour, put in the curd-semolina composition. Stir.
  6. Let the dough sit for about 20 minutes at room temperature. This is necessary for the swelling of the semolina.
  7. Turn on the oven. It should glow up to 180 °.
  8. Lubricate the molds with oil (we recommend taking olive oil).
  9. Fill them in (but not to the very top) with the prepared test.
  10. Place the curd cakes in the oven. Bake for 30 minutes. Test them with a wooden stick.
  11. Remove the pancakes from the silicone molds warm.
  12. Sprinkle them with powdered sugar on top.

How not to spoil the cheese cakes?

Cottage cheese is not a complicated dish, but capricious. Even when using the traditional set of ingredients, they suddenly do not come out as they should - they do not bake inside, do not fit, or turn out to be simply unpalatable. What did you do wrong? Here are three rules to help you bake creamy curd cakes.

Secrets of delicious cheese cakes:

  • Use quality (preferably homemade) cottage cheese 2 - 3 days fresh. It should not be too wet or too dry. Before combining the cottage cheese with the rest of the ingredients, mash it with a fork or grind it through a sieve.
  • Never remove the cheesecakes from the hot oven as soon as they are cooked! Let them "rest" for five minutes. Otherwise, they will immediately fall and lose all their beauty.
  • Beat the yolks separately and place them in the dough. This secret is used by experienced housewives to make rich, "fluffy" cheesecakes.

Cheesecakes in silicone molds in the oven are easy and quick to cook, and, as a rule, are eaten just as quickly. This recipe for cheesecakes is doubly wonderful - firstly, cheesecakes are prepared in a dietary way, baked in the oven, and not fried in oil in a pan. And secondly, they do not contain a single gram of flour. As a result, the cheesecakes are light and airy.

Taste Info Cheesecakes

Ingredients

  • Cottage cheese - 200 g;
  • sour cream 10-20% - 5 tbsp. l .;
  • chicken eggs - 2 pcs.;
  • semolina - 3 tbsp. l .;
  • sugar - 2 tbsp. l .;
  • baking powder - 1 tsp;
  • butter - for lubricating the mold.

How to cook cheesecakes in silicone molds in the oven

Prepare all the ingredients so that it is easier to cook and you are not distracted by looking for food in the refrigerator. For this recipe, I took cottage cheese from the store, with a fat content of 5%. But I do not get tired of repeating that the most delicious cheese cakes and casseroles are obtained from homemade cottage cheese, and if you have the opportunity, get just high-quality homemade cottage cheese.

Combine cottage cheese, semolina and sour cream in a deep bowl. If the curd is dry and lumpy, mash it with a fork until smooth. You can use a food processor, but I find it overkill - you will wash it longer than it will work.

Leave the contents of the bowl for 5-10 minutes for the semolina to swell and bind all the ingredients.

Carefully so that the yolk does not get into the whites, separate the egg yolks from the whites and mix the yolks with the sugar. The amount of sugar can be adjusted according to your preference.

Now pour the sweet yolks (the sugar in them should completely dissolve) into a bowl with cottage cheese, semolina and sour cream. Stir.

Whisk the remaining whites until peaks. Use clean dishes and a clean, fat-free whisk for whipping (if you mixed yolks with sugar with it, wash it thoroughly). You can also beat the egg whites with a mixer or hand blender. Gently mix the whites into the dough from bottom to top, so that the whites retain air and the cheesecakes are airy.

Do not go away from this step, because it is whipped proteins that give extraordinary tenderness and splendor to future cheesecakes.

Grease silicone baking tins with butter. To make the finished dish easier to get out of the mold, I always grease them, and then at the end of cooking you will not have any problems. Arrange the dough in the molds without filling them to the end, as the dough will rise slightly.

Place the cheese pancakes in the oven, preheated to 180 degrees, for 30 minutes. They will first rise, then lower a little and brown. As soon as the match, with which you pierce the dough in the mold, remains dry, you can take out the cheesecakes.

Remove the fruit casserole dish from the oven and let cool slightly at room temperature. Carefully remove the pancakes from their molds.

The airiness of the cheesecakes can be easily seen when breaking.

Sprinkle sugar cakes in silicone molds in the oven and serve them with sour cream or your favorite sauce.

By tradition, cheesecakes or curds are cooked in a pan. However, many chefs and tasters, most of whom are boys and girls of school and preschool age, do not at all like the fact that cakes made from cottage cheese, eggs and flour absorb a significant amount of the oil on which they are cooked. As an alternative, I propose to cook cheesecakes in the oven, and then decorate them with thick sour cream and fresh berries. And one more pleasant feature of this recipe - no sugar is added to the dough at all. Natural honey and berries will add sweetness to the cheese pancakes.

In this recipe, we will cook fluffy cheesecakes with cottage cheese in the oven, we will serve our cheesecakes with sour cream and decorate them with fruits, try it, you will be surprised how delicious it is.
Cooking time: 30 minutes.

How to cook fluffy cottage cheese pancakes in the oven

Put cottage cheese and eggs in a deep bowl. It is advisable to first wipe the cottage cheese through a sieve or mash thoroughly with a fork. Carefully combine cottage cheese with egg yolks + proteins.

Pour twice sifted flour into a bowl and add baking soda. Important: you do not need to quench soda with vinegar / lemon juice!

Gently mix all the ingredients (you can use a whisk) so that the result is a soft and loose dough for cheesecakes. The finished dough looks something like this:

Prepare a clean and dry muffin / cake pan. Lubricate each cell with unscented sunflower oil using a cooking brush. As an alternative to butter, insert paper muffin cups into the trays. Divide the cheesecake dough into about 12 pieces and spoon the dough into each compartment.

Bake curd products in an oven preheated to 220C for about 15-20 minutes. Cheesecakes will instantly rise, completely occupy the cells, and then quickly become ruddy-golden. Important: do not open the oven during baking!

Carefully transfer the prepared syrniki to a dish. There should be no drafts in the room. Cheesecakes baked in the oven look something like this:

Hot syrniki (outwardly similar to donuts) immediately pour thick sour cream.
Option number 2: If the curd cakes are immediately transferred from the oven to a wide enamel pan and poured over with thinner sour cream, and then cover and leave for 10-15 minutes, they will be soaked in sour cream and you will get a new culinary masterpiece!)

Garnish with cottage cheese pancakes on a plate under sour cream with fresh blueberries, red currants or cranberries. However, any medium-sized and fresh berry will do. Add liquid fragrant honey as the last drop.

Serve delicious and fluffy cheesecakes immediately after cooking on a platter or in portions. Warm curd cakes in the oven with sour cream and berries go well with hot drinks, and cold (if left over) can compete with the most refined desserts.

Recipe number 2. Diet cottage cheese pancakes in the oven in silicone molds

With a minimum dosage of a thickener - flour, without breading and any frying in a pan (and sometimes in a large amount of fat), we prepare cottage cheese pancakes of a new interpretation. A thin shell, surprisingly delicate center is achieved thanks to silicone molds and further baking in the oven. You can diversify dietary cheese cakes with dried fruits, candied fruits, nuts, chocolate chips, canned and fresh berries and fruits.

Ingredients:

  • cottage cheese - 200 g;

  • sugar, flour - 40 g each;

  • eggs - 2 pcs.;

  • berry platter - 50 g.

How to cook delicious cheesecakes in the oven:

Separate the yolks from the whites so that the second ones are whipped into a foam, introduced on their own and, as a result, get a delicate, soufflé-like texture of dietary cheesecakes.

Add fine-grained and not too dry cottage cheese to the egg yolks. Ideally, rub the fermented milk product through a thick sieve.

Add portions of granulated sugar and premium wheat flour. Mix thoroughly. If desired, the taste is enhanced with vanilla sugar, a pinch of salt, confectionery flavors.

In a fat-free container at the highest possible speed of the mixer, beat the separated proteins - transfer the protein foam to the curd mass last, mix in a circle until smooth.

Having previously greased with soft butter, we fill the portioned silicone molds with cottage cheese dough, immerse in the berry as a filling.
Also, our cheesecakes can be prepared in any cupcake molds, both hard paper and any other molds are suitable.
We bake diet cheese cakes on a baking sheet / wire rack in a hot oven for about 25-30 minutes at a temperature of 170 degrees.

After cooling a little, turn over the molds, remove the airy syrniki.

We serve homemade dietetic cottage cheese pancakes along with any fresh berries.

Cheesecakes in the oven are lush and non-nutritious, as they are cooked with a minimum amount of fat, cook them as an alternative to cottage cheese casseroles and regular frying pan pancakes.
