Dissolve sugar in a glass of warm milk, pour dry yeast on the surface, cover with a napkin and leave until a foam cap forms.

Sift the white flour, finely grate the frozen butter into it and rub it with your palms. Pour yeast into butter-flour crumbs, add eggs, vanilla sugar, sour cream and salt. Knead the dough. (You can use your hands, in a bread machine or a kitchen machine). The finished dough should come together in a ball, be elastic. The dough is kneaded as soon as it stops sticking to the hands. Do not flour the dough! Place the dough in a bowl, cover with cling film and refrigerate for at least 2-3 hours.

To prepare the filling, peel the apples, core, cut into slices. Melt the butter in a frying pan (1/2 piece), pour half a portion of honey, pour apples and simmer until caramelized. It is optimal to do this in 2 stages so that the apples do not turn into mashed potatoes, rarely interfere and carefully! Cool down.

After two or three hours, the dough will double in volume. On a lightly floured surface, roll out half of the dough into a circle with a diameter of about 35-40 cm. Cut into triangular sectors. Place the filling in the wide base of the triangular sector, carefully pack it so that the juice does not leak out, and then roll up the bagel.

1. To prepare the dough, you first need to dissolve the yeast. Warm the milk a little, divide it into two parts and pour dry yeast and sugar into one of them. Mix everything and leave for a few minutes in a warm place so that the yeast dissolves. I want to say right away that part of the sugar is needed for the dough, part for the apple filling, and a little more for decoration.


2. Separately, combine the remaining milk with a pinch of salt and 1-2 tablespoons of refined sunflower oil. When the yeast dissolves, combine both milks together. Add pre-sifted flour.


3. We combine the ingredients, start kneading the dough.


4. The dough should be quite soft. Gather it into a ball, cover with a clean towel and leave to rise for an hour.
5. After the allotted time, the dough will rise, become airy, tender and almost double in volume.


6. During the time that the dough rests and rises, let's take care of the filling. Apples need to be washed, peeled, core removed and cut into small cubes. Combine chopped apples with 2 tablespoons of sugar and cinnamon, mix. Fragrant filling is ready.


7. We divide the dough into small lumps, roll each of them into a small flat cake and cut it with a sharp knife, as in the photo: mentally divide the cake into two semicircles, one of which we cut into parallel strips about a finger thick from the center to the edge. Put a tablespoon of apple filling in the center of the uncut half.


8. Wrap the filling in the dough to make a roll.


9. We give baking the shape of a bagel. The cut dough will spread a little. You can already see that it turns out very nice.


10. Put the bagels on parchment and leave for 20 minutes so that the dough comes up a second time. Brush with beaten egg, sprinkle with sugar and put in the oven. We bake no more than 25-30 minutes at 180 degrees.

We put it on a sheet and let it stand for 30 minutes. Then put in a preheated oven for 20 minutes, bake at 180 degrees.

We take out the finished bagels and let them cool slightly.

Mix water and powdered sugar and pour over our bagels.

How to make apple and cinnamon rolls.

Pour yeast into warm milk.


Add oil, salt, sugar, 1.5 eggs. Mix with a whisk until smooth.


Pour in the sifted flour


and knead into a soft, non-sticky dough.

Flour may take more or less. Don't pour all at once.
Cover the finished dough with cling film and put in a warm place to approach for an hour and a half. The dough should double in size.


For the filling, peel the apples, remove the cores. Cut the pulp into cubes. Add sugar, cinnamon to the pulp and mix.


Punch down the risen dough and roll out into a circle. Cut into 2 pieces with a pizza cutter. And now we divide each part into 4 triangles. We put about 1 tbsp on the wide part of each triangle. fillings

What to do:

  1. Dissolve yeast and sugar in warmed milk. Leave for a quarter of an hour. When the mass rises, add 0.15 kg of flour, stir. Remove to the side so that the dough stands for another quarter of an hour. During this time, she will rise well.
  2. Grind eggs (3 pcs.) With sugar and add to the dough. Stir. Then add 0.35 kg of flour, add soft margarine and mix well. Set aside in heat for half an hour.
  3. Then add some more flour to the dough. The dough should not stick to the palms. Consistency - 15% sour cream.

Puff rolls with apples

  • sugar - 0.03 kg;

  • large egg - 2 pcs.

What do we have to do:

  1. Put the margarine in heat so that it softens naturally.
  2. Pour a tablespoon of sugar into warm milk and, with continuous stirring, gently add the yeast. Stir until completely dissolved. Close the container with a lid and put in heat. After a quarter of an hour, the dough will rise.
  3. In another container, beat the eggs, gradually adding cubes of softened margarine (0.15 kg) and flour.
  4. Punch the dough with a mixer until a uniform state at medium speed. Then gently add all the dough by a teaspoon, without stopping beating, but already at low speeds. When the mass becomes homogeneous, remove the dough to the side, cover with a cloth and leave for 2 hours. Keep the dough warm.
  5. Remove the finished dough from the container and divide into three identical pieces. Also divide the remaining margarine into three parts.
  6. Roll out each third of the dough into a 1 cm thick circle. Cut the margarine into 6 mm plates. Put it on two-thirds of the resulting cakes. Bend the free space of the cake to the middle, covering the remaining third. Then cover it with this remaining part. The result is a rectangle a third of the width of the original cake.
  7. Roll out the rectangle so that the thickness is again 1 cm. Wrap the dough in a film and put it in the freezer for 25 minutes. Then fold in three again and roll out again. Put it back in the freezer, roll it out again. So repeat 5 times. Do the same with the rest of the test.
  8. Roll out the required amount of dough, reducing the thickness by 2 times. Cut into equal triangles. On the wide edge of each, put a slice of processed apple and roll into a bagel.

Curd rolls with apples

The most common and elegant of the varieties of apple bagels are those that use cottage cheese. The technology of preparation is also simple:

  1. Punch cottage cheese in a blender, add vanillin and margarine. Mix.
  2. Add sugar, pour in kefir. Mix.
  3. Add flour with baking powder. Mix well and put in the refrigerator.
