We love to travel. On duty, the husband has to travel often (Mikhail is the director of the branch of the Siberia PromInvest company. - Approx.The Village ). The tradition of starting the day with hot bread appeared abroad. From there we brought the idea to open our own bakery in Russia. Initially, we wanted to sell freshly baked rolls in vending machines. A man, waking up in the morning, in slippers goes downstairs to buy a warm croissant for breakfast - as we imagined it, but the idea turned out to be too expensive. Later we realized that the baking niche in Moscow restaurants was packed to the limit. But, despite the abundance of coffee shops, there are gaps in the dessert menu.


Forbidden desserts

We buy berries from Fruktova Poshta (a large importer of vegetables and fruits. - Approx. The village), we take most of the ingredients from the wholesale supplier "East-West" and on the market "Dorogomilovsky" - many Moscow restaurants are bought there. If cheese is added to the cake, it must be Italian mascarpone. If French cream comes to Tiramisu, then it would never occur to us to buy a House in the Countryside and just not tell anyone about it, although this would reduce the cost of the product five times. The imposition of sanctions has so far slightly hit business. Our suppliers have enough “prohibited” products in stock. Yes, prices for individual items have risen by 30%, but this still will not force us to abandon French and Italian ingredients. For the next three months, the stocks of our suppliers will be enough for us to maintain the required production volumes. Further we will solve problems as they come.

Stars "sell"

Zhenya previously worked in the club industry. She has preserved contacts of the stars of Russian show business. Our friend Pavel Volya became the first famous client. He shared a photo of the cakes on his Instagram. The actress Evelina Bledans reacted very violently to his post. Recently, VDNKh hosted an international exhibition - a kind of "bride show" where restaurant chefs come in search of new suppliers. We gave 60 thousand rubles for rent of five square meters for four days. But about 30 thousand visitors got acquainted with our products. We never spare money for such things.

"Millefeuille" and others

In our team, Zhenya is responsible for attracting new partners, Alexey is the manager, he solves all organizational issues, Mikhail is the financial director. Zhenya goes out to chefs and restaurant owners. Almost all of them use social media. If a potential client responds to the offer, Alexey organizes a tasting, introduces him to the production technology. Mikhail is responsible for concluding a supply contract with those who agreed to cooperate.

Today, Oyster Bar, La Terrasse, cafe "Uryuk", yacht club "Alye Parusa" constantly cooperate with us from large restaurants. Orders arrive at 22: 00-23: 00, at seven in the morning we already send a car with fresh produce. We are often compared to the Renardi cakes sold in Azbuka Vkusa. On average, a kilogram of Renardi costs 2,500 rubles, Sweet Craft desserts - 1,800 rubles, while the range and quality of ingredients are about the same.

About 95% of orders come from restaurant chains, the remaining 5% are private traders who contact us through the site or through word of mouth. Summer was wedding season, but we are selective about orders. In Russia, there is still the idea that a wedding cake should be decorated with flowers, curls, swans. We do not undertake such orders. At our wedding there was a Millefeuille cake. The guests ate it so quickly that the parents did not get a bite. To some extent, the decision to open a confectionery was made under the influence of that taste impression - we have never eaten anything tastier in our life. Today in our assortment "Millefeuille" is the most popular product, it is ordered most often.




"Not an oil well"

We spent 9 million rubles on the launch alone. Some of the funds are consumer loans, and some are investments of our friends. They went to repair the premises and purchase equipment. A machine for rolling out cakes, for example, cost us 340 thousand rubles, a refrigerator that allows shock freezing of a product costs 100 thousand rubles, and six of them were needed for our production volume. A Peugeot car for the delivery of finished products - 800 thousand rubles, a special refrigerator for the car - 380 thousand rubles. At least 1 million rubles were spent on repairs. Previously, this room was a walk-through - all communications, water, three-phase sockets had to be carried out from a "clean slate". The monthly costs of maintaining a confectionery are about 500 thousand rubles. Plus, the bad experience with the opening of the cafe hit the wallet hard.

Now we have reached the break-even point. We make 700-800 cakes a day. Depending on the season, revenue ranges from 700 thousand rubles per month. The average cost of a cake for restaurants is 120 rubles, for frequent customers - 160 rubles. Prices are high due to expensive ingredients. One could save on them, but then everything will go down the drain. You've probably noticed: as soon as a new product comes on the market, there are no complaints about its quality. You "sit down" on it, and after a while you discover that the taste has changed, and not for the better. A very common story among manufacturers: building brand awareness, building a customer base and allowing yourself to switch to cheaper products in the hope that no one will notice.

We have no illusions about profit. We understand that the pastry shop is not an oil well. The return on investment, as in any normal restaurant project, must be pledged for a period of 3 to 5 years. It all depends on how well the strategy is chosen and whether the goods are distributed efficiently.



Plans for the future

Our team has professional athletes: Mikhail is a judo master, Alexey is a karate master, together we play football and make cakes. We are united by sports maximalism. Bolshevik and Krasny Oktyabr are familiar to many Russian buyers. In the future, we want to make SweetCraft the same recognizable brand. We are already starting to expand production: we are moving to another building with an area of ​​300 square meters.

We plan to develop more affordable products, in the near future we want to make vegetarian desserts on a regular basis, and not to order. The current line was developed by a Frenchman, a chef from Italy is working on new positions. Now the restaurants themselves began to contact us on the recommendation. Recently, a chain of stores, which has more than 80 points in Moscow, wanted to buy our brand, but we refused. When production becomes more large-scale, we ourselves will open a network of branded stores.
