And you can cook it from whole berries of strawberries, raspberries, cranberries or a mixture of these berries. Then you will need to wait until the berries in the boiling water are thawed and let the juice flow, and as soon as this happens, all that remains is to add sugar to the pan and mix everything thoroughly. Naturally, you can take more berries, but in this case, you just need to proportionally increase the amount of boiling water.

But revising recipes from frozen berries, you can see that there is another way to prepare fruit drinks. In accordance with it, the frozen berries must first be crushed in a mixer, then add sugar to taste to them, and then pour cold boiled water, mix and let it brew so that the berries let juice. Before use, you can add a pinch of cinnamon or a mint leaf to the fruit drink.




Compote

To make a compote, you need to take any frozen berries, toss them in a pot of water and put to boil. At the same time, in order for the compote from frozen berries to be very tasty and have a rich aroma, it is necessary to observe the proportion in accordance with which 2 full handfuls of berries must be taken per 1 liter of water. Compote is usually boiled for half an hour, and 10 minutes before the end of cooking, you can add a teaspoon of citric acid, a pinch of cinnamon or mint to it. And when the compote is ready, it only remains to cool and serve, and everyone can already put sugar on their own, focusing on their taste sensations.




Kissel

Cooking jelly from frozen berries is also not difficult. This nourishing, mouth-watering and aromatic drink can be made from any berries, literally in two counts. You only need to put a pot of water on the fire, and as soon as the water boils, throw the berries there in accordance with the proportion - 2 handfuls of berries per 1 liter of water and sugar at your discretion. And a little later, 10 minutes before the end of cooking, it remains only to add starch to the pan with a thin stream, which first will need to be diluted with water. Now it remains only to add the kissel for the remaining time, not forgetting to stir it, and the delicious drink will be completely ready for use.




Wine

If the recipes for compote, kissel and fruit drink from frozen berries are very easy to prepare, then in order to make wine from frozen berries you will have to work hard, but the result will be simply amazing. To make such a wine, you must first unfreeze the berries, and then pour them into a three-liter jar so that they almost reach the middle of the jar. Then pour 400 grams of sugar in this jar and pour warm boiled water there so that it does not reach the top by 3-4 cm. Mix the mixture in the jar thoroughly with a wooden spoon, pull on the top of the jar an ordinary medical glove with a pierced finger, and set the jar in a warm, dark place for 20 days.

After the allotted time, you can try the future wine, if it is too acidic, you can add another 200 grams of sugar there and again send it to ferment, after stirring the sugar so that it completely dissolves. And now you will need to constantly look at the bottle with the glove, because as soon as the glove stops inflating, it will need to be filtered through cheesecloth, folded twice, into a saucepan, then wait another day, and pour the wine into bottles with screw caps. Pie

But not only aromatic drinks can be prepared from berries. All children and adults will also love the pie of frozen berries, which can be enjoyed with tea. You can make the dough for such a pie in the same way that usually, most importantly, you will need to make small sides around the entire perimeter of the rolled dough that will not allow juice from the berries to leak after baking. Having rolled out the dough, you can take on the berries that need to be mixed with sugar and spread evenly over the entire surface of the pie. That's all, nothing else needs to be done - just put the pie in the oven to bake for the same time and at the same temperature as usual.




Jelly

A delicious dessert for the whole family will also be jelly from frozen berries, which is very easy to prepare. To make it, the first thing you need to sort out a pound of berries, rinse them and leave to dry. In parallel with this, 1 tablespoon of dry gelatin will need to be diluted in a glass of cold water and also set aside for 2 hours.

After the allotted time, dissolve the jelly obtained in a glass in a water bath, but in no case bring it to a boil. Berries, meanwhile, are divided into two unequal parts - we put aside the smaller part to decorate the dessert, and chop the larger in a mortar to a puree state. After that, let the berry puree stand a little and separate the juice, and then pour it into a separate bowl, and pour 2 cups of boiled water into the puree and put it on the fire. As soon as the mixture boils, throw 100 grams of sugar to it and cook until it is completely dissolved.

Now there are mere trifles - the cooled broth will need to be filtered through cheesecloth, add to it the set aside juice, which previously stood out from the berries, and the set gelatin mixture. We mix everything and pour it into silicone molds, the bottom of which is pre-covered with delayed frozen berries. We send dessert to the refrigerator, and in half an hour the jelly will be completely ready for use.

After adding 130 g of vanilla flour, knead the biscuit dough. Bake it for 40 minutes in high form at 180 ° C without opening the oven. Beat 500 g of cottage cheese, 80 g of honey and 50 ml of milk in a smooth cream. Cut the finished biscuit into 3 cakes, grease with cream and combine together. Raspberry clouds

Souffle from fresh berries is a dish for lovers of light homemade pastries. Lubricate with oil 5-6 small ceramic molds, sprinkle with sugar inside and cool. Beat 600 g of raspberries in a blender and carefully rub through a sieve. Small seeds in a souffle are completely useless. We breed 15 g of starch in 25 g of water, combine it with the berry mass and bring to a boil over low heat. Next, beat 8 egg whites with 80 g of sugar in a lush foam and, without stopping, interfere with the berry mass. Fill the chilled molds with mousse and put in the oven at 180 ° C for 7–8 minutes. This airy treat will conquer home from the first sight.

Silk berry

A great way to freshen up on a hot summer day. Soak in advance 40 g of gelatin in 250 ml of water for 30–40 minutes. Grind through a sieve with gauze 400 g washed strawberries or strawberries. The resulting juice is still useful to us. Cook the cake remaining in the gauze for 5 minutes, filter it well, mix the broth with 150 g of sugar and swollen gelatin. Dissolve it over low heat, introduce the first squeezed juice and whisk with a mixer for 5-7 minutes. The result is a thick mass that needs to be cooled. Summer berry dishes cannot be imagined without cool sorbets. Cherry with a light refreshing sourness created specifically for them. Beat 500 g of pitted berries in a homogeneous gruel. Cook the syrup from 150 g of sugar and 200 ml of water, cool and mix with the berry mass. We rub here 50 g of dark chocolate without filler. If children will not encroach on this delicacy, you can add 100-150 ml of champagne. Again, beat the mass with a blender, put it in a container and put in the freezer for 3 hours. While they are soaking, remove the seeds from 200 g of cherry, mix it with 200 g of natural yogurt without filler and beat with a blender. Pour milk with swollen oatmeal here and beat everything in a thick homogeneous mass. If the smoothie didn't seem sweet enough, add a couple of tablespoons of honey.   • 100 g butter
  • 200 g frozen raspberries

  • 500 g soft cream cheese (Philadelphia, Mascarpone or Almette)
  • 200 g sugar
  • 300 g high fat cream

Cooking:

  1. Grind cookies with a blender, add softened butter and beat again until smooth. Then put in a closed form with sides (20 cm in diameter), covered with cling film, firmly press to the bottom and level. Refrigerate until solidified.
  2. Put the berries in a saucepan and put on a slow fire. Cook, stirring, 3-5 minutes. Mash the berries with a spoon and grind through a sieve. Cool.
  3. Beat cream cheese with sugar with a mixer, add cream and whip again. Add the mashed berry to this mass, mix and distribute on the basis of the cookies. Refrigerate for 4-6 hours until solidified.
  4. To make layers of cheesecake different in color and taste, divide the creamy cream mass into two parts and add raspberry puree in one and strawberry in the other (strawberries and blueberries will look very effective). And lay out the layers in turn. First, a mixture of cream cheese with raspberries (and send for 2 hours in the refrigerator), then a mixture with strawberries (now for 4 hours in the refrigerator).

You can make the basis for the pie according to our recipe or use your favorite dough, or even purchased. Frozen berries can be taken different, but you can use only one species, 4 large handfuls.


Ingredients:

  • 2.5 stack wheat flour
  • 250 g butter
  • Art. 11–13 l water
  • 1 stack Sahara
  • 1/4 stack starch
  • 1 stack frozen raspberries
  • 1 stack frozen strawberries
  • 1 stack frozen blueberries
  • 1 stack frozen blackberry
  • 1 tbsp. l lemon juice
  • salt to taste

Cooking:

  1. Prepare the dough for the base. Mix flour with a pinch of salt, add 220 g grated chilled butter on a coarse grater. Enter 6–7 tbsp. l cold water, forcing the dough with a fork so that it seizes. Divide the dough into two parts, one slightly larger than the second. Wrap them in cling film and refrigerate for an hour.
  2. For the filling in the pan, mix sugar, starch and 5-6 tbsp. l water, add blueberries. Bring to a boil and cook, stirring, for 2-3 minutes. Remove from heat, add other berries and lemon juice to the mixture, mix.
  3. Roll a large piece of dough into a layer, about 5 mm thick. Put in a parchment-covered form, forming the sides. Pour the filling on top and stick the pieces of butter (30 g). Roll a smaller piece of dough thinly and cut into strips of one and a half centimeter thick. Lay out the grid of strips on top of the filling, attach the edges to the sides.
  4. Send the future cake in an oven preheated to 200 degrees for 10 minutes. Then reduce the temperature to 180 degrees and bake for 45-50 minutes. The dough should turn golden brown, and the berry filling with bubbles.

Muffins with berries

This recipe is suitable for one large cupcake, as well as for small cupcakes in molds. Delicate sweet dough on sour cream in combination with sour berries (cherries, currants or cranberries) will give an amazing result! Do not thaw the berries, just add to the dough and gently mix with a spatula or stick the berries directly into the blanks.


Ingredients:

  • 150 g frozen berries
  • 1 egg
  • 100 g sour cream
  • 50 g butter
  • 1 stack flour
  • 0.5 stack Sahara
  • 1 tsp baking powder
  • 1 chips. salt
  • 1 chips. vanilla
  • icing sugar - for sprinkling

Cooking:

  1. Beat the egg, sour cream, softened butter, salt and sugar with a mixer at high speeds until smooth.
  2. Continuing to beat, add flour, baking powder and vanilla. The dough should turn out smooth, without lumps, of medium density.
  3. Insert paper cupcake molds into the metal mold. Fill them with dough for about two-thirds.
  4. Put 3-4 cherries in each cupcake, slightly press them. Place the muffins in an oven preheated to 180 degrees.

Berry mousse


Berry mousse will be very popular with children. And even those who don’t like semolina porridge will certainly not refuse such “semolina”. Any frozen berries will do. Before serving, you can decorate the dish with cream, candied fruit or mint leaves.

Ingredients:

  • 1 stack frozen berries
  • 2–2.5 tbsp. l semolina
  • 4 tbsp. l Sahara
  • 0.5 l of water

Cooking:

  1. Defrost the berries and drain the allocated juice (they can then be used to pour the finished mousse).
  2. Grind the berries in mashed potatoes, pour hot water, put on fire. Then pour in a thin stream while stirring semolina, bring to a boil and cook for 7-8 minutes.
  3. In the finished fruit porridge, add berry juice and cool.
  4. Beat the cooled mass with a mixer until a thick foamy state (it will increase in volume by about two times).
  5. Pour the prepared mousse into prepared bowls, glasses or wine glasses and refrigerate for an hour.

Smoothie

For preparing a refreshing and healthy smoothie, ordinary cow's milk or almond milk is suitable. But you can also take kefir or yogurt - as you like best. If you like sweet drinks, add honey to taste. And so that a thick berry cocktail becomes more satisfying, you can add a handful of nuts, seeds or bran.


Ingredients:

  • 250 ml of milk
  • 200 g frozen berries
  • 1 ripe banana
  • 1 mint leaf

Cooking:

  1. Cut a banana into arbitrary pieces.
  2. Place frozen berries, banana and milk in a blender and beat until smooth.
  3. Pour into a glass, garnish with a mint leaf and several berries (optional).

Compote

For filling:
  • Frozen pitted cherries - 250 g
  • Sugar - 5 tbsp. spoons

Cooking

  1. Sift the flour with a slide, make a depression in the center and add soda, sugar and salt there. Mix. Add oil and water. Knead the dough, wrap it in a film and send in the cold for half an hour.
  2. Then roll the dough into 2 layers. Put the first into a greased form, making the sides. Mix the thawed cherries with sugar and starch and lay on a dough sheet. Cover the spread cherry with a second sheet, pinch the edges.
  3. Pierce the pie with a fork in the middle and several places, grease the top with vegetable oil and sprinkle with sugar a little. Bake in the oven at 180 ° C for 35 minutes.
The whole cooking process takes 1 hour 10 minutes, and the specified amount of food is enough for a pie for a family of five.

  2. Add the remaining water to the berries, add sugar and put on the fire again. When the mixture is well warmed up, pour in a thin stream, continuously stirring, pour juice with starch into it. Cool jelly ready.
  3. Beat the curd cheese, adding a little cream - we get the curd cream.
  4. Put chopped cookies on the bottom of the glasses. Top - a layer of curd cream, on it - raspberry jelly. Repeat: put alternately a layer of cookies, curd cream and berry jelly. Garnish with leaves, berries, cream - and the lazy cheesecake is ready!

  • Frozen berries (cherries, raspberries, strawberries) - 0.5 cups
  • Mascarpone curd cheese - 150 g
  • Cream 35% fat - 100 ml
  • Savoyardi cookies - 10-12 pcs.
  • Chocolate - 30 g
  • Powdered sugar - 2-3 tbsp. spoons
  • Vanilla Sugar - 0.3 tsp
  • Coffee (natural or instant) - 100 ml

Cooking

  1. Cream and cheese thoroughly mixed into a homogeneous mass, add vanilla sugar. Cream can be whipped beforehand (but not whipped). Add icing sugar (to your taste - so that the resulting cream is not too sweet).
  2. Brew strong coffee with sugar (either instant or natural, according to your preference). If natural, then strain. If tiramisu is being prepared for adults, you can add 1-2 tbsp to coffee. tablespoons of coffee liquor. Defrost berries, strain the juice as much as possible.
  3. In prepared glasses (wine glasses, bowls, glasses or crystal bowls) lay a layer of mascarpone cream with cream on the bottom. Savoyardi cookies (whole or crushed into pieces - depending on your idea and the size of the dishes) quickly dip one side in coffee and immediately put on the first layer of creamy curd cream. On the cookies we spread the berries squeezed from the juice.
  4. Then, in the same sequence, we alternate again the creamy-curd cream, cookies and berries. At the top is a layer of cream. Send the finished dessert for an hour or two in the refrigerator. Before serving, dessert is decorated using crushed chocolate or cocoa powder, cocktail cherries, mint leaves.

A little more about tiramisu

  • Instead of frozen cherries, raspberries, strawberries, or wild berries can be used successfully to make dessert.
  • You can put berries in tiramisu not whole, but in the form of mashed potatoes, whipping them in a blender.
  • Instead of savoyardi cookies, you can bake a classic biscuit.

Frozen berries in cooking can be used only in some cases. For example, if you cook compote, jelly, porridge from them. For smoothies and cocktails, half-thawed. But if you are going to take up baking or desserts, then the snowy beauties must be brought back to life. How to do it right?

Most often, frozen berries are found in recipes with these five products:

The first one. When defrosting berries, a lot of liquid and juice are secreted. For dishes in which strict proportions of dry and wet products are observed, everything unnecessary to death is similar (not literally, of course)). Therefore, the berries should not only be brought to room temperature, but also drained from them excess moisture after. It is not necessary to pour it into the sink - it can be used for cooking compote.

The second one. It is highly likely that the drained berry juice is exactly what your pie lacks. That is, together with excess fluid, we will remove the juiciness. How to avoid this? To take risks, namely: to roll the frozen berries in starch and add to the filling in this form. Starch absorbs all unnecessary, and the cake does not leak. The bad part: he will add calories to the dish.

It is better to defrost any frozen foods gradually. In this case, less fluid will be released, more vitamins will remain. For berries, you can use:

  • a stream of cold water from the tap (berries should be in the polyethylene at the same time)
  • paper towels and room temperature
  • the lowest compartment of the refrigerator (it is better to put them there in advance, for example, at night, to cook the next day)
  • microwave (get ready to release a large amount of juice)
