Dry ingredients

  • Wheat flour - 200 g (about 1.5 cups)
  • Sugar - 200 g (the amount of sugar is adjustable to taste, you can replace it with honey or maple syrup)
  • Cocoa powder - 4 tbsp. spoons
  • Baking powder - 1.5 tsp
  • Salt - 0.5 tsp
  • Baking soda - 1/4 teaspoon
  • Thawed cherries - 3/4 cup

Liquid Ingredients

  • Odorless vegetable oil (corn or refined sunflower oil) - 0.5 cups
  • Defrosted cherry juice - 0.5 cups
  • Loosely brewed coffee - 0.5 cups
  • Vinegar essence - 1 tsp
  • Vanilla extract - 1 tsp

Preparation

Defrost the cherries. Remove pits if present.

Transfer the cherries to a sieve and let the excess juice drain (do not throw away the juice, it will be useful to us in the recipe). If you put the defrosted cherries in a glass, you should make 3/4 cup. If you want to increase the number of berries in the pie, you can do this, but you should not put more than one glass of cherries.

Sift flour through a sieve, as well as cocoa powder and other dry ingredients, including sugar, salt, soda.

Cooking any baking should begin with sifting flour: this will rid it of excess lumps, saturate it with oxygen, making the finished product fluffy and airy.

If you decide to use honey instead of sugar, add it along with the liquid ingredients.

Stir the sifted ingredients with a spatula for 30 seconds. This will help to distribute the baking soda and baking powder evenly with the flour. Pour cherry juice (0.5 cups) into the dry mixture.

Add vegetable oil (0.5 cups). Vinegar - 1 tsp - also add to the dough. We send 0.5 cups of lightly brewed coffee to the dough. Mix all dry ingredients thoroughly with liquid ingredients until gluten forms (the dough for the chocolate cake should be viscous, homogeneous, without lumps. If you add vanilla extract, it's time to do it now (the aromas are best revealed when combined with fats).

If the dough is lifted on a spatula, it will fall off in pieces. Chocolate dough can be supplemented with pieces of nuts (hazelnuts, walnuts) or dried fruits (raisins, dried apricots, prunes, soak in hot water, dry and chop). Such additives will enrich the taste and make it even more interesting (besides, eating dried fruits and nuts during the fast is very healthy).

Add the cherries at the very end, before putting the dough for the chocolate pie into the mold.

The baking dish must be prepared in advance: grease with a piece of butter and sprinkle with flour.

I like to bake cakes with a delicate structure in a split pan and cover the bottom of the pan with a piece of parchment paper.

Preheat the oven to 175 C in advance. Bake the lean pie in the oven for half an hour. If you like the “creamy” center, you can remove the pie from the oven earlier, after 20 minutes from the start of baking.

I bake a lean chocolate cake to a dry toothpick: when you pierce the middle of the cake with a wooden stick, it comes out dry and clean, without lumps of wet dough.

Wait until the cake has cooled completely in the oven, and only then remove it. The structure of the pastry is tender and soft, be careful when slicing. Before freeing the cake from the mold, walk with a sharp knife around the circumference of the mold, separating it from the walls. Sprinkle the cake with icing sugar, pour over syrup or chocolate icing, garnish with fresh berries.

The chocolate taste of this cake goes well with the creamy curd cream, which can be layered on the cakes to make a cake. But, of course, such a dessert is no longer for a lean table.

Sound familiar? I, too, thought for a long time that there was no way out, until I found a recipe for lean chocolate cake with cherries in my grandmother's old notebook. Baking powder can be easily replaced with half a teaspoon of baking soda quenched with regular vinegar. Just do this not over a bowl of flour, but in a separate bowl so as not to accidentally add too much vinegar to the dough.

  • 5 g vanilla sugar;
  • 100 g granulated sugar.

Important! The more cherries, the juicier the pies - I have known this folk wisdom since childhood. So if you still have some berries left after weighing, feel free to add them to the cake. Just do not try to add a whole kilogram - in this case, it is better to increase the amount of the remaining components of the pie accordingly.

Cover the bottom of a detachable form with a diameter of 18 cm with baking paper. Pour the mixture into a mold. Bake in an oven preheated to 180 degrees for 40-50 minutes, until a dry speck. Free the cake from the pan, cool on the wire rack. Carefully cut off the top of the pie (lid) and use a tablespoon to scoop out the crumb, leaving the sides intact. Tear the crumb at random into pieces.

Pour 200 ml of water into a saucepan, add 150 g of cherries, put on fire, bring to a boil, remove from heat, rub the berries through a sieve, add 60 g of sugar to the cherry syrup, put on the fire again, bring to a boil and gently add semolina , simmer for 15 minutes, stirring all the time. Cool the semolina mixture slightly. Beat with a mixer for 10 minutes until airy mass, it will more than double and brighten. Soak the agar in 50 ml of water for 5 minutes, put on fire, bring to a boil, boil for a couple of minutes and pour into the cherry mousse, stir.

Pre-thawed 100 g of cherries (drain the juice) and add the crumb of the pie to the cherry mousse, mix gently. This must be done while the mousse is not frozen, since the mousse hardens very quickly with agar.

Fill the cake with cherry mousse. Close the top with the "lid" of the pie, slightly pressing it down. I have a little mousse left, I made it as a dessert by putting it in a glass.

For the glaze in a saucepan, mix 60 g of sugar, 40 ml of water, 20 g of cocoa, put on fire, bring to a homogeneous mass, remove from heat and add milk-free chocolate. Pour the icing over the top of the cake. Let stand for several hours.
