Almond biscuits are a delicious treat with a bright almond flavor. It is easy to prepare it at home, because in general, the process of preparing the product and baking it takes no more than an hour. Some of the recipes below involve chilling the dough in the refrigerator - this additional time during the preparation process must also be taken into account.

Rich, flavorful, crunchy macaroons are easy to make with your own hands.

The recipe consists of the following products:

  • 1 egg white;
  • 85 g icing sugar;
  • 85 g almond flour.

The cooking sequence is simple:

  1. Sift the powder into a deep bowl so that there are no lumps left in it.
  2. Pour flour to the powder and mix well.
  3. Beat the protein separately until stable peaks appear.
  4. In several stages, pour the almond-powder mixture to the protein and mix with a spatula.
  5. Cover the baking sheet with oiled parchment. Using a dessert spoon, lay out the dough, leaving a distance of about 5 cm between the pieces - they will spread a little during baking.
  6. Sprinkle the dessert on top with a thin layer of powder. We put in an oven preheated to 180 degrees and leave for a third of an hour.

The finished cookie will have a small caramel-colored crust, and the inside will remain slightly soft. From the above number of products, 12 - 15 servings come out.

The consistency of the dough can be different each time. It depends on how much protein was used - there is more protein in an egg of the highest category than in small eggs. This nuance does not affect the taste, only the appearance - the cookies will turn out to be either large and flat, or small and plump.

On a note. For a brighter cookie flavor, use wholemeal flour and 1 to 2 drops of almond flavor.

The author's recipe from Julia Vysotskaya is slightly different from the classic recipe:

  • raw almonds - 150 g;
  • egg white - 1 unit;
  • powdered sugar - 3 tbsp. l .;
  • sour cream - 1 tbsp. l .;
  • vanilla extract - ½ tsp;
  • sea ​​salt - a pinch.

Cookies are made as follows:

  1. Since the cookies are cooked very quickly, you can immediately turn on the oven at 160 degrees.
  2. Almonds should be made into flour by grinding them in a blender.
  3. Beat the egg whites separately until a firm foam. Then add salt and powder and work with a whisk a little more.
  4. Add the remaining components to the protein mixture and mix with a spatula / spoon.
  5. Spread the cakes on a prepared baking sheet at some distance from each other. Bake for 10 to 15 minutes.

The degree of doneness can be determined by the golden caramel shade of the dessert.

It is a good idea to sprinkle the biscuits with powder before serving.

Homemade baked goods according to GOST

Almond biscuits, which were made in Soviet times, had a small amount of flour in their composition.

The classic recipe in accordance with GOST involves the use of the following list of products:

  • almonds - 120 g;
  • protein - 3 units;
  • granulated sugar - 230 g;
  • wheat flour - 30 g.
  1. Prepare flour from almonds, mix with powder. Then add a couple of proteins and beat with a whisk.
  2. The last to introduce the remaining protein into the dough, re-work with a whisk or mixer.
  3. Put the mass in a water bath. It is important to make sure that no water gets into the dough. While stirring, heat until the sugar dissolves.
  4. Stir the mixture with flour, transfer the dough to a pastry bag and place the cookie blanks on a baking sheet.
  5. Bake dessert in a hot oven for a third of an hour.

Almond flour cookies

Almond flour cookies are suitable for vegetarians and those who just love dietary meals without animal ingredients:

  • 200 g almonds;

Cooking with chocolate

Almond-chocolate delicacy is a dessert that even the most fastidious gourmet cannot refuse.

List of required products:

  • almonds - 100 g;
  • ordinary wheat flour - 250 g;
  • icing sugar - 125 g;
  • egg - 1 unit;
  • butter - 125 g;
  • chocolate - 50 g;
  • cocoa - 1 tsp

Step by step cooking is as follows:

  1. Grind the almonds in a blender.
  2. In the selected container, combine the flour with the egg and powder, mix well until the lumps are completely rubbed. Add the almonds and mix again.
  3. The butter should be left at room temperature to soften, or melted in the microwave / water bath. Add to flour mass.
  4. The chocolate will need to be crushed so that a large crumb is obtained. Combine with cocoa and add to the dough. Mix everything well.
  5. We put the mass on a piece of film, roll a sausage out of it and put it in the refrigerator to cool. It is recommended to leave it there all night, but if there is no time to wait, then at least for an hour.
  6. Get out and unfold the sausage. Cut into portions and bake.

No flour added

  • 20 g almonds;
  • 100 g of walnuts;
  • 150 g sugar;
  • 1 egg;
  • vanillin.

Making an almond nut treat:

  1. Prepare flour from almonds using a blender.
  2. Walnut kernels should be chopped into small pieces with a knife, but not crumbled.
  3. Beat the egg with sugar and vanilla until a white mass is obtained.
  4. Mix all the parts and get the dough. Pinching off small pieces from the resulting workpiece, roll balls out of them and put them on a baking sheet. We bake until tender, 20 minutes is enough.

Step 1: prepare the nuts.

Place the required amount of unpeeled, raw almonds in a clean, dry blender bowl. Grind the nuts into small crumbs or until they are like flour. If you've purchased shredded almonds, this will make your first step a lot easier. Either way, pour the almond crumbs into a deep bowl.

Step 2: combine all the ingredients.


Now take three chicken eggs and separate the yolks from the whites into separate bowls. To make cookies, you only need egg whites, and you can use the yolks for any other equally tasty dishes. In a bowl of nuts, add the required amount of sugar, mix the dry ingredients with a tablespoon until smooth and add the proteins to them.
Using a mixer, stir the ingredients until smooth for 2 - 3 minutes turning on the kitchen appliance at medium speed. Beating the dough components until fluffy is not worth it, because of this, during heating, the protein may curl. Preheat the oven up to 190 degrees Celsius.

Step 3: prepare the almond dough.


Transfer the lightly beaten nut mixture to a heavy-bottomed saucepan using a wooden kitchen spoon or spatula. Place the container on the stove, turned on at the middle level, and heat the liquid mass up to 36 - 38 degrees. The correct temperature can be easily checked by touching the dough, it should be warm and not scalding your fingers, but if you have a pastry thermometer, it will be even easier for you to determine the right temperature. While heating, stir the liquid mass constantly with a wooden kitchen spoon so that it does not stick to the bottom of the pot.
When the nut mixture is at the temperature you want, remove the pan from the stove using a kitchen towel and add sifted wheat flour into the liquid mass. Knead the dough thoroughly so that there are no flour lumps.

Step 4: bake almond cookies in accordance with GOST.


Line a large non-stick baking sheet with baking paper. Now take a regular plastic bag, cut one of the sealed ends with scissors, and place the almond dough into the bag using a tablespoon. Gently squeeze the dough onto a baking sheet, thus forming small round cookies with an approximate diameter up to 4 - 5 centimeters. Leave some space between the cookies as they will increase in size during baking.
To smooth out any unevenness, dip a baking brush in a little regular running water and lightly brush over all the cookies. Then put the baking sheet with your product in the preheated oven on 15 - 17 minutes and bake the cookies until lightly light beige blush. After the required time has elapsed, remove the baking sheet with flour products from the oven, let them cool slightly and then, using a kitchen spatula, transfer the cookies to a metal grate, on which they can rest and cool completely to room temperature. In the meantime, make the next batch of macaroons and brew your favorite tea or coffee.

Step 5: serve almond cookies in accordance with GOST.


GOST almond cookies are served at room temperature. Immediately after cooking, the flour product is allowed to cool completely, since everyone knows that hot food is very harmful to the stomach.
