Cooking method:

  1. First you need to make pumpkin puree. To do this, take 400 grams of pumpkin, and cut into small pieces without removing the skin. Then we put our cubes on a baking sheet and put in the oven to bake. It should be baked until the pumpkin is soft at a temperature of 200 degrees.

  7. Place the candy mass in a bowl, cool and refrigerate for two hours.

  5. Add the resulting oatmeal to the pumpkin puree and mix thoroughly. Let it brew for half an hour so that the oatmeal has time to absorb the pumpkin juice and swell properly.
  6. Then add the chopped cookies and mix everything again.
  7. After that, add honey to the total mass. For people allergic to honey, you can use wedge syrup, molasses, or condensed milk instead. It is also worth trying as an alternative to linden honey, because it is hypoallergenic.
  8. Then add softened butter and brandy. Instead of brandy, you can use rum, whiskey, gin. Naturally, if you are making sweets for children, then no alcohol.
  9. It is necessary to knead the candy mass until smooth. Then put finely chopped walnuts in it.
  10. Again, mix everything thoroughly and add the orange zest, previously grated on a fine grater.
  11. Once again, knead the mass well, and put it in the refrigerator for 30 minutes, remembering to stir it every 10 minutes. This must be done so that the mass solidifies evenly, and from it it was possible to mold balls - future sweets.   9. Place the boiled pumpkin cubes on a fine sieve. Wait for the syrup to drain completely. This will take about two hours.
  10. Put the dried and chilled pumpkin slices in one row on a baking sheet and send to the oven, preheating it to 40 degrees, for about 3 hours.

Blanching is a short-term treatment of any food product with boiling water or steam. Unlike cooking, blanching does not lead to a loss of vitamins or flavor.

Note! If you do not have an oven, then the candied fruit should be dried on waxed paper or parchment at room temperature and exposed to direct sunlight. It is advisable that the room in which the drying takes place is well ventilated.

Preparation

First, let's prepare the pumpkin puree. If you have one ready, use it. Peel fresh pumpkin from seeds and crust. Cut into medium to small cubes and add to a saucepan. Pour in the specified amount of granulated sugar and cover with hot water. Place on the stove to simmer until the pumpkin is tender. Bring to a boil. After, reduce heat, cover and cook until tender.

It takes about 20-25 minutes for the pumpkin slices to become soft. Almost all of the liquid should completely evaporate. If a small amount of broth remains, it's okay.

Use a blender, crush, or spoon to puree. Can be rubbed through a fine sieve. Cool the pumpkin puree to room temperature. To make the process go faster, send it to the refrigerator.

Transfer the chilled pumpkin puree to a convenient deep bowl. Add the egg whites and beat with a whisk or mixer until the pumpkin-protein mass thickens and thickens. While the mass is whipping, let's do agar-agar.

Prepare the syrup in a separate saucepan. Add the required amount of water, pour 200 grams of sugar and agar-agar there. Put on fire and simmer until the sugar dissolves, stirring constantly with a wooden spatula along the bottom so that the agar does not burn.

The sugar syrup is ready when it slowly pulls the threads off the spatula. After you get this result, remove from heat and cool quite a bit.

Add hot agar syrup to pumpkin puree. At the same time, beat constantly with a mixer until the mass cools. The pumpkin mass has become quite airy and thicker.

Spoon the finished mass into candy tins and leave at room temperature for 3-5 hours until it solidifies completely. You can use silicone molds, as long as they are not too large.
