Eggs are the classic filling for meat zraz, but you can replace them with fried mushrooms or cheese, it will turn out to be no less tasty.

Meat zrazy with egg can be cooked in a pan or baked in the oven. From a small set of products, you will get a very original and unusual dish for lunch or dinner.
For my family, I cook zrazy from a variety of minced meat with different fillings, but for you I have chosen the most successful recipes, in my opinion.

Step by step cooking

  1. Soak oatmeal in milk about 20 minutes before cooking.
  2. Finely chop the onion and grate the carrots.
  3. Fry vegetables in a pan in vegetable oil. You will need about 1 tablespoon of oil.
  4. Salt the prepared vegetables and add the curry.
  5. When the vegetables have cooled down a little, put them in a deep bowl and combine with the minced meat. Any minced meat is suitable for cooking zraz. I took chicken, but you can replace it with turkey or pork and beef.

    If you use minced pork or pork and beef for cooking zraz, you need to beat it off a little so that it turns out to be dense and the zraz does not disintegrate when frying.

  6. Next, add pre-soaked oatmeal to the minced meat. Salt and pepper everything, and then mix thoroughly. The minced meat should be homogeneous.
  7. We clean the eggs from the shell and we can start forming the zraz. In my recipe I use chicken eggs, but you can replace them with quail eggs, the zrazy will turn out to be small and neat.
  8. Pour some water into a separate bowl.

    Water is necessary in order to moisten your hands during the cooking process, so the minced meat will not stick to your hands and it will be easier to sculpt the zrazy.

  9. Cut the eggs in half, and if you are cooking zrazy stuffed with quail eggs, leave them whole.
  10. Moisten hands and a tablespoon in water. We collect minced meat with a spoon and make a small depression.
  11. We spread half an egg in the middle of the cake and connect the edges of the minced meat, giving it the shape of a zraza.
  12. Similarly, we form zrazy from the remaining minced meat.
  13. Put the zrazy in a preheated pan with vegetable oil. Fry them on both sides with the lid closed. The fire should be medium.
  14. After you fry the zaras on both sides, you can add a little water to the skillet so that they are steamed and not soggy on the inside.
  15. Since garlic was not used in minced meat, you can add a chopped garlic clove to hot vegetable oil so that it gives off its smell to the oil and the zrazy turns out to be very fragrant.
  16. Put lettuce leaves on a plate, and put zrazy on top.

Serve zrazy with fresh vegetables or any side dish.

1. Boil hard-boiled chicken eggs, chill, peel and cut into small cubes.

2. Finely chop the peeled and washed onions. Before adding the chopped vegetable to the egg filling, first fry it in a skillet with heated oil.

You can do it a little differently. Grate onions and add to the minced meat itself, and chop the green onions into the egg filling for a zraz.

3. In my case, not only fried onions, but also fresh dill are put into eggs. Therefore, we are preparing the ingredients for meat dishes further. Finely chop the washed, slightly dried greens. In a bowl, combine chopped eggs, fried onion and dill, pepper, and you can also add your favorite seasonings and spices to meat dishes. Mix everything well.

4. Pour milk into a bowl, put bread slices in it.

5. Hold until crumb swells, squeeze and combine with minced meat. Here you can add a little more pepper, spices and seasonings if you wish, just do not forget that the filling is already seasoned with us (so that the zrazy do not turn out too sharp later). Salt the cutlet mass and mix well.

6. With wet hands, take the minced meat in pieces and form palm-sized cakes. Place an egg and onion in the middle of each.

7. Carefully make zrazy with egg and onion filling, but so that it does not look out of nowhere. If this happens, patch up the hole with a small portion of minced meat. And yet, if the minced meat "stretches" behind the palms, sticks, then moisten them with water.

  • Bread slice - 2 pcs.;
  • Onion - ½ head;
  • Garlic (slices) - 2 pcs.;
  • Coarse salt - 1 tsp;
  • Selected egg - 2 pcs.;
  • Breadcrumbs - 80 g;
  • Green onions - ½ bunch (or to taste).


How to cook chicken zrazy in the oven

  1. Cooking minced meat. Grind chicken meat through a meat grinder or in a blender.
  2. Bread crumb, without crusts, pour boiling water (1/2 cup) and soak for 1 minute. Then we squeeze the bread and mix it with the meat mass.
  3. We chop the onion very finely and thinly. We will not pass it through the grinders so that the cutlets are juicy, because the oven will dry the already dry chicken meat anyway.
  4. Three garlic on the smallest grater and, together with 1 egg, mix into the cutlet composition, also adding salt and spices to it to taste.
  5. Making the filling. Chop the hard-boiled chicken egg (or 2 eggs of the second category) finely and mix with finely chopped green onions. Salt the mixture to taste - the filling is ready.
  6. We divide the minced meat into several small lumps, no larger than a tennis ball, after which we flatten each ball in the palm of our hand, put the filling in the center and form a cutlet, completely hiding the filler inside the minced meat.
  7. Roll the breaded patty and place on a baking sheet lined with pastry baking paper.
  8. The oven for baking should be preheated to 190 ° C. We send the baking sheet into the hot "interior" of the oven and set it for 20 minutes.

Zrazy is an original and versatile dish that can be either a main hot treat or an appetizer. They can be baked in the oven and fried in a pan, steamed or even cooked on the grill (not at home, but somewhere in nature).

However, it is still better to wind chicken chops with filling using this recipe at home, and just bake them on a fire.

  • The breast from one chicken should be cut off the bone, dividing it into 2 halves, after which we divide each of them across into 2 more flat parts. We cut the large pieces in half, and leave the smaller ones as they are. As a result, we have 6 flat pieces of chicken.

After adding salt and sprinkling the fillet, cover it with a foil and thoroughly go through the meat with a hammer on each side.

  • The chops are ready and we can start making the filling. Cook two selected chicken eggs hard-boiled, cool, peel and chop with a knife into small slices.
  • Chop a small head of onion into cubes (finely) and fry for a couple of minutes in a pan until golden.
  • Then cut 150 g of fresh champignons into small pieces and transfer to the onion. Salt the fry to taste and cook, uncovered, for 5 minutes.
  • Mix the finished mushrooms with chopped eggs - the filling is ready.
  • Put 2 tsp for each slice of chicken chop. fillings and wrap in an envelope, fixing the edges with toothpicks.

  • When 6 times are ready, put them on the grill, clamp them with the upper mesh and fix them not very tightly on the handle. Now you can start preparing the coals for roasting them.

The coals should be red and no open flames. In such conditions, zrazy should be fried for 20-25 minutes, periodically turning over the grill mesh.

Ketchup or garlic sauce, which is prepared from 3 tablespoons, will be an ideal addition to such zrazami with a haze aroma. mayonnaise, 3 tbsp. sour cream and, passed through a press, garlic (2-3 cloves).

Preparation

    To prepare the minced meat, the chicken fillet must be removed from the bones, the onion must be cut into cubes of any size, not necessarily small, the potatoes must be peeled and coarsely grated, and the garlic must be mashed with a crusher.

    We drop all the ingredients into a blender cup, drive in an egg, add 1 tsp. salt with a small slide and pepper seasoning (1/2 tsp).

    At maximum power, we punch the minced meat in the grinder for two minutes until a homogeneous thick consistency.

    Now let's prepare the filling. In our case, two types of zraz were prepared: with egg-cheese filling and purely with cheese filling.

    For cheese zraz, we simply cut pieces of 5-6 cheese blocks, 3 cm long and 1 cm wide.

    For the second type of filling, hard-boiled egg of the selected category and the remaining cheese, rub with coarse shavings on a grater, salt the resulting mixture to taste and mix.

    We begin to sculpt zrazy. We take small minced lumps and knead them on the palm of your hand into a cake.

    Put the filling in the center (1 block of cheese or 1.5 tsp. Egg-cheese mass) and close up the edges of the cake, forming a cutlet.

    With cheese, I made zrazy oval, and with an egg - round to distinguish them. To make it easier to sculpt a cutlet, hands should be moistened in cool water.

    Transfer the finished cutlets to a well-heated frying pan with oil and fry them over high heat until a dense crust forms on one side.

    Then we turn over the zrazy, reduce the flame under the pan, cover it with a lid and detect it for 10-15 minutes.

    After the specified time has elapsed, we increase the cooking temperature, fry the patties until they are blush and take them out onto a dish.

    You can serve chicken zrazy with an egg with any side dish: cereals, fresh and cooked vegetables, pasta, or as an independent dish.

And what about delicious meat zrazy with an egg and green onions in the middle? Believe me, this option turns out to be much more interesting and appetizing. The recipe for this dish is not complicated at all, so don't worry that you can't do it: everything is quite simple and relatively quick.

The only thing: meat zrazy with an egg and green onions are quite large, voluminous, so every time I worry that they are properly fried in a pan. Therefore, I prefer to additionally hold them in the oven: so I am sure for sure that everything will cook evenly and it will turn out delicious.

Such a dish is quite suitable for a hearty holiday feast, and for an ordinary lunch-dinner with the family. A big plus of minced meat zraz with egg is that they are good both warm and cold: so you can take them with you, for example, on the road.

  • 2 chicken eggs;
  • 4 - 6 feathers of green onions;
  • salt, black pepper;
  • 3-4 tablespoons of bread crumbs;

Add egg white to the minced meat, salt and black pepper to taste. knead thoroughly.

Then we knock out the minced meat - you can throw it with force from one hand to the other, or you can throw it on the table. So we repeat 20 times. After this procedure, the structure of the minced meat will change - it will become noticeably denser, more homogeneous. Such minced meat will not crack during frying, the filling will not fall out of it.

Boil eggs hard-boiled, cool in cold water. We clean the eggs from the shell, rinse (to remove the smallest fragments of the shell) and dry with a paper towel. Finely chop the eggs. Wash green onions, dry and chop finely.

Combine eggs and onions, add salt and black pepper to taste, mix.

We divide the minced meat into 6 -7 approximately equal parts. If you want a smaller zraza, divide it into 8 - 10 parts. We spill each part into a cake, in the center with its hand we push a small oval depression. Put 1 full tablespoon of the filling into the recess, lightly press it down.

Carefully sculpt zrazy in the form of cutlets - they should be even, the minced meat is securely closed.

Roll the zrazy in bread crumbs.

Heat the vegetable oil in a frying pan and spread the zrazy. We place the zrazy freely so that they do not come into contact with each other - otherwise they will be stewed and not fried. Fry meat zrazy with eggs and onions over high heat for 3-4 minutes, until golden brown. Then gently turn over and fry the other side in the same way.

Grease the baking dish with vegetable oil and spread the zrazy.

Cover the mold with foil (or, if available, a lid) and place in an oven preheated to 200 degrees.
