Recently I got interested - how can you cook a squid, except for stuffing, making breaded rings or cutlets? I read different recipes for stewed squid, but in each of them I lacked something))) I thought, I thought, and I decided to stew it in a pot with sour cream sauce and vegetables. It turned out delicious, so I share the recipe :)

SQUID STEWED IN A POT WITH POTATOES AND VEGETABLES IN SOUR CREAM

For one pot with a volume of about 1.5 liters:

3 raw squid carcasses
- 6 small potatoes
- 1/3 sweet pepper
- 1 large onion
- 1 small carrot
- 1 large tomato
- 3 small cloves of garlic
- basil and parsley greens
- 2 tbsp. low-fat sour cream
- 1 tsp. adjika and tomato paste
- ½ tsp lemon juice
- salt, freshly ground pepper, Provencal herbs, spices for potatoes
- a pinch of sugar
- 3 small bay leaves

Preheat the oven to 180-190C.

Briefly pour boiling water over the squid carcasses, drain the water, peel the squid and cut into rings ~ 1cm thick.

Cut the onion into half rings, grate the carrots, cut the pepper into strips.

Press the cloves of garlic slightly with the flat side of the knife blade and fry in a pan in a mixture of vegetable and butter, so that the garlic begins to brown and gives off all its aroma. Then remove the garlic, put the onion in the pan, fry it until transparent, sprinkle it with sugar a little (you need just a pinch for caramelization), add carrots and pepper, fry almost until tender. Transfer to a pot.

Make notches on the tomato, pour boiling water over it, peel and cut into cubes.

Together with the resulting juice, transfer the tomato to a pot, put the squid rings in the same place, sprinkle everything with lemon juice, mix and put in the oven.

At this time, cut the potatoes into cubes, sprinkle with the potato spice mixture, and fry until lightly browned and almost cooked. Season with salt at the end of frying.

Prepare the sauce: mix sour cream, adjika and tomato paste, add spices: salt (taking into account that the potatoes are already salted), pepper, Provencal herbs. Add a couple of tablespoons of warm water, stir the sauce.

Chop the basil and parsley greens.

All these preparations will take about 18-20 minutes))).

Remove the pot from the oven, add greens, bay leaves, potatoes, pour over everything with sour cream sauce, mix gently and send to the oven for another 20-25 minutes.

It is important that the squids are cooked in this case for at least 40 minutes, then they turn out to be soft!

A soulful, aromatic and satisfying (but not heavy!) Dish for dinner is ready. It is better to serve in deep bowls, because the sauce is enough, and it is very tasty!

Ingredients:

  • 0.5 kg frozen (6 medium carcasses);
  • 0.5 kg potatoes (6-8 small potatoes);
  • 200 g onions (1 small onion);
  • 2 tbsp sour cream;
  • 50 g of cheese;
  • 2 tsp flour;
  • 1 tbsp decoys;
  • some vegetable oil for frying;
  • salt, pepper to taste;
  • some green onions for decoration.

Squid Potato Casserole Recipe

1. Prepare the base for the casserole - mashed potatoes. Peel and boil the potatoes until tender. Drain all the water, add sour cream and crush the puree. Salt and pepper to taste.


2. Pour boiling water over the squid carcasses, then immediately immerse them in cold water. We peel off the skin from them and remove the insides. Cut into half rings.


3. Fry finely chopped onion in vegetable oil (no more than 1 tablespoon) until half cooked (the onion should become transparent).


4. Add squid to the pan to the onion. Salt and pepper. Sprinkle 1 tbsp on top. flour. The juice released by the onion and squid will thicken a little, and our future filling will remain the same fragrant. We fry for 15 seconds, the squids seize instantly. But since everything will still be baked in the oven, this time will be enough for us.


5. Returning to the mashed potatoes. Break the egg into a bowl and beat lightly with a fork or whisk.


6. Pour into mashed potatoes. By then, the puree should have cooled down well. But if it's hot, pour in the egg slowly and stir right away to prevent the egg from grabbing.


7. Lubricate the casserole dish quite a bit with vegetable or butter and sprinkle well with semolina. We spread a layer of puree and form the sides.


8. Place the squid and onion filling in the middle. We level.


9. Top with the remaining potatoes and sprinkle with finely grated cheese.

Selection of ingredients

This type of shellfish is prepared in a variety of ways.   1. Peel the clams and place in a saucepan of ice water.
  2. If you have tails, do not throw them away, but add chopped to the filling.
  3. If you have hard cheese, grate it. It is enough to grind soft cheese into small pieces.
  4. Add chopped herbs to the cheese, mix. Sprinkle the filling with salt and pepper to taste (optional).
  5. Tamp the mixture tightly inside the shellfish carcasses.
  6. Place them on a baking sheet and place in the oven for about 8-10 minutes.
  7. Turn off the oven, take out the prepared food. Decorate with lemon wedges and serve.


Potato casserole with squid

To prepare it, you need: 0.5 kg of potatoes, 1 can of canned squid and 150 g of hard cheese.

  1. Boil the potatoes and puree them.
  2. Place 1⁄2 puree in a baking dish.
  3. Place half or a little more squid from the jar on top.
  4. Cover the whole thing with some of the grated cheese.
  5. Place a layer of the remaining mashed potatoes on top, and then again the squid and grated cheese.
  6. Bake at 190 degrees for about 10-15 minutes (until the cheese is completely melted).
  7. Serve with freshly chopped vegetables and sauce to taste.


Squid stuffed with mushrooms and cheese

You will need:

  • 3-4 squid;
  • 150-200 g of mushrooms (fresh);
  • 3 eggs;
  • 100-130 g of hard cheese;
  • 1 medium onion;
  • 2-3 cloves of garlic;
  • 300 ml sour cream;
  • greens;
  • 2 tbsp. tablespoons of vegetable oil;
  • 20-30 g butter;
  • some salt and pepper.


Peel the shellfish from the film and entrails covering them, rinse in cold water and pat dry. Remove the head and tentacles, cut the "wings" from the "mantle". Discard the heads and films, and chop the tentacles and "wings" for the filling. Wash and peel the mushrooms. If you have collected forest mushrooms, cook them. Champignons do not need this. Cut the mushrooms into pieces of any shape and fry in a mixture of oils until golden brown. Then put them in a separate container.

Peel the onion, chop and fry in the oil left over from the mushrooms. Boil and cool the eggs, then peel them from the shell and grind through a grater. Chop the herbs, grate the cheese, chop or crush the garlic in a press. Mix all the filling ingredients. Pour in 2-3 tablespoons of sour cream. Add salt and pepper and mix well.




Fill the squid pockets with the mixture. Try to keep air out. Use toothpicks to pinch the exposed edges. Lightly pepper the rest of the sour cream, salt. Put the carcasses on a baking sheet, pour with sour cream and place in the oven, preheated to 200 degrees, for about half an hour.

Before serving, remove the chopsticks and cut the food into rings.


Mexican squid

You will need:

  • squid - 300 g;
  • chicken breast - 300 g;
  • tomatoes - 2 pcs;
  • bulgarian pepper - 1 pc;
  • chili pepper - 3 pcs;
  • butter - 20 g;
  • corn - 100 g;
  • carrots - 1 pc;
  • celery - 20 g;
  • onions - 2 pcs;
  • black pepper - 1 pinch;
  • vegetable oil - 20 g;
  • cream 10% - 100 g;
  • spices - 1 pinch.




Cut the chicken breast into cubes and fry in butter until golden brown (over high heat, this will take about 7 minutes). Fry onions in half rings and carrots in medium strips in another skillet for about 5 minutes. Chop the rest of the vegetables and also fry in a preheated pan with oil for 5 minutes.

After the vegetables have released their juice, add the chicken, onions and carrots, as well as the sliced ​​squid rings. Sprinkle with ground black pepper and spices. Pour in 100 g of cream and simmer over high heat with the lid closed for about 5 minutes. The main thing is not to overexpose, otherwise the squids will become tough.


Squid on a wire shelf in the oven or on the grill

You will need:

  • 4 squid carcasses;
  • half a large lemon;
  • half an orange;
  • 2 tsp dried oregano
  • some olive oil;
  • 1-2 tomatoes.

Wash the clams, remove offal, plates and film, put in a cup. Pour the juice squeezed from lemon and orange over the carcasses, sprinkle with seasoning and leave for 30 minutes. Place the clams on a wire rack and wait for the marinade to drain. Insert the wire shelf into the preheated oven. Place a baking tray underneath to drain the juice. Bake for 5-6 minutes at maximum temperature. Before serving, cut the clams, sprinkle them with lemon juice and olive oil, garnish with tomato slices or vegetable salad.


Rolls "Sea boy"

Ingredients:

  • 5 squid;
  • 5 sticks of crab meat;
  • 1 onion;
  • 1 carrot;
  • 1 dessert spoon of mustard;
  • 200 g of hard cheese;
  • 2 tablespoons of mayonnaise;
  • 2 tablespoons of ketchup
  • 2 tablespoons of vegetable oil.


Peel the shellfish carcasses of film and offal, cut and arrange in the form of fillets. Spread on top with a thin layer of mustard, lightly salt. Chop the onion in half rings.   7. Stuff the squid tightly with the mixture, pin up the edges with toothpicks or sew with cooking thread.
  8. Place the carcasses on a baking sheet and pour over the salted sour cream.
  9. Place the baking sheet in the oven and bake until golden brown.


Squid stuffed with minced meat in tomato sauce

  1. Peel and rinse the clams, cut off the heads, and place the carcasses in chilled water.
  2. Season the minced chicken with salt, pepper, sprinkle with grated garlic. Add lemon zest and some dry wine if desired.
  3. Prepare the tomato sauce: remove the peel from the tomatoes, cut into small pieces and simmer for 10 minutes in olive or sunflower oil. Then pour in a little white wine, add garlic and hot pepper.
  4. Fill the clams with minced meat tightly, place on a baking sheet and pour over the tomato sauce.
  5. Place the baking sheet in a preheated oven and bake for about 20 minutes.


Squid rings

  1. Rinse and dry the clams. Prepare a mixture of garlic, white pepper, and lemon juice. Cut the seafood into rings and place them in the marinade for half an hour.
  2. Make a batter using flour, chicken eggs, and mineral water. Remove the rings from the marinade, dry them and put them in the batter.
  3. Put a frying pan with any odorless vegetable oil on the fire and fry the rings on both sides until golden brown.

Squid rings are a great beer or ale snack as well as a healthy snack. They are especially tasty with some kind of sauce.


Dietary

Squid is one of the best foods for those looking to lose weight. The protein of these shellfish is easily digested, and in combination with vegetables it normalizes the functioning of the gastrointestinal tract and saturates your body with useful substances. You can bake squid with any vegetables in the oven. But speaking of dietary dishes, one cannot fail to mention the salad.

Simple squid salad

  1. Peel the clams from the film, wash and cut into small strips.
  2. Cook them for 3 minutes in salted boiling water.
  3. After taking them out of the pot, place them in ice water.
  4. Cut the celery stalk into strips. Do the same with olives. Place everything in a salad bowl.
  5. Place cold clam strips there. Mix everything, throw in a pinch of salt, pour in a little lemon juice and olive oil, stir again.


Squid stewed in tomato sauce

If you do not have an oven, you can prepare a delicious dish in a frying pan, using the following recipe.

  1. Peel and wash the clams.
  2. Place them in salted boiling water for 2 minutes.
  3. Remove the squid from the water and cut into small pieces.
  4. Remove the skin from the tomatoes (this is easier to do if you pour boiling water over the fruits first). Peel and slice them.
  5. Simmer them in a skillet with olive oil for about 2 minutes. Sprinkle chopped garlic and parsley over the cooking sauce.
  6. After two minutes, add the squid pieces to the sauce. Wait for a strong bubbling and turn off the heat. Place the food on the plates and start tasting.


Squid should not be exposed to prolonged heat treatment. If you overexpose the meat, it becomes "rubbery". If you have not kept track of the cooking time, do not despair - the clam can be thrown into salted boiling water and boiled for half an hour. You can then use it to make salad or fry it in eggs, but it won't work in the oven.

Some culinary experts advise to lightly rub the peeled carcasses with soda before baking in the oven. Then the baking soda should be washed off and proceed according to the recipe.

Delicious potatoes with squid baked in the oven

One of the options for cooking squid is roasting in the oven with potatoes and traditional vegetables (onions, carrots and bell peppers) and herbs.

This is a very simple dish that will delight your family during Lent or any other day when there is no meat at home. Hearty and tasty!

Ingredients

for 2 large or 4 medium portions

  1. Potatoes - 500 g;
  2. Squids - 4 pieces;
  3. Onion - 1 head;
  4. Bulgarian pepper - 1/4 piece;
  5. Carrots - 1 medium;
  6. Garlic - 1-2 cloves;
  7. Parsley - 3-4 branches;
  8. Vegetable oil - 3 tablespoons;
  9. Salt to taste.
  10. Table vinegar (wine, apple) - 2 tablespoons (or lemon juice);
  11. Oregano - 1 teaspoon
  12. Ground coriander - 1 teaspoon.

Cooking method

  • Rinse the squid well, remove the entrails and the plate. Pour boiling water over and peel. Trim the tail. Pour the carcasses with vinegar, add spices and leave to marinate for 30-40 minutes.
  • Cut: onion - half rings; potatoes, carrots and bell peppers - straws (thinner potatoes).
  • Fry the onions in vegetable oil until transparent, add carrots and peppers. Saute over low heat, stirring occasionally, until the carrots are soft.
  • Dry the squid (drain the marinade) and cut into rings.
  • Mix all the ingredients and add 1 tablespoon of vegetable oil. Sprinkle with oregano and salt to taste.
  • Place in a baking sheet or baking dish, cover with a lid or foil. Bake in the oven (preheated to 200 degrees C) for 40-45 minutes.
  • Chop the parsley and garlic finely. Sprinkle at the end of baking.
